White Chocolate Raspberry Cheesecake Cookies ~ Copycat Subway cookies but even better! via www.julieseatsandtreats.com

Ok you need to RUSH to the store to get these ingredients. Don’t wait the months after finding this recipe to make them.

These babies are to die for. They taste just like Subway’s White Chocolate Raspberry Cheesecake Cookies but they stay soft for days. Subways…well they don’t so much. So see homemade is better!

I made a double batch of these because I just had one of those feelings. You know how I finally made these or why? Well my sis-in-law had been asking me to find a recipe like Subway’s cookies so I found it…and then it collected dust until my nephew texted me one night at 9 pm asking for cookies. I had to inform him it was almost my bedtime so those cookies would have to wait a night. I’m old ok?

Then he told Grandma the next day that I was making him these cookies and well he thought it was for my blog obviously. Duh. Got that nephew trained. So I went home, found out I was out of cream cheese, my dear neighbor rescued me, she got a plate of cookies, the nephew got a plate, I brought some to work, I brought some to a fundraiser.

You know what happened? People posted on FB about these cookies they were that amazing. Oooh and aaahing and saying they were going to steal them. One coworker had 4 then Snapchatted me pouting because I snatched the container when I went home.

So here’s the moral of the story. MAKE THESE NOW. Ok?

Oh and if you work at my local grocery store…you should probably start stocking this muffin mix. Mmmm k? Thanks bunches!

White Chocolate Raspberry Cheesecake Cookies

Prep Time: 15 minutes

Cook Time: 10 minutes

Total Time: 25 minutes

Yield: 36 cookies

Serving Size: 1 cookie

White Chocolate Raspberry Cheesecake Cookies

Ingredients

  • 4 ounces cream cheese, softened
  • 1/2 c. butter, softened
  • 2 Tbsp shortening
  • 1/2 c.brown sugar
  • 2 eggs
  • 2 (7 ounce) boxes Jiffy raspberry muffin mix
  • 3/4 c. all-purpose flour
  • 1 1/2 c. white chocolate chips

Instructions

  1. Beat together cream cheese, butter, shortening and brown sugar in a large mixing bowl until combined. Add eggs beating after each addition.
  2. Mix in muffin mix and flour until just combined. Add white chocolate chips and stir until incorporated.
  3. Chill dough in the refrigerator at least 30 minutes.
  4. Preheat oven to 350 degrees. Line baking sheet with Silpat mat or lightly grease baking sheets.
  5. Scoop cookie dough mix onto baking sheets. Bake 10-12 minutes or until golden brown on edges.
  6. In between baking batches of cookies make sure to store the dough in the refrigerator.

    My mother-in-law was talking about a delicious recipe she saw in the Federated paper for raspberry cheesecake cookies and I laughed because I figured I knew where that recipe came from! ;) She really wanted to make them, but said she couldn’t find the muffin mix in Morris. Where did you get it in Alex?

      I actually had my brother’s girlfriend hunt it down in Grand Forks. I think she found it at Wal-Mart? Maybe we should tell Willie’s to carry it!!!!

        Ya, I haven’t had much luck trying to get Willies to carry things. A few months ago I talked to Paul and the deli guy about carrying lean(er) ground turkey and that was a no go. I guess people are happy with the frozen 20% fat ground turkey. :( It just sucks when you try to buy everything local and then have to drive 60 miles for just one or two things.

        Guess I’ll try a few different muffin mixes – we have blueberry, and mixed berry type mixes! I’ll let you know which I find is best :)

    is it possible to bake these cookies without the jiffy raspberry muffin mix? I’m living in Germany and we don’t have that mix and I couldn’t find any raspberry mix. can anyone help out? I just ate that cookie today and I would die for another one right now!

      Do you have any type of muffin mix like a triple berry or anything? I would think any brand would work. You could always look for a recipe for Raspberry Muffins and try to use that. Just make sure you use the same total weight to replace the muffin mix if that makes sense!

      Hmmm I use a cookie scoop so they are always the same size and come out like that! Do you have one of those?

    I made these cookies today and followed the directions to a t..however, they didn`t turn out looking like the above picture. Instead my cookies looked like the tops of muffins. Puffy and they didn`t deflate either. I felt that there wasn`t enough cream cheese taste to them. They were okay but not comparable to the subway cookie. Thanks for the recipe.

    Kinda disappointed with how mine turned out i skipped the chilling part because i was short on time and they puffed up like muffins!!! they also have the texture of muffins lol

      Chilling is essential! Try it again with this step when you have more time :)

    I tried this recipe because I love the cookies from subway. Just like other people have stated, my cookies came out dry and had a muffin like texture and also lacked cheesecake flavor. I chilled it for about 45 minutes and followed the recipe exactly. I will have to try to alter this recipe to make it more similar to the Subway cookies

    I made these for my husband, who loves just about anything raspberry. I tweaked your recipe a little by adding chopped macadamia nuts (the sea salt on the nuts are awesome with the sweetness of the white choc chips!). I also added about 2T of raspberry syrup.

    I’m posting my comment now, as I go to make batch #2. I’ve been making all kinds of cookies for years and my husband says that these are my best yet and his fav!

    BTW, they do form better cold, so mixing tonight to bake tomorrow.
