When holidays roll around how do you divide your time? We live close to both my husband’s and my families. Like as in about 15 minutes at the most to make it to either set of parents. This makes it interesting when trying to apease both side of the family at holidays! We are very blessed, don’t get me wrong, but I feel bad saying that we can’t make it to either side of the family! I’ve decided that I’m to write down where we go each holiday and juts rotate it. Then no one can say much right? Not that anyone ever has. Maybe I just have a guilty conscience.

You know what else always makes it hard? When my Mom “mentions” she just might be making my favorite holiday dish EVER. Then I get all sad because let’s admit it I’m sorta into food if you haven’t noticed already. This certain dish is only served at holidays and it’s my favorite. Like in the fact that my mouth is watering just envisioning it.

It doesn’t have a fancy name, and it has a relatively horrible, terrible, ugly picture from my first blogging days, but I’m just going to say it’s amazing. And I love it. And I should really redo that picture so you will actually think it looks drool worthy. Plus then I’d have a whole pan to myself because the hubs won’t touch it because it contains “weird” vegetables. This dish is simply called Broccoli Cauliflower Casserole. I really need to jazz that up!

Oh wait. You didn’t come here to learn about that recipe did you? Today I’m sharing “Crock Pot Cheddar Creamed Corn” which is soon to be one of “those” recipes at holidays. The one you crave and will attend that celebration just to get it! Plus it’s so simply that you can make it anytime of the year! Let the slow cooker do all the work this holiday and you can relax and enjoy a big bowl of creamy, dreamy, cheesy corn!

Crock Pot Cheddar Creamed Corn

Prep Time: 10 minutes

Cook Time: 3 hours

Total Time: 3 hours, 9 minutes

Yield: 9 servings

Crock Pot Cheddar Creamed Corn

Ingredients

  • 2 (one 16 oz and one 12 oz) frozen corn, thawed
  • 1 (8 oz) cream cheese, cubed
  • 3/4 c. shredded cheddar cheese
  • 1/4 c. butter, melted
  • 1/2 c. heavy whipping cream
  • 1/2 tsp salt
  • 1/4 tsp pepper

Instructions

  1. In a 4 qt slow cooker combine all ingredients. Stir to combine.
  2. Cook, covered, on low 3-4 hours or until warmed through and cheese is melted. Stir just before serving.

    Does it have to be frozen corn? I want to make it for Mother’s Day, I’m not worried about doing it “quick” and was thinking of fresh corn from the cob.

      I can’t guarantee using the fresh corn because I haven’t used it, but if you do try it just watch the cooking time!

    I’m trying this corn recipe and I hope I did it right cause it looks awfly dry? And I followed your exact recipe or maybe this is what it looks like till it cooks let’s hope so this is my husbands birthday dinner I’m trying this out on!!!
