I’m sure you will agree there are those recipes you love to serve when you are having guests over and want to serve more of a fancier meal than usual. Or there are those quick and simple appetizer style recipes that hold a spot in your recipe book for brunch or a ladies get together. Recipes like canapes, dips or easy sides.

This recipe, however, is a family favorite for those dinners you want to enjoy with your family around the table. One that is super easy to make and is enjoyed by the whole family. I love that the drumsticks are not fried. Yes, fried chicken is so delicious and has a crunchiness that is so wonderful, but being able to bake the chicken yet get the feeling it wasn’t baked but perhaps fried is pretty phenomenal. The drumsticks are baked at a high temperature and gives it crunchiness you normally don’t get when baking food. Then adding the barbecue on the chicken and baking just a little longer makes the chicken so juicy and doesn’t lose much of flavor yet has the added flavor that the barbecue provides. You can use your favorite barbecue sauce. We love Sweet Baby Ray’s. It’s not too sweet, not too tangy and gives a great balance of both. You just cannot go wrong with this recipe, friends.

Whenever we serve recipes like this one, I always have sweet memories of when I was still at home and my mom would serve us chicken with creamy mashed potatoes and a side salad. We as kids loved drumsticks more than any other recipe she would serve us. It was one of those dinners everyone got their fingers in barbecue as they enjoyed their food and mom would not mind at all that we were making a huge mess.

Now, with my own family to cook for, it’s so special to serve my children and husband chicken and they have a wonderful time enjoying dinner and make memories they too will take with them.

Easy Baked Barbecue Chicken Drumsticks ~ Marinated Drumsticks Make an Easy Dinner Recipe! Bake them and Finish with Barbecue Sauce for Juicy, Flavorful Drumsticks!

This particular marinade is so delicious. It really adds juiciness and so much flavor to the chicken and takes away the blandness drumsticks can sometimes have. You need to let the drumsticks marinade at least 3 hours. I usually place the chicken into the marinade first thing in the morning and refrigerate covered, then just bake before we are ready to enjoy dinner. Then all I have to do it is just make some fresh mashed potatoes and a side. For the side we like baked asparagus or a spring salad or even a fresh grilled corn.

When making salads I always love preparing then with the kiddos together. Though making food with them takes twice as long (if not three times), the memories are unforgettable.

Easy Baked Barbecue Chicken Drumsticks

Preparation 0:15 2017-05-25T00:15:00+00:00 Cook Time 0:45 2017-05-25T00:45:00+00:00 Serves 6     adjust servings

Ingredients

  • 3 lbs chicken drumsticks
  • 3 Tbsp mayonnaise
  • 2 Tbsp creamy horseradish
  • 1 Tbsp olive oil
  • 3 garlic cloves, minced
  • 1 onion, sliced
  • 1 1/2 tsp salt
  • 1 tsp paprika
  • 1/2 tsp pepper
  • 1/2 cup barbecue

Instructions

  1. Preheat oven to 400°F.
  2. Combine the mayo, horseradish, oil, garlic, salt, paprika, and pepper. Pour over chicken. Mix well. Add onion, mix again. Cover and refrigerate at least 3 hours or overnight.
  3. Lay out chicken on baking sheet or parchment paper (clean-up will be easier). Discard of the onions. Bake about 35 minutes until skins of drumsticks become crispy (baking time may slightly vary, depending on the size of drumsticks).
  4. Coat drumsticks generously with barbecue sauce. Return to oven. Bake another 10-15 minutes.

This salad would be the perfect 4th of July side dish! Really, it’s perfect any time, all year round. Trust me, I make it all the time. I made this last weekend for Kinzee’s baptism. I needed two different salads to make and this was one of them. I’ll share the other one with you soon! I love the juicy grapes in it and crunchy cashews.

We had a wonderful day for Kinzee’s baptism. It was gorgeous out. A true gift from God. Bless my mom’s heart she hosted the dinner after baptism. My house is the size of peanut and we all love each other but we would have had to sit on each other’s lap to all fit in it! She made the famous Sweet ‘n’ Sour Meatballs and they were a hit like usual. If you haven’t checked out this recipe you must!

I think this salad was also a hit because my sister-in-law asked after dinner, “Hey, is this going on your blog?” I love it when when I get asked for recipes to go on my blog!

Cashew Chicken Rotini Salad

Ingredients

  • 1 (16 oz) pkg rotini
  • 4 c. cubed chicken
  • 1 c. seedless green grapes, halved
  • 1 c. seedless red grapes, halved
  • 1 (5 oz) pkg dried cranberries
  • 1 c. ranch salad dressing
  • 3/4 c. mayonnaise
  • 2 c. salted cashews

Instructions

  1. Cook the pasta according to packaged directions. Drain pasta and rinse in cold water.
  2. In a large bowl combine chicken, grapes and cranberries. Add pasta.
  3. In a small bowl, whisk ranch dressing and mayonnaise. Pour over salad and toss to coat. Cover and refrigerate at least 1 hour.
  4. Just before serving stir in cashews.

Guys, this honey cranberry bread is my new favorite sweet bread! Seriously!

Ok. There are other breads worth mentioning such as banana bread, Irish barmbrack tea cake or this orange loaf cake. They all taste amazing but I tell you that once you taste this one you will fall in love with it!

It’s so good that you will not want to wait until the loaf cools down before tasting it. Well, I could not resist and cut a slice while it was still piping hot. It tasted divine and I was happy but I highly recommend letting the bread cool down first. The texture will set more and it won’t be so crumbly.

Honey Cranberry Bread. This delicious bread is perfect for breakfast, brunch or afternoon snack. Spread it with butter and jam and you are in for a treat!

Now what I like about this honey cranberry bread the most is the honey part. Honey is a great sweetener and sometimes I wonder why I don’t use it more often in baking. It gives not only sweetness to your baked goods but also flavor, depending of what type of honey you use. One of the reasons I had hard time waiting for this honey cranberry bread to bake was the fact that my whole house smelled like honey!

Making this homemade honey bread is easy. First start off with creaming butter and sugar. Beat with an electric mixer until fluffy. Once done, add honey and egg and mix until combined.

Stir in the flour, baking powder and salt. Don’t forget to sift the flour and baking powder before adding them to the bowl. Now all you have to do is add the milk (I suggest doing this in several stages as it can get messy) and cranberries and mix well.

Honey Cranberry Bread. This delicious bread is perfect for breakfast, brunch or afternoon snack. Spread it with butter and jam and you are in for a treat!

A 2 lb loaf tin is perfect for this honey cranberry bread. I always line it with baking parchment paper. This is an easy way of making sure the bread will actually come out easily.

It takes about 1 hour and 10 minutes to bake this honey bread. However, every oven is different so you might need to adjust that time. I always check the bread after 1 hour by inserting a wooden skewer in it. If it comes out clean, the bread is ready.

Ready to be served and enjoyed! This honey bread is perfect for breakfast, brunch, afternoon snack or any time you feel like you need a slice of goodness. Spread it with butter or jam (or both) and you will lick your fingers!

By the way, do you know what I love about baking? I love the moment when a cake/pie/muffin/bread or anything really comes out from the oven and it looks perfect. The feeling of success and pride kicks in shortly afterwards. Then there is the tasting part – the moment when you get to taste your homemade product. And finally, there is the sharing part – the moment when you are confident enough to share a few slices of your success with others. What do you like about baking?

Honey Cranberry Bread

Preparation 0:10 2017-05-25T00:10:00+00:00 Cook Time 1:10 2017-05-25T01:10:00+00:00 Serves 12 Slices (1 Loaf)     adjust servings

Ingredients

  • 2 Cups All-Purpose Flour
  • 1 Stick Unsalted Butter, soften (110g)
  • 1/2 Cup Superfine Sugar (100g)
  • 1/2 Cup Dried Cranberries (60g)
  • 1/2 Cup Milk (125ml)
  • 6 Tablespoons Honey
  • 1 Medium Egg
  • 3 Teaspoons Baking Powder
  • 1 Teaspoon Salt

Instructions

1. In a bowl, cream butter and sugar until fluffy. Beat in the egg and honey.

2. Add sifted flour, baking powder and salt. Stir these into the mixture.

3. Now slowly pour in milk while mixing with the electric mixer. At last stir in dried cranberries and pour into a 2 lb loaf tin.

4. Bake in a preheated oven at 350F (180C) for 1 hour and 10 minutes or until an inserted skewer comes out clean.

5. Spread with butter and/or your favorite jam and serve!

Today we are celebrating Miss K’s fifth birthday! AHHHHH! Hold me people. Hold me. It’s not her birthday for a bit yet but she wanted a pool party and this was the best day for it to happen so we are celebrating a few days early.

Another Monday is over with and it’s onto the rest of the week! I totally think Monday’s are the worst day of the week by far. I suppose skipping them wouldn’t do me much good because then I’d just hate Tuesdays. The recipe I’m sharing with you tonight was another Father’s day dessert I made. This time it was for my family at supper. I have fallen in love with this cake. I could go over to the leftovers with my fork and eat the whole dang thing. It’s dangerous. I have now made this cake multiple times and every time I make it everyone is in love with it. I treated my co-worker to it for his birthday and his eyes lit up when he took his first bite! My eyes lit up a lot because I couldn’t keep my hands off this baby!

The cake is moist and the icing actually gets a little hard which I absolutely love. The strawberry flavor is so refreshing. I’m not saying I don’t like the good ‘ol white or chocolate cake but I’m always up for mixing things up a little. The recipe takes a regular old box cake and dresses it up a bit, but it’s still super easy and doesn’t take to much time. The result is a dessert that people will think you slaved all day over, but I won’t tell them the truth if you don’t! My brother-in-law exclaimed it’s like eating a strawberry but in cake form! I like his thinking!

Easy Fresh Strawberry Cake

Preparation 0:30 2017-05-25T00:30:00+00:00 Cook Time 0:25 2017-05-25T00:25:00+00:00 Serves 12     adjust servings

Ingredients

  • 1 (16.25 oz) package white cake mix
  • 1 (.3 oz) package sugar-free strawberry jello
  • 4 egg whites
  • 1/3 c. canola oil
  • 1 c. frozen unsweetened strawberries, thawed
  • 1/2 c. water
  • 1/3 c. butter, softened
  • 2 1/3 c. confectioners’ sugar

Instructions

1. Grease & flour two 9 in. round pans. In a large bowl combine cake mix & gelatin. Add egg whites, & oil; beat until well blended.

2. In a small bowl or food processor, mash strawberries in their juice. Set aside 3 Tbsp for icing. Add water & remaining berries to batter and mix. Pour into pans.

3. Bake at 350 degrees for 20-25 minutes or until toothpick comes out clean when inserted into the middle of the cake. Cool for 10 minutes. Remove from pans to wire rack and cool completely.

4. For icing combine butter and reserved strawberries in small bowl. Gradually beat in confectioners’ sugar until light & fluffy (I added extra confectioners’ sugar to make the icing a little thicker). Place on cake on serving platter. Top with half of the icing. Repeat layers.

Banana Crumb Muffins ~ Delicious, Homemade Banana Muffins Loaded with a Amazing Crumb Topping! Perfect for an Breakfast!

I hope everyone had a wonderful Mother’s Day this past weekend! Mine was pretty much the best ever. It all started the week before with Miss K and her enthusiasm for the day. I never get real excited about it because, let’s face it, I’ll still be wiping butts and doing the Mom grind! That’s just the season in my life. I’m good with it. Sure, sure I’d like to be whisked away on a spa getaway with my besties, drink Mimosas and gossip, but it’s just not in the cards right now. Someday, someday that will be my goal!

Like I said, my day was made by little Miss K and her excitement. It was hard not to get excited too! She was literally counting down the days until Mother’s Day. She had my entire day planned out. Thanks to my kids daycare Mom, Miss K had this breakfast in bed thing totally figured out. I told my hubs I’d make some Egg Muffins the night before so he just had to reheat them that morning but low and behold I found him the night before whipping them up before I got to him. Did I mention he’s a winner? I also gave him instructions on how to make my coffee because Miss K know Mom needs coffee for breakfast and she wouldn’t let him get away without it!

Mother’s Day morning he walked into their bedroom at Miss K had her head propped up on her hands and was smiling from ear to ear! She yelled, “IT’S MOTHERS DAY LET’S MAKE BREAKFAST”!

Off to get me breakfast they went. I heard them rummaging around upstairs but honestly, I fell back asleep! Soon they were waking me up and had a tray and everything. Miss K was very amendment about the tray too. There was also one little box in my hub’s hands and I was getting excited. It sure looked like a ring box! I tried to play it off so I wouldn’t grab it from his hands. You guys, my husband is NOT the jewelry giving type.

He finally handed it over and I tried not to tear off the paper to fast. Inside was a beautiful ring with the three kid’s birthstones set in it. I was ECSTATIC! Once again, he does not give me gifts like this. He was pretty proud of himself. I was pretty proud of them all!

To keep it real… there was only a little coffee spilled on the quilt as I ate in bed due to RyRy getting a little crazy. A quick wash later and it was all good!

The rest of the day was spent at the cabin relaxing, then home to do laundry. I mean, it might be Mother’s Day but I still got to run the house! Then we met my family for a dinner out. It was a terrific day.

Next year, I hope Miss K is still all about breakfast in bed because I’m going to ask for these Banana Muffins. The crumb topping you guys… to die for. I’m all about the crumb!

I used these Muffin Liners that are a little taller to help hold the crumb mixture on!

Crumb Banana Muffins

Ingredients

Muffin

  • 3 large bananas, mashed
  • 1/2 c. white sugar
  • 1 egg, beaten
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 1/2 c. all-purpose flower
  • 1/3 c. butter, melted

Crumb Topping

  • 1/3 c. granulated sugar
  • 1/3 c. brown sugar
  • 3/4 tsp ground cinnamon
  • 8 tbsp unsalted butter, melted
  • 1 3/4 c. cake flour

Instructions

  1. Preheat oven to 350 degrees.
  2. Line muffin pan with baking cups or spray them lightly with cooking spray. Set aside.
  3. In a large mixing bowl combine bananas, sugar and egg. Add melted butter and stir until combined.
  4. In a separate bowl combine dry muffin ingredients. Add to wet ingredients and stir until just combined.
  5. Using a 1/4 cup measuring cup divide up batter into prepared muffin pan. Set aside.
  6. For the crumb topping, in a medium bowl, whisk together sugars and cinnamon. Pour the butter over top and using a wooden spoon, mix until incorporated. Then add the cake flour and mix until mixture resembles a thick and cohesive dough.
  7. Sprinkle a generous amount of the crumb topping on top. Do not press the crumb topping into the batter. Let set on top of muffin batter.
  8. Bake 20-25 minutes or until toothpick inserted comes out clean. If you wish for the crumb topping to have a darker brown appearance broil muffins for a few minutes, make sure to watch this closely.
  9. Store muffins in air tight container for up to two days.

Strawberry Romaine Salad ~ Romaine Lettuce, Strawberries, Green Onions and Walnuts! Topped with a to die for Italian Dressing with a Secret Ingredient!

romaine lettuce, strawberries, green onions and some candied walnutsThis may look like your regular run-of-the mill salad. Here’s where the saying “looks can be deceiving” comes in. This is anything but run-of-the-mill. If you want to impress someone, THIS is the salad you make. In fact, this could be re-named “Impress Your Mother-in-law Salad.”

The salad itself is quite simple. Just romaine lettuce, strawberries, green onions and some candied walnuts. But the dressing. Oh my–the dressing. It’s divine.

I think the secret is the orange juice. Or the dry Italian dressing. Heck. Let’s be honest. It’s probably the sugar.

But back to the salad. Although I have listed very few ingredients here, you can of course add more. Grapes, kiwis, red onions, avocados. Let your imagination run wild! And if you’ve never made candied nuts before, it’s super easy!

There are actually two ways (that I know of) to do this. If you want nuts that are more caramelized, then you can follow my Five-Minute Caramelized Walnuts tutorial.

If you want nuts that are more crunchy with a coarser sugar coating, here’s what you do:

  1. Put a small frying pan on the stove over medium heat.
  2. Add a tablespoon of granulated sugar. (Really, the amount of sugar is up to you. I never measure. I just throw some in).
  3. Then add your nuts (chopped or un-chopped) and stir constantly until the sugar melts into a liquid and coats the nuts. Start with a half a cup of nuts for this recipe. But if you’d like to add more, go ahead and do it.
  4. Once the sugar has melted and the nuts have been coated, remove the pan from the heat and let the nuts cool before adding them to any recipe.

Or, you know. Don’t use nuts at all, I won’t judge.

Strawberry Romaine Salad with the most amazing Italian orange dressing! Full of strawberries candied nuts, it is the most delicious salad ever!

The use of nuts is optional, but the use of the dressing is not. It’s what MAKES this salad. All you need is a packet of dry Italian dressing, some orange juice, rice vinegar, vegetable oil, and sugar. Now you can just put this all in a bottle, shake and pour. But I suggest treating this dressing with a little more finesse.

First, add the sugar, vinegar, and orange juice to a jar. Close the lid and shake vigorously. Let sit for a few minutes and then do it again. What we want to do is dissolve the sugar. Once you’ve done that, you can add the rest of the ingredients and shake everything together. Right before serving, shake again and then pour over the salad.

Once you make this salad, it will become your go-to salad for every occasion. People will ask you for the recipe, guaranteed.

Strawberry Romaine Salad

Preparation 0:10 2017-05-25T00:10:00+00:00 Cook Time 0:00 2017-05-25T00:00:00+00:00 Serves 8     adjust servings

Ingredients

  • 2 heads Romaine lettuce, cut or torn into bite-sized pieces
  • 1 pint strawberries, sliced
  • 2 green onions, sliced
  • 1 cup purple seedless grapes, sliced (optional)
  • 1/2 cup walnuts or pecans (optional)
  • 1 Tbsp. dry Italian dressing
  • 3 Tbsp. orange juice
  • 3 Tbsp. rice vinegar
  • 1/2 cup vegetable oil
  • 1/4 cup sugar

Instructions

In a large bowl, mix the lettuce, grapes, strawberries, green onions and optional nuts.

In a pint-sized jar, add the orange juice, rice vinegar, and sugar. Shake and let sit so the sugar can dissolve.

After a few minutes, add the dry Italian dressing and vegetable oil, and shake again.

Pour over individual servings of salad.

Happy Mother’s Day to all of you out there! I’m guessing if you are a female you are a Mom in some sort of way! It’s amazing how that happens. You could be a Mom to angel babies, nieces and nephews, special friends, whatever it might be you are special and so loved! I hope you have a great day and are spoiled by your loved ones.

My hubs asked me what I wanted to do and I picked the lake for the weekend with the family and NOT running around like crazy on Mother’s Day. Selfish right? I’m sorry, but I just want a day to relax!

Oh, my gosh! You guysssssss I haven’t done one of these if FOREVER! I’ve been on maternity leave for THREE MONTHS now and I thought I was going to have all this time to do so much stuff with the blog. I seemed to have forgot how time consuming a newborn can be. That did not happen. Not even a little. The first two months were focused on staying alive due to lack of sleep. That KILLS me guys. Kills me. I’m such a wuss. I need like 10 hours of sleep a night or I’m dying. Now I haven’t had that since I was young and single, maybe when I was first married, but in my dreams I want to achieve that still. Little Koert is sleeping much better. He was up last night and I was like what the heck?! It had been a week. I get spoiled quickly!

Soooo first. That pretty lady in the dress with Miss K is my niece Hallie. She went to prom the other weekend with her BF. Uhhhh how is she going to prom? How does she have a boyfriend? I keep asking myself this stuff. I can’t imagine when it’s my own! Miss K was in LOOOOVE with her pretty dress. Well, so was I, but Miss K was much more adorable about it. She kept touching the layers and the beading and you could see the admiration in her eyes. She thinks Hallie is pretty cool. Then again, so do I! I remember when little Hallie was about Miss K’s age and I was going to prom! It’s so funny how roles reverse! Love having family so close to us and involved in our loves. We are lucky!

This little guy is the best baby EVER! I was so nervous having a third. My other two had been such good babies and I felt like I was pushing my luck! He’s totally content and loves to smile. He’s also started trying to talk and giggle. Be still my heart. As you can see his sisters also love him and try to take care of him. I would like to say that this picture was taken under supervision and the toys were removed right after this. In case you are worried! I still thought it was precious and had to share. He did have a little run in with RSV a month ago and ended up taking a three day vacation in the hospital. Not the best moment in our lives, but it was temporary and things could have been a lot worse. So thankful for the amazing doctors, nurses and staff at the hospital. They took great care of him and us! Sometimes you can’t beat a small town atmosphere. Everyone knows you somehow it seems and it never hurts to have a close friend as your doctor. If you cry she gets it!

This little girl REFUSES to potty train. You guys. It’s terrible. I can’t even get her to put a pullup on. She FREAKS out and says NO NO NO. We have tried buying new undies, bribing with rewards, Miss K tries to train her. Nothing. Nada. Not happening. I think I’m just going to give up for a while and see if she’s ready later. I don’t know what else to do! I remember Miss K had no interest in it and so I finally quit bugging her. Then one day she up and decided she was going to potty train and that was it. Done. She never had an accident for me. I mean, I can hope for that again but I’m pretty sure that is not going to happen with this child! Any tips?!

We made our first trip of the “summer” to the cabin this past weekend and got the dock, jet ski and pontoon in the water. I’m not sure if the hubs or Miss K waits for the first Jet Ski ride more? They were out messing around on it and she came back drenched. For the record we live in Minnesota. Water temperature right now is like 60 degrees. It has me shivering just thinking about it! She was over the moon and we quickly changed clothes. I about melted when I found those three down on the dock Saturday morning fishing after I fed Koert. I mean doesn’t that moment I captured just say “Memories”? I hope they remember some of these moments we are creating for them at the cabin. I love that we can get away and leave the distractions at home. Trust me. I’m real good at sitting around up there!

I’ve been getting in some new stuff for the Spring and Summer over at Drops of Sunshine! I love this cute Color Block Tee to sport this summer. Have you guys purchased an Instant Pot yet?  I did a while back and never really fell in love with it, I’ll be honest. Then I finally started experimenting with it while I was on maternity leave. I finally see what all the hype was about! I’m in love with it. I did my first recipe on the blog for it with this Hamburger Stroganoff. YUMMY! One of my most popular recipes made IP friendly. You guys are going nuts over it! I love that I can turn it on and forget about it, not having to babysit and stir it and stuff!

Does anyone else dread the winter because they know they will have dry, cracked hands all winter long? Ugh, seriously as soon as it gets cold and dry inside from the heat my hands are a mess. This winter I found THIS. Organic Healing Balm from Honest and it was a game changer. I won’t lie, it’s thick and slippery, but my hands were a mess from changing so many diapers and washing my hands on repeat. I started putting this on every night and within a few days they were SO MUCH BETTER! It’s worth the investment. Seriously.

I’m so excited it’s grilling season! Plus, the hubs usually does it so not only is it delicious but it’s easy on my part! Woot, Woot! I’ve been eyeing this Taco Ranch Chicken and it’s on our menu for this weekend! Anyone try it yet?

Speaking of grilling, I splurged on the hubs for his birthday and got this Louisiana Grills Pellet Grill or as we call it, The Smoker. So far we’ve mainly done pork loin on it and it’s SO DELICIOUS! We made this for about 30 people for Koert’s baptism and received rave reviews over it. I can’t wait to try other things too. We are going to do Brisket, Turkey, Chicken etc. Anything you love on the Smoker or anything you want to see for recipes? Let me know!!
