Summer is coming to an end.

*SIGH*

It’s so bittersweet. It kind of makes me want to cry but yet fall seems to slow down a little and I enjoy it so much. This year my hubs is planning to help my dad in the field so that should be interesting. That means him not being home until 11 pm or later and gone pretty much every night for a few months. I will become a single mom. Miss K will be seeing a lot of this face that’s for sure ! I hope she doesn’t get bored with my mug. She’s such a Daddy’s girl this is going to be rough on her and Mom. I envision a lot of tractor rides in our future!

Farming. It’s a lifestyle that’s for sure. One I grew up with and one that I’ll be honest, I’m not sure I want to embrace. There are definitely pros and cons to the whole thing, but somehow I focus on the cons. Such a pessimist aren’t I? There are tons of pros too!

What’s this amazing grilled chicken wrap got to do with farming. Nothing. I kind of went off on a tangent there didn’t I? Well maybe I can say you can go harvest those plump, juicy tomatoes that are in your garden and whip up this yummy treat! See we can all be farmers! My tomato plants have tons of green tomatoes on them and I can’t wait to be able to go grab a tomato whenever I want off of them.

The garden is SO late this year. And the crops are going to be too. I have zucchini coming out of my ears currently. Soon there will be tomatoes along with that zucchini. Any one got any recipes that combine the two? That would be super helpful!

I’m trying to throw zucchini at anyone that comes near my house. Beware. You might end up with a zucchini or two if you come to my house. Pretty soon I’ll be throwing tomatoes at you if you come. Wait. That could get messy. I’ll just give them to you nicely ok? Mmmmk. Glad we got that straight!

Chicken BLT Wrap ~ Easy Wrap Perfect for Lunch or Dinner! Loaded with Grilled Chicken, Romaine Lettuce, Bacon and Mayo!

This wrap is so easy! It’s the perfect lunch time treat to satisfy everyone. It’s loaded with grilled chicken, tomatoes, romaine, Parmesan cheese and mayonnaise! One of these wraps will fill you up and having you smiling until the next meal. Or if you are pregnant like me…it might be sooner. Just saying.

Chicken BLT Wraps

Prep Time: 15 minutes

Cook Time: 15 minutes

Total Time: 30 minutes

Yield: 4 wraps

Serving Size: 1 wrap

Chicken BLT Wraps

Ingredients

  • 1 lb boneless, skinless chicken breasts, pounded flat
  • 2 c. romaine
  • 1/2 c. chopped tomato
  • 8 bacon stripes, cooked and crumbled
  • 1/3 c. mayonnaise
  • 1/4 c. Parmesan Cheese
  • 4 (8 inch) flour tortillas

Instructions

  1. Grill chicken until cooked through. Cut into strips.
  2. Divide ingredients evenly between tortillas and spread down the center of each tortilla. Flod both sides to close. Serve immediately.

    Oh Julie, I’m sorry that you will be joining the lonely farmers wife club this fall! :/ I’m sure your dad is excited to have the extra help in the field though. While they are gone working hard making money perhaps we’ll have to go on some extra shopping trips to help spend it! 😉

    Julie: I love Chicken Club-like sandwiches, this wrap fits the bill! I will make it soon, probably with avocado added.

    Regarding your zucchini and tomatoes, how about a garden fresh pasta sauce recipe that can be simmered on the stove or in a crock pot? I frequently make an Italian sausage-based sauce with my garden vegetables and herbs (tomatoes and whatever else I am harvesting or have fresh in the fridge), enough for 2 meals. The first meal is over fettuccini; the second mixed with fettuccini or another pasta, placed in a pan, covered with whole milk mozzarella cheese, and baked in the oven.

    I personally do not care for zucchini so never grow it or use it in my pasta sauce, but am sure it would work for zucchini lovers.

    Your post is so timely, Julie. My hubby and I were just talking about how he’ll be super busy at the farm the next couple of weeks. He’s got a “real” job at an office, but decided earlier this year that he wanted to see what it was like to farm, so he found a job at a local farm he could work at on the weekends. I’m thinking I’ll be doing lots of baking and making delicious wraps like this one 🙂
