Well, hola! I am uber excited to be contributing over here at Julie’s blog today! She has some amazing followers and I can’t wait to get to know a few of you!

For those of you who don’t know, I’m Krista and I blog over at Joyful Healthy Eats! Now before you write me off because you read the word “healthy” let me stop you right there!

Healthy can be just as delicious AND just as quick as that not so good for you gooey Mac & Cheese that you make when you are in a bind. Except… its… you know.. Healthy! :) So you can feel good about what you are putting into your families tummies. Here are a couple of quick 30 minute meals to get you started with!

Don’t get me wrong with all the savory recipes I just gave ya, I like sweets as much as the next girl.

In fact, I think I make cookies like every week. But thats because my cute little two year old is addicted … plus who can resist a sweet little boy asking to make cookies with you. Not me.. that’s for sure… well.. clearly… I make them every week. haha

Well folks, something sweet is just what I’m giving you today!

A delicious Key Lime Pie flavored Panna Cotta.

For those of you who don’t know what Panna Cotta is, it is an Italian dessert that is sweet custard-like pudding, except this version today is dairy free! {and if you omit the graham crackers on top then it is sugar free too} Believe me, you won’t be able to tell the difference, it is going to taste just as delicious as that full fat heavy cream dessert with oodles of sugar.

Best part about this dessert is … its guilt free too! Which of course is like the best kind ever, don’t you agree?

When I think of dessert for the summer my mind automatically goes to Key Lime Pie. Its sweet, cool, refreshing, and down right delicious. Which is why I decided to make something with that same Key Lime flavor in Panna Cotta form and healthify it a bit! :)

I hope you get a chance to make this Panna Cotta, it will totally change your dessert world and make you feel so much better about sneaking that late night sweet treat when no ones looking.

Key Lime Pie Panna Cotta

Prep Time: 5 hours

Cook Time: 10 minutes

Total Time: 5 hours, 10 minutes

Yield: 4-6

Ingredients

  • 2 cups of full fat coconut milk, separated
  • 4 tablespoons of honey
  • 1 1/2 teaspoons of unflavored gelatin
  • 1 teaspoon of vanilla
  • 1/3 cup of key lime juice
  • crumbled graham crackers

Instructions

  1. Add 1 cup of coconut milk and unflavored gelatin to a medium sized saucepan.
  2. Let sit in pan with burners OFF for about 10 minutes, until the gelatin has softened.
  3. Turn the burners on to low and add remaining coconut milk, honey, and key lime juice.
  4. Whisk until everything is combined and dissolved.
  5. Remove from heat and whisk in the vanilla extract.
  6. Pour into 4-6 small ramekin serving dishes.
  7. Cover each ramekin with plastic wrap, making sure to not let the plastic wrap touch the panna cotta.

    Yum! I love coconut milk and finding new ways to use it, and this looks amazing!

    I guess I’m going to show my ignorance but what does it mean by “2 cups of full fat coconut milk, separated”. I usually see this when you put half in at one time and the other half later but I don’t see that in the recipe.

      Sorry Penny, & Melanie good eye. I read over this recipe like 4 times to make sure i didn’t miss anything but clearly I did. You need to add the 2nd cup of milk along with the honey & key lime juice {so it would be #3 of the instructions) Can’t believe I missed that, making the change to up the recipe.

    I’m confused, too. When do you add the second cup of coconut milk? And set with the heat – what temp? Low? Thanks, this looks yummy!

      Sorry Sherlyn, just edited the recipe. You add the remaining coconut milk in with the honey and key lime juice {in #3 of the instructions|
