As you all know quick and easy is my way! When I was contacted to do a sponsored post for I Can’t Believe It’s Not Butter! for their Breakfast After Dark campaign I knew this was calling my name. I love breakfast. It’s so easy to whip up that it makes a perfect supper and it’s delicious! Plus it’s fun to do it at night for mixing things up and being in a rut is not what we want right?!

What is even more awesome is I Can’t Believe It’s Not Butter! has 70% less saturated fat than butter, no hydrogenated oils and is made from a blend of vegetable oils. Their products are also gluten free, so not only is it great tasting but it’s good for you! How much does that rock? The fact that I can spread it right out of the fridge is pretty awesome too. I hate when you end up tearing apart your bread when spreading things on it!

Well my Overnight French Toast Casserole may not bring out the date night quite like this Italian Skillet Eggs webisode, but the hubby loved them and well that’s all I’m going for. They say happy wife happy life, same goes for the hubs especially when it comes to his stomach being full!

If you are looking for a simple meal for supper and want a fun twist on it this Overnight French Toast Casserole is perfect. Whip it up the morning before you go to work and pop it right into the oven when you get home, then of course put your legs up and relax as your kids run around like crazy people!

Overnight French Toast Casserole

Prep Time: 20 minutes

Cook Time: 1 hour

Yield: 8

Overnight French Toast Casserole

Ingredients

    French Toast
  • 1 loaf sourdough bread, tore into pieces
  • 8 eggs
  • 2 1/2 c. milk
  • 1/2 c. heavy whipping cream
  • 2 c. Golden Butter Yellow cake mix
  • 2 tsp cinnamon
  • 2 tsp Vanilla Extract
  • Topping
  • 1/2 c. All-purpose Flour
  • 1/2 c. Firmly Packed Brown Sugar
  • 1 tsp Cinnamon
  • 1/4 tsp Salt
  • 1 stick I Can't Believe It's Not Butter!, Cut Into Pieces

Instructions

  1. Spray a 9x13" glass baking dish with non-stick spray.
  2. Layer pieces of bread in baking dish.
  3. Whisk together eggs, milk, heaving whipping cream, cake mix, cinnamon and vanilla extract in a large bowl. Pour mixture over bread.
  4. Cover baking dish and store in the fridge overnight or for several hours.
  5. In a small bowl add flour, brown sugar, cinnamon and salt, stir until combined. Mix in I Can't Believe It's Not Butter! to mixture. Store in fridge overnight and several hours.
  6. Preheat oven to 350 degrees.
  7. Remove french toast casserole from fridge, uncover and drop topping by the spoonful randomly across french toast casserole.
  8. Bake for 1 hour until the center is set and edges are browned.
  9. Serve with butter and maple syrup

    Brilliant recipe! Could I use left over bread crusts from some basic honey wheat bread?! I just made some homemade uncrustable PB&J sandwiches and I feel terrible to just throw the crusts out. Eeek!
