Gooey Frito Bars

Gooey Frito Bars ~ Frito's smothered in a creamy peanut butter sauce and topped with vanilla Candiquick! via www.julieseatsandtreats.com #dessert #recipe #Frito

You know a treat is good when your co-workers from different offices start emailing and calling you about the bars that someone brought it. I would like to refer to these bars as “Crack”.

They have the perfect amount of salty and sweet combined in one amazing bar. Take the Frito, which on it’s own is pretty dang amazing in my opinion, then top it with a peanut butter sauce and vanilla Candiquick.

Life changing. It’s like a plain old Scotch-a-roo, which really knocks my socks off, amped up on crack. So it knocks my clothes off. Well, not really cause no one wants to see that, but you get the picture.

If you are looking for a sweet and salty treat that will become famous when you make them here you go. Just be prepared for a lot of guests and unexpected friends to come over as you become the talk of the town!

White Chocolate Frito Bars

Prep Time: 15 minutes

Cook Time: 1 minute

Total Time: 16 minutes

Yield: 25

Serving Size: 1 bar

White Chocolate Frito Bars

Ingredients

  • 2 (10.25 oz) bags Frito Scoops
  • 2 c. sugar
  • 2 c. light corn syrup
  • 1 tsp vanilla
  • 2 1/2 c. peanut butter
  • 2 squares vanilla CandiQuik

Instructions

  1. Pour Frito Scoops into a gallon ziplock bag. Crush until they are in large pieces. Pour into a large bowl.
  2. In a medium saucepan combine sugar and white syrup. Bring to a rolling boil and boil for 1 minute. Remove from heat and add peanut butter and vanilla. Stir until peanut butter is melted and combined.
  3. Pour over Frito's and mix well. Pour mixture into a greased jelly roll pan.
  4. Melt CandiQuick according to package directions. Drizzle over bars.

        This is neat – I’ve never seen it called white syrup anywhere besides on a recipe my 94-year-old grandmother gave me, which she got from her own Grandmother. I think it must have been called that before we started calling it corn syrup!

    Fritos are soooo good! I’d say this is THE perfect salty sweet combo Julie! Do you really need to refrigerate for an hour? I’m not sure I could wait, I’d probably cut into them right after I drizzle on the chocolate!

      Nope I just left them on my counter to cool. You can dig right in just be ready for a mess like I was. I couldn’t wait!

    I’ve had a similar bar before — but it was just the Fritos spread out in the bottom of a pan and then the pb mixture poured over the top and then drizzled with chocolate. That way though you get a lot of chips that barely have anything on them. I like the idea of mixing it up together so everything gets coated well…not sure why I never thought of that before?! Genious! I might just make some this weekend. I can almost taste that salty sweet amazingness already. Thanks :)

      It’s a salty corn chip! So I don’t think Doritos would work…
