Stay at home Mom’s… how do you do it? Seriously, how do you do it? I don’t know how you get anything accomplished all day long. The day is spent putting out fights, feeding children, keeping them alive, keeping them entertained etc.

I can’t get one moment of productivity out of the entire day I feel!

Today, literally, I had Koert napping. As soon as I put Ry down he woke up. As soon as he went down for another nap I heard Ry crying from her room as I walked to put him down in his crib. I’ve decided I think I could win the lottery quicker than I could coordinate naps most days! When it’s 4:00 pm I quick run around the house like a crazy woman putting it back together and trying to hid the fact that most my day is a hot mess from my husband. If he asks me what I did that day when I gets home, I take it personally and that he thinks I didn’t do anything, give him a glare and say kept his children alive! He swears he’s just asking to see what the kids did and has no hidden meaning in the question. Do I believe him?

And then, we have the days all the stars align. Usually this is the day Miss K is at pre-school so Ry has no one to fight with! Those days I feel like a rock star and want to pat myself on the back. These days, my friends, are far and few between!

These days, I make these delicious Caramel Rolls! After my aunt snuck a caramel roll out for me one day and then Miss K spied it and demanded I make “those sticky things” I decided it was high time I mastered Caramel Rolls.

After a few rounds of testing these babies were born! You guys, if you are scared of Caramel Rolls and Yeast please, please don’t be. Especially with this recipe. YOU CAN MAKE THEM!

Stupid Easy Homemade Caramel Rolls ~ Fresh, Sticky Caramel Rolls That Are Fool Proof and Easy! Great for Beginners and Seasoned Bakers!

Let’s just say I’ve messed this recipe up in a million different ways and they still turn out. They are essentially fool proof I do believe! Let’s see I’ve ran out of half and half and had to use milk before, or coffee cream. I’ve also measured wrong and added not quite enough half and half and they still turned out!

I made a double batch of these and sent them to work for my husband’s birthday and they were devoured. I assure you if you want an easy Caramel Roll recipe this is it!

Stupid Easy Homemade Caramel Rolls

Preparation 1:00 2017-04-25T01:00:00+00:00 Cook Time 0:30 2017-04-25T00:30:00+00:00 Serves 12 rolls     adjust servings

Ingredients

  • Caramel
  • 1 c. brown sugar, packed
  • 1/3 c. butter
  • 1/4 c. light corn syrup
  • Dough
  • 1 c. warm water
  • 3/4 half & half
  • 1/2 c. sugar
  • 1/4 c. butter, melted
  • 3 Tbsp regular yeast
  • 1/2 Tbsp salt
  • 2 eggs
  • 5-6 c. bread flour
  • Filling
  • 6 Tbsp butter, melted
  • 2/3 c. brown sugar
  • 2/3 c. sugar
  • 1 1/2 Tbsp cinnamon

Instructions

  1. Spray a 9x13 inch baking pan with non-stick spray. Set aside
  2. In a small sauce pan bring brown sugar, butter and light corn syrup to a boil. Pour into bottom of prepared pan. Set aside.
  3. In a stand mixer, mix together water, half & half, sugar, melted butter and yeast. Let sit for 15 minutes.
  4. Add in salt and eggs. Mix until combined. Add in 5-6 c. bread flour until dough comes together and isn't sticky. Knead in stand mixer for 10 minutes. Let sit for an additional 10 minutes.
  5. Prepare your filling by mixing together melted butter, brown sugar, sugar and cinnamon. Set aside.
  6. On a floured surface, roll dough into a 12x16 inch rectangle.
  7. Spread filling over the top and roll up, starting at the long side. Cut into 12 larges slices. Place in prepared 9x13 inch baking pan with caramel sauce.
  8. Bake at 375 degrees for 30 minutes or until golden brown on top and cooked through.
  9. Cool 5 minutes in pan. Flip pan over on serving platter. Serve immediately.
  10. Store leftovers in air right container.

Tropical Mimosas - The classic brunch drink, given a tropical twist with the addition of mango, pineapple, and a splash of grenadine.

In my mind, Easter marks the beginning of brunch season. The weather has warmed up but not enough to hang by the pool. So what’s the next best way to spend some time outside? Drinking mimosas on the deck of our favorite brunch spot, am I right?!

In Atlanta, no matter where we go for brunch, there is always a wait. Is that the same where you live? I’ve gotten to the point where I don’t have the patience to wait and, to be frank, I don’t really feel like paying for food anymore, especially when I can make great stuff at home in my kitchen. Man, just writing that made me feel like a grumpy old person. Bah Humbug!

The next best thing is hosting people over for brunch at our place. I love entertaining so I’m happy to have people over for any occasion. But brunch is extra special because of the aforementioned drink of choice at brunch: mimosas.

So, in honor of brunch season, I am sharing one of my favorite mimosas: Tropical Mimosas!

Tropical Mimosas - The classic brunch drink, given a tropical twist with the addition of mango, pineapple, and a splash of grenadine. It’s not like me to serve drinks in their traditional glory. Nope. I like to jazz it up a bit to make them extra special for my guests. Just look at the list of the drinks that I’ve featured on my blog – cranberry lime mojitos, sparkling apple cider sangria, and another snazzy mimosa, berry mimosas. They all spawned from classic drinks we all know and love but with their own unique twists.

For this take on a mimosa, I knew I wanted a tropical twist. But “tropical” can mean so many things. It can mean traditional combinations like coconut and pineapple or more South American flavors like papaya, passionfruit, or mango.

For this mimosa, I took a mixture of both and combined mango and pineapple, with a splash of grenadine to give the mimosas the color of a tropical sunset. Finally, I finished it with a kiwi slice for garnish and voila! There you have my tropical mimosa!

Now, a key thing to remember is the mango is a subtle flavor compared to the explosive pineapple. So, for that reason, I used more mango juice than pineapple juice in this mimosa. If you want even more subtle pineapple flavor, you can use pineapple coconut water instead of the juice. It’s also a little healthier since it cuts outs some of the sugar.

Another tip I have for you is to only add a smidge of grenadine. I literally poured a drop of it in the mimosa and it created the color you see in these photos. Lastly, as you know, mimosas are made with champagne. As soon as champagne leaves the bottle, it starts to lose fizz. So this is not a drink you can make in a pitcher or ahead of time. It’s best to make these drinks a la carte. If you want to save time, though, you can mix the pineapple and mango juices together and store in the fridge until time to serve with the champagne.

Tropical Mimosas

Tropical Mimosas - The classic brunch drink, given a tropical twist with the addition of mango, pineapple, and a splash of grenadine.

Ingredients

  • 12 ounces mango juice/nectar
  • 6 ounces pineapple juice
  • 2 ounces grenadine
  • 1 750 mL bottle champagne

Instructions

  1. Add 2 ounces of mango juice and 1 ounce of pineapple juice to a champagne flute. Add a drop of grenadine very carefully so you don't overdo it.
  2. Fill the rest of the glass with champagne.
  3. Recipe makes 5 more glasses of mimosas.

I’m over here on Saturday night holding my breathe that no one gets sick through the night. Miss K was exposed to the stomach flu Thursday at daycare and we have baptism tomorrow. We.Can.Not.Get.Sick.

I’ve been sending up prayers and crossing my fingers and doing everything I can think of to not get the stomach flu. I hate that crap.

Does anyone else get anxiety when you know you’ve been exposed? I can’t sleep at night. Every single sound makes me jump out of bed and run because I’m sure they are getting sick.

I think I have issues. Really. I do.

I blame it on my Mom. She has the same problems. I keep telling myself as the kids grow up there will be less sickness in our house. Right?? RIGHT??

I was back in to the doctor on Thursday with RyRy because I thought her ear infection never got better after the last round of antibiotics, but it did. She just has allergies it seems. So we are taking allergy meds now for her and Miss K. Oh, the joys.

I’m so depressing aren’t I? Sorry!!

We had some fabulous weather here this weekend and we soaked it up. Made steaks on the husband’s new smoker that were delicious and played outside. Koert got to go outside and sit in the stroller and enjoy some fresh air while his sisters played!

He also slept 7 1/2 hours on Friday night. WIN. Now, I just want him to do it all the nights. Like I’ll get that lucky!!

It’s county fair time around here and it always makes me a little bit nostalgic as I LOVED the fair when I was growing and then went on to participate in 4-H when I got older. It always makes me wonder if others have amazing county fairs like we are blessed to have or are we just lucky? Growing up I always thought that county fairs everywhere were big and grand just like ours was. It took me until I was in my late 20’s to realize this isn’t the case. For work, we often have booths at county fairs in our service area. After going to several other fairs I realized that we were really like to have such a great fair!

You may ask me what excites me so much and obviously one answer to that is the food of course! Fair food is the best. Maybe not the best for you, but there’s a reason that fair time is only once a year. Trust me, I fully indulge. The pork chops on a stick, the cheese curds, corn dogs, mini donuts, homemade french fries, malts etc. It all is calling my name!

Of course, one of the other main attractions is all the rides for the kids. Miss K could not wait to go riding! We got a bunch of tickets and set out for the rides. Our little adventurer, RyRy, decided she wasn’t as adventurous at the fair. She would not go on a ride. Every time we asked she’d quickly shake her head and say, “No, no, no!”

The hubs was not excepting that. He was on a mission. He tried the carousel which resulted in her leaping into his arms as soon as the horse started moving. Then somehow he convinced her to try riding the boats with Miss K. Of course she fell in love and cried hysterically when she had to get off! Can’t win can ya?

Fair time here also means that soon summer will come to an end and we will be back to school in Minnesota. I’m focused on trying to squeeze as much fun into summer as possible yet and so should you! Today we are embracing the best potluck salad ever. It’s quick, it’s easy and its delicious! The perfect amount of crunch, sweetness and perfection!

Ingredients

Salad

  • 1 (16 oz) bag coleslaw mix
  • 2 (3 oz) bags ramen noodles, crumbled (flavor does not matter as you won't be using the seasoning packets)
  • 2 Tbsp sesame seeds
  • 1 c. sunflower seeds
  • 1/2 c. sliced almonds
  • 1/2 c. sliced green onions

Dressing

  • 2/3 c. vegetable oil
  • 2 Tbsp Truvia
  • 1/3 c. rice wine vinegar
  • 1 1/2 Tbsp soy sauce
  • 1/4 tsp sesame oil
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder

Instructions

  1. Preheat oven to 425 degrees. Spread crumbled ramen noodles, sesame seeds, sunflower seeds and sliced almonds on a baking sheet. Bake for five minutes, stir and bake for 3-5 more minutes, until mixture is slightly toasted and golden. Set aside.
  2. In a large bowl whisk together all the ingredients for the salad dressing.
  3. Add coleslaw mix and ramen noodle mixture to the salad dressing and toss until combined.
  4. Serve immediately.

Friends, I have a major strawberry addiction. Like, I’m consuming 5 pounds of strawberries per week kinda thing. They are perfect this time of year. I’m trying to grow strawberries and it’s not going so well. I currently have one teeny tiny peanut-sized strawberry growing. Waaaah. Fingers crossed that my strawberries will grow, grow, grow. I’m not too optimistic.

Easy Strawberry Crisp - Sweet and juicy strawberries topped with a buttery brown sugar oat crumble.

So, what have I been doing with all the strawberries I keep buying? Aside from eating them as-is, I’ve also been making Strawberry Sangria,  Strawberry Pie, and this super easy Strawberry Crisp. I’m in strawberry heaven over here!

This is the easiest fruit crisp ever. We toss the strawberries with sugar, orange juice and flour and place them in a baking dish. Our topping comes together in 2 minutes – oats, flour, sugars, cinnamon and melted butter get mixed up and crumbled over our berries. This beauty goes into the oven and almost immediately makes your house smell amazing! Once those strawberries are syrupy and bubbling and our topping is light brown we pull it from the oven.

Let this crisp cool off just slightly; you still want it a little warm when you serve it. And speaking of serving, don’t forget the vanilla ice cream. I say that the ice cream is optional in the recipe itself, but, let’s be real, when is ice cream ever “optional”? Get the ice cream, make this Strawberry Crisp, and watch it get devoured. Need help eating it? I’ll be right over.

Easy Strawberry Crisp

Easy Strawberry Crisp - Sweet and juicy strawberries topped with a buttery brown sugar oat crumble.

Ingredients

Filling

  • 5 cups halved or quartered fresh strawberries
  • 2 tablespoons orange juice
  • 1/4 cup granulated sugar
  • 1/4 cup all purpose flour

Topping

  • 2/3 cup old fashioned oats
  • 2/3 cup all purpose flour
  • 1/4 cup light brown sugar
  • 1/3 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted
  • Vanilla ice cream, for serving (optional)

Instructions

Preheat oven to 350°F. Grease a 9 1/2 inch deep dish pie plate or similar sized baking dish. Set aside.

Filling:

In a large bowl, combine all filling ingredients. Stir gently until well combined. Dump into prepared baking dish.

Topping:

In a large bowl, combine oats, flour, sugars, salt and cinnamon. Add melted butter and stir until well combined. Sprinkle the topping over the strawberries (pressing some of it together with your fingers to form clumps).

Bake for 30-40 minutes until the fruit is bubbling and juicy and the topping is light golden brown. Cool slightly, serve warm with vanilla ice cream.

I’m officially on Easter detox today. It’s kind of like Christmas detox. My house and my stomach! You guyssssss so much candy and food consumed over the weekend! It started on Friday with our traditional egg dying party at my aunt’s house. All of us cousins are invited over with our children and we dye eggs, hunt for Easter eggs and then have a pizza party! It’s so much fun! I look forward to it every year.

We are a large clan and the entire neighborhood is flooded with cars! Every year it seems to grow a little and we just got news that our cousin, who currently lives in California, is moving back this summer with his family so it will be even bigger next year!

Saturday was pretty low key around here. We hung out and I made muffins for church plus ran and got the last minute Easter basket fixings. Talk about leaving it to the end! I was sweating that one because there’s not a lot of choices when it comes to shopping around here!

The kiddos headed out to Grandpa and Grandma’s house to see the cows and calves with Dad in the morning so Mom got groceries and shopped alone. Alone. Welllll not alone alone. I still had Koert, but hey I’ll take it! So much easier! Actually Miss K just got to the age where it’s kind of fun to shop with her for the most part and run errands. She always has a smart remark to share with me so more often than not I’m doubled over in stitches. Way better than being alone on my errands most of the time!

The hubs made dinner on Saturday which is always a win in my book! I got him a smoker for his birthday present and he is all excited about making everything possible on it. I’m embracing it! Now, women, I got him something that technically causes him more work. Was that like him buying me a vacuum cleaner for my birthday?!

Sunday was Easter baskets, egg hunting followed by church then off to the hub’s side for Easter dinner. I was in charge of the dinner rolls. In fact they told me to bring a “package” of dinner rolls so I didn’t even feel tempted to make homemade ones! Ahhhhh, they must know I can hardly keep it together right now! I’m totally fine with this. In fact I said SWEET and got that package of dinner rolls that’s for sure!

It’s the season of life right now with three littles. I figured my time will come to pick up the slack and let someone else bring the package of dinner rolls in a few years right?

After that dinner I need a detox that’s for sure. Ham, potatoes, corn, bread, salads, desserts and everything in between! These Chocolate Banana Baked Oatmeal Cups are the perfect wholesome treat for the week ahead. I love that I can bake them on Sunday and keep them in the fridge for a quick snack or breakfast. They are also good in the freezer for a month but mine never get there! We eat them to fast!

Chocolate Banana Baked Oatmeal Cups

Chocolate Banana Baked Oatmeal Cups ~ Perfect for Breakfast, School Lunches and Snacks! These Baked Oatmeal Cups are Packed with Protein, Make Ahead and Freezer Friendly!

Ingredients

  • 1 tablespoon ground flaxseed
  • 3 tablespoons water
  • 2 cups old fashioned oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon sea salt
  • 1 teaspoon ground cinnamon
  • 1 large ripe banana, mashed
  • 2 tablespoons coconut oil, melted
  • 1 cup milk
  • 2 tablespoons brown sugar
  • 1 teaspoon pure vanilla extract
  • 1/2 c. mini chocolate chips

Instructions

  1. Preheat the oven to 350°F. Grease a muffin pan with nonstick cooking spray and set aside.
  2. Combine the ground flaxseed and water in a small bowl. Set aside while you prepare the other ingredients.
  3. Combine oats, baking powder, salt and cinnamon in a large bowl. Set aside.
  4. Combine mashed banana, flaxseed mixture, melted coconut oil, milk, brown sugar and vanilla extract in medium sized bowl.
  5. Add the wet ingredients to the dry ingredients and mix to combine. Stir in chocolate chips. Pour the mixture into the prepared muffin pan, filling each cup evenly. Bake for 20-25 minutes or until the cups are a golden brown on top and set in the middle. Remove from the oven and let the muffins cool in the pan for 5 minutes. Remove from the pan and serve warm.

Oatmeal cups will keep in the refrigerator 2-3 days in an airtight container or in freezer up to a month. Reheat in the microwave.

Happy Happy Easter!! I hope you are all having a wonderful weekend with your families and giving thanks for what the holiday is all about!

We will be doing the church thing and then going to the hub’s relatives for dinner after that. I’m in charge of the dinner rolls. I had a good chuckle when I got that text. It was “Can you please bring a bag of dinner rolls.”

Why yes, yes I can. Apparently they took pity on me with a newborn and gave me the easy card. I embraced it. My time will come later to do fancy things. Right now, survival. We just go with survival mode most of the time!

This week RyRy had double ear infection. I got a call from daycare on Thursday that she was running a fever and pulling at her ear. This kid never has a symptom when she gets an ear infection so I knew it was bad and brought her straight up to the doctor. We are blessed with an amazing family physician who snuck her in. Bless her heart.

This week my goal is to not go to the doctor. Wait, Koert has his two month appointment. Scratch that thought!!!

Did your children have their spring break yet? Our school’s spring break was last week. I so enjoy having our children home for the week. It’s short enough they don’t get too bored but long enough for us to really have some bonding time. We always try to do a little short trip somewhere during spring break. It’s usually something close to home. However, this year we took them to New York.

Your Family Will Love this Delicious and Easy Dinner Recipe!When we immigrated to the U.S., we lived in New York for a few years then moved to Ohio. Before I was married, we would go for a visit friends almost once a month. The traveling becomes harder with children. Though tough driving, it was still really nice to go. We stopped at Niagara Falls in the evening. It was so pretty, the light drizzle kind of dampened the evening but the children still enjoyed seeing the Falls for the first time. We then stopped in Rochester on Saturday and visited friends and finally Syracuse on Sunday. I am sure many of you will agree, recovering from a road trip can be challenging, ha! It takes days to get everything washed, cleaned and ironed. Then you need another couple days to recover from the cleanup, lol. Anyone with me on that? Pretty sure every mom out there is nodding her head.

Though I enjoy eating out while traveling, we much prefer home cooked meals. There is just something about getting in the kitchen together and eating at the dinner table that nothing can beat. Having five children, it’s so exciting to hear about the ups and downs of their day. Once we came back from the trip, I was not at all in the mood to spend forever in the kitchen. The first night back we had chicken fajitas in the slow cooker, we love slow cooker recipes. The next night I made these Chicken Buffalo Crescent Puffs I am sharing with you today. We love them! The inspiration came from the Buffalo Chicken Dip recipe. Though the dip is fantastic at parties with tortilla chips, I much rather enjoy the individual crescent puffs. The dough from the crescent is so flakey and delicious and when you bite into the crescent the unexpected surprise of the chicken filling is truly is phenomenal. My mouth is watering just from describing them.

This recipe is great not only great for lazy evenings like we had. I love it because it’s a simple enough recipe that the children can help make. We love cooking with children, though it does feel like it takes twice as long sometimes. Since we are using two tubes of the crescent rolls, if you don’t need that much at once, just use the one tube and half of the chicken mixture. Cover and refrigerate the remaining mixture, it will be good for a couple days. Then make a fresh batch when you are in the mood. I even enjoy making these for breakfast for my hubby if I have any leftover mixture in the fridge. By the time he is done getting dressed and fresh coffee is brewed, I have a delicious breakfast he can enjoy before heading out to work.

Buffalo Chicken Crescent Puffs ~ Your Favorite Buffalo Chicken Dip Stuffed Inside Flakey Crescents Rolls! Your Family Will Love this Delicious and Easy Dinner Recipe!

Buffalo Chicken Crescent Puffs

Preparation 0:15 2017-04-25T00:15:00+00:00 Cook Time 0:15 2017-04-25T00:15:00+00:00

Ingredients

  • 1 tube crescent rolls
  • 1 (10 oz) canned chicken, drained
  • 1 cup shredded cheese
  • 1 Tbsp hot sauce
  • 2 oz cream cheese, room temp
  • 1/3 cup mayonnaise
  • Dash of salt and pepper
  • 2 Tbsp butter, melted
  • 2 tsp plain bread crumbs

Instructions

 

Combine the chicken, cheese, hot sauce, cream cheese, mayonnaise with a dash of salt and pepper. Mix well.

Open the crescent tube and separate the triangles. Add some of the chicken mixture to the wide end of the triangle. Take the opposite ends and fold it over each other. Then fold over the rest of the crescent and pinch together to form shape of a ball. (Be sure to pinch together really well, or else some of the chicken mixture may ooze out.)

Brush tops of crescent puffs with melted butter and sprinkle with bread crumbs. Repeat with remaining ingredients.

Bake in preheated oven 12-15 minutes. Tops of crescents should be really golden in color. (Don’t open oven door during baking, crescents will flatter and won’t be flakey.)

*Any shredded cheese will work; Mozzarella, Four cheese or Mexican cheese. Or even a combination of both.

**You can use your favorite hot sauce. Sriracha, Tabasco sauce or Red Hot sauce may be used, whichever you prefer.

You guys! I’m pretty sure I haven’t shared my exciting news with you that I’ve been keeping a secret for like MONTHS! Ok, so it’s exciting for me at least, maybe not you! The story starts over this past year. Let’s just say I’ve been STRESSED to the max. Full time job, two kids and now three kids at home, a husband, a blog, life….you get the picture. I was BUSY. Real busy. And a little stressed… ok a LOT stressed.

I’d become a not very nice person to be around. I was cranky with the hubs, short with the kiddos and generally not real happy about anything. That could have been half blamed on the pregnancy not going to lie, but the other part was I was working ALL.THE.TIME. I’d get done at my regular job, come home do the dinner and kids thing, then rush them off to bed and sit at the computer for 1-2 hours every night. On the weekends I’d be making recipes, filming videos, scheduling pins, scheduling Facebook and shoving my kids out the door. It was not fun. Let’s just say as much as I want to be superwoman I’ve learned I’m not. I tried to figure out how to add about 10 hours to a day and that didn’t happen either. I was at a crossroads on what to do. Step back from the job? Step back from the blog? Continue to be stressed? Sell my children?

Ok, I’m kidding. The latter one was not an option! But, in all seriousness I had to do something. The hubs kept telling me. I finally listened.

Actually, what I did was pray and pray hard. I asked my Mom to pray, I asked the hubs to pray. I needed some guidance. Well, I more or less needed the good Lord to just pave the route out in a yellow brick road because I’m not real good at letting go and trusting. And pave the way did He!

I kept going back and forth on just quitting my full-time job completely, but I didn’t want to. I love my job, I love the people I work with and I wasn’t ready to let go of that. Unfortunately, we don’t exactly have “part-time” positions where I work. What to do? Plus, if I quit my job then the kids stay home and that’s a full-time job there so I felt like I wouldn’t be accomplishing much. I’d be taking care of them and still blogging on the nights and weekends.

Then in December at an employee meeting my General Manager announced they were hiring a few part-time positions. Say what? Part-Time? My head was spinning. This was my answer. I had to have faith that this was it. I don’t think I listened to much after that as I zoned out. After the meeting I quickly rushed into his office and announced that I wanted to go part-time if it was an option. I literally thought he was going to fall over as he stood there looking at me like I was nuts. Whoops!

There was a lot of things I had to remember and have a little faith in. As I went on maternity leave we just left things hanging at work. Instant Pot {Pressure Cooker} Hamburger Stroganoff ~ Our Favorite Meal Now in the Instant Pot! Only One Dish to Clean and You Have an Easy Dinner Recipe!

Ingredients

  • 1/2 c. minced onion
  • 1 clove garlic, minced
  • 1 lb ground beef
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1 (10.5 oz) can cream of mushroom soup
  • 1 Tbsp Flour
  • 3 c. beef broth
  • 3 c. egg noodles, uncooked
  • 1 c. sour cream

Instructions

  1. Spray Instant Pot interior with cooking spray. Set to saute.
  2. Brown ground beef, onion, and garlic.
  3. After beef is browned stir in flour.
  4. Add broth, soup, and salt and pepper. Mix.
  5. Add noodles.
  6. Place lid on Instant Pot.
  7. Set to high pressure for 8 minutes.
  8. After it is done, let the pressure naturally release for about five minutes, and then change to quick release until all the pressure is gone.
  9. Stir in sour cream until combined.

Chocolate. Nutella. Strawberries. Aren’t these the best foods out there? I think they are. They make every dish taste delicious and when you combine all three together you are in for a treat! And of course they all taste amazing when eaten on their own, don’t they?

Today I have for you this simple chocolate dessert that has all three above mentioned ingredients. Chocolate Nutella mousse with strawberries! Doesn’t it sound delicious?

By the way, it all started about a month ago. I craved Nutella so much! You can’t even imagine! I guess there would be nothing wrong about this but if you knew me when I was a kid, you would find this totally weird. Back then I did not like Nutella at all! But those days are long gone and here I am now. Craving this yummy spread! Isn’t that funny how our sense of taste changes over the time?

Now to be completely honest with you I bought that Nutella jar for two reasons. One was to satisfy my craving. The other reason was to make this chocolate Nutella mousse. Should I confess about having a pretty difficult time keeping the jar full enough so I could try making this dessert? Nutella can be pretty addictive!

To make this chocolate Nutella mousse is pretty easy. It’s easy because it’s a no bake dessert. I like making desserts that don’t require any baking. If you do too, you might also like this chocolate pudding dessert, strawberry mousse dessert cups, or icebox cake.

Now this chocolate mousse with Nutella is pretty rich. Its main ingredients are chocolate, Nutella and whipping cream. The chocolate is melted altogether with a splash of whipping cream. The rest if the cream needs to be whipped with some powdered sugar. Be careful not to over-whip it. The whipping itself will only take a few minutes. Count with about 2-3 minutes. Whip it on a medium speed.

If you over-whip the cream a bit you can still use it. It will taste good but its texture will be a bit grainy. You could try saving it by pouring in some more whipping cream and whisk again. This will not work when you have whipped far too long and your mixture now looks way too solid.

Now get a large bowl where you whisk Nutella with a few tablespoons of whipped cream. Now fold the whipped cream into Nutella mixture. At last add the melted chocolate. Don’t mix with hand mixer anymore. Use a spatula or wooden spoon to fold the chocolate in.

Divide this mousse between 4-5 glasses and put in the fridge for 30-60 minutes. Meanwhile it’s time to get the strawberries ready. Dice them, mix with sugar and lemon juice and let them sit in the fridge for about 30 minutes before using. This is called macerating. The strawberries will release their juices thanks to the added sugar and lemon juice. This will help them soften and they will also taste sweeter. You can omit this step. Instead you can simply top the glasses with fresh strawberries.

Note: The longer you keep the mousse in the fridge the harder it gets. Some of you might like it thicker, some thinner so just watch the time.

You can make the mousse ahead but make sure to add the strawberries right before serving to get the freshest look possible.

The consistency of Nutella can vary. If you feel like it’s too hard, pop it in the microwave for a few seconds. Just to soften it a bit.

Ingredients

  • 2 Cups Whipping Cream
  • 2 Cups Fresh Strawberries
  • 7oz Dark Chocolate (70%-75% Cocoa Content)
  • 5 Tablespoons Nutella
  • 2 Tablespoons Powdered Sugar
  • 2 Tablespoons Caster Sugar
  • 2 Tablespoons Fresh Lemon Juice

Instructions

  1. Cut chocolate into small pieces. Melt it over double boiler with about a ½ cup of whipping cream. Once done, let it cool down.
  2. Meanwhile: Whip the cream & powdered sugar until soft peaks form. Don’t over-whip.
  3. In a large bowl, whisk Nutella with a few tablespoons of whipped cream. Now fold the whipped cream into Nutella mixture. At last, stir in cooled chocolate.
  4. Divide the mousse into 4-5 glasses, making sure not to fill them up to the top. Refrigerate for 30-60 minutes before serving.
  5. Meanwhile: Rinse the strawberries under running water. Remove any green parts and cut into small pieces. Transfer them into a bowl. Add caster sugar and lemon juice. Leave them in the fridge for 30 minutes before topping each glass with strawberries & their juice.
