Well we survived out first night at home with baby Koert. It wasn’t bad but I’m still exhausted! I remember this happening with the girls. You’d get like one or two nights under your belt and you’d be like wow this isn’t as bad as I thought and then they’d do one those “I’m not going to sleep for 12 hours tonight” things and you’d want to D.I.E. Anyone else with me on this one?

Mom treated me to dinner tonight with her AMAZING lasagna recipe and I indulged that’s for sure. She always spoils us when we come home with a new baby and I appreciate it so much. I have a few meals in the freezer too so we will have some stress free nights when we need them, but we are going to need a few these easy recipes in the upcoming weeks that for sure!

You guys! We welcomed Koert Jason Evink into the family on Wednesday morning so my blogging schedule has been thrown to heck, but hey it’s with good reason right! Needless to say we were delighted by being blessed with a boy this time! This was our last either way so we were secretly hoping for a boy, but really just another healthy child was all we could pray for. I had a sneaking suspicion that it was a boy because little things were just different this time. Maybe mother’s intuition? I didn’t want to say much about it and just laughed it off when other people asked if I thought it was a boy or a girl. My typical response was that we have two girls already and we seem good at that so why change things up? I’m sure it’s a girl!

I knew my husband was hoping for a boy, but he was pretty set on the fact that it was a girl too. In fact, I started freaking out about a boy name about two weeks ago and starting to doubt my choice. He listened to me while getting ready for bed. Then he stated that he was sure it was a girl so to quit freaking out. Then rolled over and went to sleep. I was left to ponder the name in silence while I tried to fall asleep.

In the end I went with the fact that he was more than likely right and I was in love with the girl name so whatevs.

After another week of pondering I decided that the boy name was pretty good and not to worry about it. It’s actually an old family name on the husband side so it has some sentiment to it too. I love that!

As my sweet babe lays beside me looking all sweet and innocent while catching some zzzzz’s I realize that tomorrow when we go home my life is going to be royally turned upside down and I’m not exactly sure I’m ready for it. I kind of want to stay in this bubble in my hospital room where the nurses are taking care of both of us. The hubs is next to me doing most everything and the girls come to visit on a schedule.

Tomorrow, tomorrow it’s going to be ugly and it’s not going to get any better for a while. I’m going to need stupid easy meals that my family will eat! Well, let’s get real I always need those! I’ve perfected this amazing One Pot Pizza Pasta is on the table in thirty minutes and my girls loved it! To be quite honest both my husband and I did too! It’s the perfect weeknight meal to throw on the table when life is crazy!

One Pot Pizza Pasta + VIDEO

Prep Time: 15 minutes

Cook Time: 10 minutes

Total Time: 25 minutes

Yield: 4 servings

One Pot Pizza Pasta + VIDEO

Ingredients

  • 8 oz uncooked corkscrew pasta
  • 2 c. chicken broth
  • 1 (14 oz) can diced Basil, Garlic & Oregano tomatoes
  • 1 tsp garlic powder
  • 1/2 tsp oregano
  • 1/2 c. milk
  • 2 c. shredded Mozzarella cheese
  • 1/2 c. mini pepperoni slices
  • Shredded Parmesan Cheese for topping

Instructions

  1. In a large pot bring pasta, broth, tomatoes, garlic powder, oregano and milk to a boil. Cook at a medium boil with lid on pot, stirring frequently. for about 10 minutes or until noodles are al dente. Most of the liquid should have evaporated, if it hasn't remove lid and let pasta cook for an additional few minutes, or until liquid is mostly evaporated.
  2. Stir in shredded Mozzarella cheese and pepperoni. Stir until melted and combined.
  3. Top with additional Parmesan cheese if desired and serve immediately.

These Cinnamon Roll Muffins are filled with cinnamon and sugar then drizzled with a vanilla icing!

I have put a little twist on the ordinary cinnamon rolls and I’m in love!  I took my trusty cinnamon roll recipe that I always use, cut the recipe in half then used a muffin pan to cook them up.  Making them super cute and fun to eat.

Cinnamon rolls happen to be one of my favorite things to eat for breakfast.  Ok that’s a lie I like everything when it comes to breakfast both sweet and savory.  If you don’t believe me just check out my breakfast archives!  One of my favorite breakfasts in there would be these breakfast enchiladas and these ham and cheddar biscuit rolls and these double chocolate strawberry muffins…..ok I’m getting off track and really hungry now!

I could probably eat breakfast for every meal of the day and that’s the truth!  Right now it’s all about the carbs…. I can’t seem to get enough!  (However, my thighs would suggest otherwise 🙂 )

Being 22 weeks pregnant carbs are my life!  I was hoping my carb craving….ahem….obsession…..would calm down a little by now but it hasn’t. It’s still in full force, but hey the family gets to eat lots of yummy treats!!!

Ok a little about these cinnamon roll muffins.  As I said earlier I cut my recipe in half which was the perfect amount of dough.  Now don’t be intimidated by the yeast in these muffins!  Working with yeast really isn’t that hard but it does take a little patience and time.  I promise it isn’t anything super complicated!!

My biggest tip is to make sure your yeast is active if you haven’t used it in a really long time.  You can do this by dissolving 1 teaspoon sugar in 1/2 cup very warm water (about 115 degrees F) then sprinkle one 1/4 oz. package of yeast over the top and stir it in.  Let stand for 10 minutes and it should have risen to the 1 cup mark.  If it hasn’t then your yeast isn’t very active and won’t work correctly in the recipe.  If you do this test and want to use the yeast mixture be sure to deduct that liquid from the recipe.

However, if you plan on making this cinnamon roll muffin recipe I would test using milk instead of water.

Now I could have eaten the entire pan myself (hey I am eating for 2 here!!) but I thought I would share with the kiddos and hubby.

Awwww I’m so nice.

The family of course loved them and the pan of muffins was gone in mere seconds.  Now if you can’t down all 12 muffins yourself and really don’t want to share with anyone (I don’t blame you) no problem!!  Just cover the muffins well and they will keep for a couple days.  They won’t be as fresh as when they were fresh from the oven.  But you can zap them in the microwave for a few seconds to help freshen them up.

If you would like to freeze them don’t frost them.  Allow them to cool completely then place them in a freezer bag and you can keep them in the freezer for about 2 months.  Let them thaw before frosting them.  Hope you enjoy!!

Cinnamon Roll Muffins

Prep Time: 1 hour

Cook Time: 15 minutes

Yield: 12 muffins

Cinnamon Roll Muffins

Ingredients

  • DOUGH:
  • 2 cups all purpose flour
  • 2 tablespoons sugar
  • 1 1/4 teaspoons dry active yeast
  • 1/2 teaspoon salt
  • 2/3 cup very warm milk (115 degrees F)
  • 1 egg, beaten
  • 1 tablespoon butter, melted
  • FILLING:
  • 3 tablespoons butter, softened
  • 1/4 cup sugar
  • 1/4 cup packed brown sugar
  • 1 tablespoon ground cinnamon
  • ICING:
  • 1 cup powdered sugar
  • 3-4 tablespoons milk
  • 1 tablespoon very soft butter
  • 1/2 teaspoon vanilla

Instructions

  1. In the bowl of your stand mixer combine the flour, sugar, salt and yeast. Add the milk, egg and butter and stir just until it starts to combine then switch to the dough hook. Mix on a low speed for about 5 minutes and if the dough is extremely sticky to the touch (not manageable to handle) then add in a little more flour. Knead the dough for 5 minutes on a low speed. Lightly brush dough with a very small amount of oil then cover and let rise in a warm place until doubled in size (about 20-30 min).
  2. Grease a muffin pan really well and set aside. In a small bowl combine the sugar, brown sugar and cinnamon for the filling and set aside. Place dough on a work surface and roll out to a 12"x10" rectangle. Spread with softened butter then sprinkle with reserved sugar mixture. Starting with the longest side facing you roll up the dough and seal the edge. Cut dough into 12 one inch rounds and place one round in each muffin well. Cover and let rise in a warm place until doubled in size (about 20-30 minutes).
  3. Bake at 350 degrees F for 13-15 minutes or until lightly golden on top. Let cool in pan for 5 minutes before removing to cool completely.
  4. When ready to frost combine all icing ingredients in a small bowl. Then drizzle over the top of each muffin.

Notes

These are best eaten the day they are made. However you can store tightly wrapped on counter for no more than 2 days or they will become really dry. Warm for a few seconds in the microwave to freshen if needed.

I have a confession to make. Bread usually scares me because it calls for a certain temperature of liquids and the yeast just makes me nervous, but this one looked so simple I knew I could handle it and so can you!

I made this recipe on Friday and took a couple loaves out to my mom’s for coffee the next morning because I always like to treat my family when I make new recipes. They don’t ever seem to complain about it!

My brother’s girlfriend was at mom’s and we were all sitting at the kitchen table sipping our coffee and eating toast…sounds like the perfect little family on the farm doesn’t it? Don’t worry there was tons of good natured ribbing going on around the table too!

We show our love for each other by teasing most of the time. Although, I have to confess, my little brother is a hugger. If he knows I’m upset or stressed he comes running up to me and scoops me up saying, “Julie need a hug? Julie need a hug” It’s been a tradition for quite some time. And yes he does scoop considering he’s 6′ 7” tall!

English Muffin Bread ~ Perfect Bread for Toasting! Homemade Bread that has the Same Texture and Flavor as Your Favorite English Muffins!
This bread is so simple and easy plus it makes your home smell like a million bucks. It makes wonderful toast especially smothered with my mom’s homemade Strawberry Rhubarb jam. The hubby is waiting to make some eggs and sausage with it. He was super excited about this prospect!

English Muffin Bread

Prep Time: 1 hour, 20 minutes

Cook Time: 25 minutes

Total Time: 1 hour, 45 minutes

Yield: 2 Loaves

English Muffin Bread

Ingredients

  • 2 c. milk
  • 1/2 c. water
  • 4 1/2 tsp Rapid Rise Yeast
  • 5-6 c. all-purpose flour
  • 1 Tbsp sugar
  • 2 tsp salt
  • 1/4 tsp baking soda
  • 2 Tbsp corn meal

Instructions

  1. Warm the milk and water over low heat until warm, around 120 degrees. Remove from the heat and add the yeast to the mixture and let bloom, about 5 minutes.
  2. In the bowl of a stand mixer add the yeast and milk mixture and stir in the flour, sugar, salt, and baking soda.
  3. Knead on medium speed for 7 minutes with dough hook. Test dough and add more flour if it's too sticky too handle. I ended up using almost the entire 6 cups of flour before mine came together. It should be slightly sticky, but workable.
  4. Spray two 8x4 loaf pans with nonstick cooking spray. Then sprinkle them with corn meal. Shake the pan around so that the corn meal coats the inside of the pan evenly.
  5. Place the dough in the pan and let rise until doubled, about 45 minutes.
  6. Bake in a 400 degree oven for 25 minutes or until golden brown. Cool completely before slicing.

Well… I was hoping to share some very exciting news with you today, but Baby E is not cooperating with me at all. I’m currently sitting here on Saturday 40+ weeks pregnant with no signs of that baby showing up. The thing is I’m almost ok with that. I’m getting a cold and it’s not pretty. I’m guessing that having a child while sick is not recommended. Not only would I be miserable but the last thing I want to do is pass it onto babe.

So I’m actually praying that it stays “cooking ” a few more days so I can battle this thing out. Then have a healthy, beautiful baby and a healthy Mommy to take care of it!

So I’m off to enjoy the couch for the day…. hope you find something good to make this week!

As a kid, nothing was more disheartening than a bowlful of boiled broccoli plonked down on the dinner table. Even worse, my parents expected that I scoop a spoonful onto my dinner plate and, let me tell you, that serving spoon was huge. I became an expert at pushing the sad stuff around my plate just enough to keep up the appearance that I had, in fact, eaten enough to justify dessert.

This was during the 80’s. Nobody (especially folks in Wyoming, where I grew up) knew what to do with broccoli except boil the life out of it and call it good.

Now days, as a bonafide adult who understands that making room for some green stuff on my plate is a good thing, I’ve given my broccoli a little bit of an upgrade to make it more delicious and those sad bowls of over-boiled broccoli are just a thing of my past. Thank goodness.Roasted Broccoli Alfredo

And the upgrade is a simple one: roasting. Broccoli that spends some time in a hot oven, dressed only in a light coating of olive oil, undergoes a magical transformation that leaves it tender, yet with a bite. The edges of the florets crisp up providing an interesting contrast in texture to its more tender insides and the caramelization draws out a hidden sweetness guaranteed to change the hearts and minds of any self-professed broccoli hater.

I should know, I was one for many years.

Oh, and the other thing that makes broccoli more tolerable: cheese! Now days I wonder why my parents didn’t just drown all those florets in some cheese, Velveeta would have been a good choice for the times, but they didn’t and being someone who prides herself on letting go of past disservices, I’ve decided not to make an issue of it. There’s just no room to carry around a broccoli grudge, but, seriously?  A little cheese could have changed the course of history in my family. Or, at the very least, a little melted cheese would have made dinnertime a bit more pleasant.Roasted Broccoli Alfredo

Now, as someone who loves comfort food, most of my dinner ideas start with questions about what sort of pasta should I cook and with what kind of cheese. From there, evidence of my more mature approach to dinner, I contemplate what veggies would be best to add in. It’s this sort of thinking that got me to this roasted broccoli alfredo: fettucine tossed in a rich and decadent alfredo sauce with a generous helping of roasted broccoli stirred in for good measure.

This roasted broccoli Alfredo is a relatively quick dinner – the pasta and sauce come together in the time it takes for the broccoli to roast – and it’s an easy way to work a few more good-for-you veggies into a weekly dinner rotation. The recipe easily serves four with some crusty bread served on the side, and, trust me, there won’t be any undercover veggie avoidance behaviors at the dinner table with this one.

Roasted Broccoli Alfredo

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Yield: 4

Roasted Broccoli Alfredo

Ingredients

  • 4-5 cups of fresh broccoli florets (from about 3 heads of broccoli)
  • 2 tablespoons olive oil
  • 1 1/2 teaspoons kosher salt, divided
  • 8 ounces fettuccine
  • ¼ cup unsalted butter
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 425 degrees.
  2. Spread the florets in an even layer on a large baking sheet lined with foil. Drizzle the olive oil over the top. Sprinkle the salt over the top and, using your hands, give the florets a little toss so they are evenly coated in the oil. Pop them in the oven and roast for 20-30 minutes or until they are nicely caramelized and crispy around the edges.
  3. While the broccoli roasts, bring a pot of water to a boil. Add the pasta and cook according to package directions (about 7ish minutes).
  4. While the pasta boils, make the sauce. Melt the butter in a large pan over medium heat. Add the cream and whisk to combine. Bring it to a simmer and let it cook for a minute or two. Add the grated Parmesan cheese and 1/2 teaspoon of salt and stir until the cheese is melted.
  5. Using tongs transfer the cooked pasta directly to the sauce. The pasta will bring with it some of the starchy water which helps thicken the sauce. Toss the pasta in the sauce for a couple minutes.
  6. Remove the broccoli from the oven and transfer to a cutting board. Run your knife through the florets to roughly chop them (see note). Stir them into the pasta and serve.

Notes

You don't have to chop up the broccoli, but I find it's a little easier to eat and every bite has a little bit of roasted goodness. If you prefer whole florets just toss them in the sauce as is and skip this step.

In my opinion it has a lot to do with momentum. I was in basketball throughout my middle school and high school years and I remember our coach always saying you guys, if you let the momentum swing you are pretty much screwed. As I watched the Super Bowl I quickly saw the Falcons get the momentum and it’s so hard to come back from that unless there is a major swing. And did you see that momentum swing? Now let’s talk about that Super Bowl Food you are all enjoying! The hot item on the blog was this delicious Crack Dip. I have a confession. While you were all enjoying amazing food my family was not. I was scrounging to make some quesadillas quick for dinner. Ooops. Missed that one didn’t I? I was REALLY hoping I would be in the hospital meeting this baby. I should know better but that was my hope so I kind of skipped planning Super Bowl food.

The due date is still three days away but a girl can hope right? Poor Miss K is literally counting down the days until the arrival. I’m not sure how I’m going to explain to her that the baby isn’t coming if it’s over due. She thinks that due date is the DAY. Not with my history!

If my due date comes and goes you’ll find me with this entire Chocolate Angel Food Cake and Strawberry Sauce drowning my sorrows!

To make the Strawberry Sauce a little bit lighter I used Truvía® Spoonable. This is one of my favorite secret ingredients because it helps me reduce the calories in delicious recipes and not sacrifice the flavor. Truvia® sweetener is natural, great-tasting sweetness that was born from the leaves of the stevia plant. This Chocolate Angel Food Cake with Strawberry Sauce is the perfect treat for your Valentine. It’s easy and has so much flavor, yet is lighter than your average dessert!

Chocolate Angel Food Cake with Strawberry Sauce

Prep Time: 20 minutes

Cook Time: 40 minutes

Total Time: 60 minutes

Yield: 8 servings

Serving Size: 1 piece

Chocolate Angel Food Cake with Strawberry Sauce

Ingredients

    Cake
  • 1 (16 oz) package angel food cake mix + ingredients to prepare
  • 1 tsp vanilla
  • 1/2 c. baking cocoa
    Strawberry Sauce
  • 1/8 c. Truvía® Spoonable
  • 2 tsp cornstarch
  • 1/2 tsp vanilla
  • 1 (12 oz) package frozen strawberries, thawed
    Whipped Topping

Instructions

  1. In a large bowl, combine cake mix, water, vanilla and cocoa. Beat on low speed for 30 seconds. Beat on medium speed for an additional 2 minutes.
  2. Gently spoon into an ungreased 10 in. tube pan. Cut through batter with knife to remove air pockets. Bake according to directions on box.
  3. In a small saucepan combing Truvía® Spoonable and cornstarch. Add Strawberries. Bring to a boil stirring constantly. Cook and stir about 5 minutes or until the mixture is thickened. Remove from heat and let cool. Puree with a blender.
  4. Run a knife around side and center of cake in pan. Remove to serving platter. Slice and serve with strawberry sauce and whipped topping.

Here I am still! Four days till the big “Due Date”. The date that makes you get your hopes up. Makes you wish that the baby will come early, just this one time because it COULD happen right? Highly unlikely in my previous experience with babies that were both overdue, but this does not prevent me from hoping and wishing.

Everyone looks at you at work and comments, “You’re still here?” at this point. It makes you want to slap the smile off their face, but that didn’t come out of my mouth, got it?

Obviously, I’m thankful I’m blessed to be able to carry my babies full-term, thankful that I’m able to have children in the first place because I’ve watch way to many friends struggle to get pregnant. But when you are 39+ weeks pregnant sometimes, just sometimes, you forget all that because you can’t put your shoes on without the help of your four year old, you can’t get off the couch without doing a very ladylike tuck and roll and you are flat out miserable for the most part!

I hope next week I have baby news for you, but until then dig into this wonderful meal plan for this week!!!

Can you believe Valentine’s Day is creeping up on us so fast? I bet you think I’m crazy for posting a Valentine’s recipe already, but seriously it’s right around the corner. I obviously will treat the hubby, but I’m thinking the parents need a HUGE treat too and I might just to bake them a cake like this. You see they cleaned my house. It was a dire state of need. Sometimes I just can’t get it all done and it might have slipped.

Swirl Valentine Cake ~ Super Easy Dessert Starts with a Boxed Cake Mix and Becomes the Perfect Easy Valentine's Day Dessert!

Story goes like this. I was complaining to my mom about how dirty my house was and I didn’t know when I’d get to clean it again one morning. Later that morning she texted me to see if I would want her to swing by for a few hours and clean a little. UH HELLO?! Do I seriously need to answer that mom? Of course that would simply fantastic. So while I was slaving away at work my parents went to my house and cleaned. Spoiled? Nah just loved.

Now I didn’t tell my hubby because he would have said I was spoiled. Guess what? He didn’t even notice. Men. Well maybe it’s good because obviously he does not notice when I let things slip. The freshly vacuumed carpets lines, clean bathrooms etc just don’t matter to him obviously!

Swirl Valentine Cake ~ Super Easy Dessert Starts with a Boxed Cake Mix and Becomes the Perfect Easy Valentine's Day Dessert!

So if you need to make something sweet for you Valentine whip up this cute and festive cake that is super easy since it uses a box mix. GASP. I know. I won’t tell if you don’t!

P.S. This is a play off the super fun Firecracker Cake. Pin it. I know you want too. There is no shame in being ahead of the game and planning your food for a holiday that is 6 months away!

Valentine’s Swirl Cake

Yield: 8 servings

Serving Size: 1 piece

Valentine’s Swirl Cake

Ingredients

  • 1 box white cake mix + Ingredients to prepare cake
  • 1 Tbsp strawberry jello
  • 1 container white frosting
  • Pink Gel Food Coloring

Instructions

  1. Preheat oven to temperature on cake mix. Generously grease a fluted tube cake pan. Make cake batter according to directions on box.
  2. Pour 1/2 of the batter into a small bowl; stir 1 Tbsp strawberry jello into cake mix until well mixed.
  3. Pour 1/2 of the red cake batter into bottom of pan. Carefully pour remaining white batter over red batter. Top with the rest of the red batter. The red batter will not completely cover the white batter.
  4. Bake as directed on box. Cool cake 5 minutes. Flip out of pan onto cooling rack and cool cake completely.
  5. When cake is cooled, divide the frosting evenly into 2 microwaveable bowls. Microwave 1 bowl of frosting on high a few seconds until smooth enough to drizzle over cake. With spoon, drizzle all of the 1st bowl of microwaved frosting over the cake. Repeat microwaving second bowl. Stir in the pink gel food coloring. Drizzle over cake. *Note you do not need to use all the frosting!
