We’ve officially made it to week 37 of this pregnancy!! I was totally saying to people I was feeling pretty good and it wasn’t so bad up until like four days ago and then I was like GET IT OUT NOW. I don’t know if the baby dropped or what but man oh man I’m looking forward to it being over!

Yet, I know what’s to come, sleepless nights, recovering from giving birth etc. That also makes me want to run away crying a bit. Oh the joys, but it’s all worth it in the end right?!

Tonight we went over to a friends house for dinner and another couple joined us. We were all high school classmates. Those other two happen to be an RN and a Doctor. The Doctor friend just had a baby a few months ago and the RN is currently pregnant. Tis the season of our life right! Let’s just say there were a lot of stories revolving around birth and babies. Many of which were not pleasant and I all like “happy thoughts, happy thoughts” LALALA!

Did I mention I slipped and fell on the ice getting out of my car at work this week? That made me sweat a bit. Oh, and possibly cry a bit too. I wasn’t concerned about me, just about baby but I think we are just fine!

Potstickers are so easy to make and the fillings for potstickers can be so versatile. These here, however, are not your ordinary potstickers. The mushrooms, carrot and cabbage give the filling so much flavor and make them unique. These potstickers are great to make and freeze the leftovers for later. You can then enjoy potstickers whenever you’re in the mood for Asian food and you don’t even need to leave the comfort of your home, hot to mention the amount you will be saving.I love having frozen potstickers as they make for a great appetizer when I have company over and am unsure what to serve or don’t have a lot of time for preparation.Pork Potstickers

Note: Prepare potstickers according to instruction. Then to freeze the potstickers, lay them out on a baking sheet or cutting board and completely freeze before throwing them into a freezer bag.  Once ready to enjoy, don’t thaw potstickers, just add to pan and cook (cooking time will be longer).

Growing up in a Ukrainian household, the foods we enjoyed were very much limited to just our Ukrainian culture. Once I got married, I loved getting creative in my kitchen and trying new recipes. It was always really exciting to try something completely out of my comfort zone and the recipe be a hit with my husband and children. Score! We rarely went out growing up, our family immigrated and parents were trying to make ends meet, restaurants weren’t exactly something we could afford.

When we got married and started going to different restaurants, I cannot tell you the excitement I had to come home and recreate the different recipes I would try on our date nights or outings as a family. It was on one of these date nights that I tried potstickers and fell in love. They were so simple yet tasted so good. Though the ones I initially tried were steamed, I much rather prefer fried potstickers. I love the crunchiness when you bite in. Just takes potstickers to a whole new level. 🙂

Pork Potstickers

Yield: 10 servings

Serving Size: 5 potstickers

Pork Potstickers

Ingredients

  • 3/4 lb ground pork
  • 3/4 c. shredded cabbage
  • 1/2 large carrot, shredded
  • 1 garlic clove, minced
  • 6 oz mushrooms, chopped
  • 1/2 tsp oil
  • 1 green onion, thinly sliced
  • Salt and pepper, to taste
  • 1 pack won ton wrappers (50 wrappers)
  • Oil for frying
    Dipping sauce
  • Low sodium soy sauce + fresh grated ginger

Instructions

  1. Saute mushrooms on oil until golden.
  2. Add cabbage and carrot to saucepan, cover with water. Bring to a boil, cook 2-3 minutes until cabbage becomes tender. Drain water.
  3. Combine all of the ingredients for potstickers, add salt/pepper to taste.
  4. Lay out won top wrappers on surface. Spoon filling into center of wrapper. Using fingers, moisten edges of wrappers with water. Fold dough over to create triangle, pinch edges to seal, lightly push down on the filling to distribute filling for even cooking.
  5. Add enough oil to cover bottom of non-stick pan, heat oil over medium heat. Cook potstickers in a single layer until golden crisp, about 2 – 3 minutes. Enjoy with dipping sauce.

So we are almost to week 37 of this pregnancy and I’m excited, nervous, not ready, apprehensive, yet just want it to be all over! Can any of you relate? There’s so many emotions going through my head right now that I’m a slight disaster of hormonal emotions.

I spent Sunday prepping a few freezer meals. I made Tater Tot Hot Dish, Chicken Alfredo Stuffed Shells, and Easy Meatball Stuffed Shells. I’m think I should make a few more, but I might loose ambition. Thankfully my husband pitches in if he needs too!

I tried this new family first thing this weekend so that included me hanging out with the kids and hubs on Saturday. They wanted to go ice fishing, which I normally shy away from because there’s always something to do at home, right? Well, this time I tried to put it all aside and go with them and enjoy it. Oh my goodness it was exhausting!! RyRy was busy, crazy busy, like always. I’m not sure how we kept her out of one of the holes. Let’s just say we are looking into covers for them for the next time!

Miss K LOVES to ice fish. In fact she talked her Daddy into letting her stay home on Monday with him and go ice fishing in the morning because he had the day off. Trust me, she has it good out there. She gets to bring out her DVDs, cookies and make pizza out there. Who wouldn’t love it?!

There is pure joy and excitement when that rattle reel goes off! We caught a few when we were out there on Saturday and the girls were so excited. As I said before I threw caution to the wind and enjoyed my family on Saturday and left the work behind, which was amazing! I loved it. Then Sunday came and I realized that I had SO MUCH TO DO. I freaked and was not fun to be around. Thumbs down right?

That brings me to my next dilemma. How on earth am I going to keep up once baby comes? I want to be super woman. I want to do it all, but I think I need to realize I can’t. It’s not possible. Lately, I’m struggling to figure out what to change and how to change it. Step back from the blog? It’s my baby. I grew it, I love it and I enjoy it. Quit my job? Go Part Time? I love my job too.

So tell me, what would you do? I can’t come up with the perfect scenario. Either I pick work over my family, or money over my family, or give up my work and pick my family.

I know, I know I will never get these days back with my family so I really should pick them, but why is it so hard?

Corned Beef Bagel Dip + VIDEO

Prep Time: 15 minutes

Total Time: 15 minutes

Yield: 16 servings

Corned Beef Bagel Dip + VIDEO

Ingredients

  • 3 (2 oz) Packages Buddig Corned Beef, chopped
  • 1 1/3 c. mayonnaise
  • 1 1/3 c. sour cream
  • 2 tsp dill weed
  • 2 tsp Accent Salt Seasoning
  • 2 Tbsp minced dry onion
  • Bagels to Serve with Dip

Instructions

  1. Stir all ingredients except bagels together in a small mixing bowl.
  2. Refrigerate at least 2-4 hours before serving.
  3. Chop bagels into bit size pieces for dipping and serve.

January is a month when we tend to look for healthy recipes more than usually. Or at least some of us do! I guess it’s because of the whole New Year’s resolution thing. We all want to be healthier and eat the right things. So we search for new recipe ideas.

That is why I made this superfood breakfast bowl. It is full of nutrients which are important for our bodies. All these goodies help us stay healthy and also keep us full longer!

So what exactly is in this healthy breakfast bowl you ask? Well, the answer is pretty simple: Yogurt + Fruits + Seeds! These are the main ingredients so let’s talk a bit more about them!

I used natural yogurt but you can also use Greek yogurt. They are both highly nutritious containing protein, calcium, potassium as well as some vitamins and minerals.

By the way, if you are wondering what the difference between a natural and Greek yogurt is then Greek yogurt is thicker and contains probiotic cultures as well. Its protein content is usually higher as well.

When it comes to fruits, I used banana and kiwi in this breakfast bowl recipe. Bananas are a great source of potassium and vitamins. And guess what? Because of its fiber content, you will feel full longer! Isn’t it great? Now let’s not forget about kiwi. This fruit boosts our immune system thanks to its high vitamin C content which is pretty important in winter months when we tend to get sick very easily.
Now let’s talk seeds! Pumpkin, sunflower, sesame, hemp, chia, flaxseeds! Do you love them or hate them? Do you have a favorite type or you like all of them? I have to say I like chia seeds because they are one of the superfoods and because of their neutral taste you can add them literally anywhere. For example, you can add them to smoothies like this persimmon banana smoothie or spreads like this avocado spread.
Guys, remember that when eating fiber-rich foods we have to increase our water intake. I have a solution here for you as well: this lemon ginger water is perfect for keeping your body hydrated!

By the way, if you have the 5 minutes to make this but don’t have the extra time to eat it at home, why don’t you just throw the ingredients in a mason jar, grab a lid and a spoon and eat it whenever you’ll find the time!
If you decide to eat it on the go, I have some tips for you:
Don’t be tempted to mix everything together before you are ready to eat it! Add the ground flaxseeds as well as chia seeds at the very end.  Start with yogurt, then the fruits, mixed seeds, sweetener (if using) and now I would finish it off with chia and flaxseeds. The reason is that the chia and flaxseeds will suck the liquid out of the yogurt if you don’t eat it right away. The result would not be very appetizing then – you could end up with a cement-like mixture instead of a delicious healthy breakfast bowl.

Super Healthy Breakfast Bowl

Ingredients

  • 7oz/200ml Natural Yogurt
  • 1 Ripe Banana
  • 1 Kiwi
  • 1 Tablespoon Chia Seeds
  • 1 Tablespoon Ground Flaxseeds
  • 1 Tablespoon Mixed Seeds
  • Agave Syrup or Honey to Taste (optional)

Instructions

  1. In a bowl, arrange all the ingredients to your liking and drizzle with agave syrup or honey.
  2. Serve right away!

Notes

Don’t forget to increase your water intake after eating meals rich in fiber!

The weather was AMAZING this weekend. It definitely made me hope that spring was here to say. We have had great winter in Minnesota with way less subzero temperatures and snowstorms than usually and an early spring would make it the perfect winter.

When spring is in the air it’s funny to watch people in Minnesota. We all go slightly crazy and wear short sleeves, shorts, grill and over all act like it’s about 75 degrees out and sunny in the middle of the summer. Others would call us nuts, I just like to think we are hearty!

Crack Dip ~ Super Simple Chip Dip Loaded with Cheese, Bacon, Ranch and Sour Cream!

We celebrated they amazingly warm weather with a grill out at brother and sister-in-laws. I whipped up this simple and delicious dip for the get together. If you are looking for an accompaniment for your nice grill out this is perfect!

Crack Dip ~ Super Simple Chip Dip Loaded with Cheese, Bacon, Ranch and Sour Cream!

Prep Time: 10 minutes

Total Time: 10 minutes

Crack Dip

Ingredients

  • 16 oz sour cream
  • 1 (2 oz) packet ranch dressing mix
  • 3 oz bacon bits (in the packet not the plastic jar)
  • 1 c. shredded cheddar cheese

Instructions

  1. 1. Mix together. It’s best if you refrigerate it for a day before eating!

Do some things in life bring you right back to your childhood? Ramen Noodles does it for me. For some reason it was the BIGGEST treat ever when we got to have them. I know, I know, my Mom was silently rejoicing that we thought this right? Cheap, easy and every Mom’s dream I’m thinking!

Now in my “old age” I still love to make them and dress them up in a main dish for my family. Apparently you must think the same thing because this Pork & Ramen Stir-Fry has been hot ever since I post it a few years ago. I aim to please so today I decided that you need another dish like this!

I love that this dinner recipe has the veggies right in the main dish so I only have to make one dish and I’m D-O-N-E! Life is good! Unfortunately, my husband does not agree with me. I swear he’s like a adult male in a twelve year old’s body. He hates veggies. I have about three of them I can make and he’ll eat. Other than that he wrinkles his nose and picks them out.

I’m the opposite. I’m grabbing all the veggies he picks out and adding them to my plate. Miss K is the same way with veggies as me. She literally went to the grocery store and picked out fresh green beans to steam for her bedtime snack?

I about fell over. I was like, who’s kid is this? I quickly agreed and whipped them up that night for her. She kept telling me about how healthy and yummy they were and that they would make her grow big and strong. I kept nodding like an idiot and smiling. I hope this love of green beans lasts!

To make this Chicken Ramen Stir-Fry a little bit lighter I used Truvía® Brown Sugar Blend. It’s one of my favorite secret ingredients because it helps me reduce the calories in delicious recipes and not sacrifice the flavor. Truvia® sweetener is natural, great-tasting sweetness that was born from the leaves of the stevia plant. This Chicken Ramen Stir-Fry is becoming one of our favorite meals and I think it will become a favorite in your house too!

Chicken Ramen Stir-Fry

Prep Time: 20 minutes

Cook Time: 25 minutes

Total Time: 45 minutes

Yield: 4 servings

Chicken Ramen Stir-Fry

Ingredients

  • 2 (3 oz) packages Ramen Noodles
  • 3 Tbsp vegetable oil
  • 2 skinless boneless chicken breasts, sliced into bite sized strips
  • 1 c. broccoli florets
  • 1 (14 oz) package coleslaw mix
  • 2 cloves garlic, minced
  • 1 Tbsp peeled and shredded fresh ginger
  • 1/3 c. chicken broth
  • 1/3 c. reduced sodium soy sauce
  • 1 tsp cornstarch
  • 1 Tbsp sesame oil
  • 1 tsp Truvía® Brown Sugar Blend
  • 1 Tbsp sesame seeds, optional

Instructions

  1. Bring medium size pan of water to boil. Add Ramen noodles and cook them according to package directions. Drain and stir in 1 Tbsp of vegetable oil. Set aside.
  2. In a large skillet heat 2 Tbsp vegetable oil over high heat. Add chicken and cook until chicken is cooked through and no longer pink, about 5-7 minutes. Remove from skillet and set aside.
  3. Add broccoli, coleslaw mix, and garlic and saute for 3-5 minutes. Add ginger and fry for another two minutes.
  4. Meanwhile in a mixing bowl combine chicken broth, soy sauce, cornstarch, sesame oil, and Truvía® Brown Sugar Blend and mix until blended.
  5. Add chicken, Ramen noodles, broth mixture into skillet and cook until heated through.
  6. Garnish with sesame seeds if desired.

Sun-dried Tomato and Artichoke Pita Pizza. Whip up this personal pizza and have a hot, delicious lunch ready in no time at all!

Do you ever make fancy food? Food that calls for things like roasted red peppers or gruyère cheese? Although I like to experiment with new recipes, I don’t often make meals with uncommon ingredients for three reasons:

  1. I have to go to the store and buy them.
  2. Once I get to the store and see how expensive they are, I have to overcome my strong inclination to throw in the towel, forget the whole thing, and just make taco salad instead.
  3. If I do actually purchase the “exotic” foods, I have to figure out something to do with the leftovers so I don’t feel REALLY bad for spending so much money.

I found myself in this situation recently when I had the majority of a $5 tiny jar of sun-dried tomatoes left over, along with a slightly larger jar of artichoke hearts. Since my family (of picky, unadventurous eaters) would not touch either of these items with a ten-foot pole, I was quite desperate to find a use for them. I had to make something only I would enjoy. But it couldn’t be a large batch of pasta, because then I’d be eating for a week. It couldn’t be a large pizza for the same reason.

Then I thought of my all-time favorite lunch–pita pizza. You just get a pita, spread sauce on it (spaghetti sauce, Alfredo, pesto or even just cream cheese) and top it with whatever your heart desires. In my case, it was the perfect solution for my leftover sun-dried tomatoes and artichoke hearts. Click on the following links for fantastic homemade perfect pasta sauce and pesto.

I try to be a little healthy sometimes, so I get the whole wheat pitas from my local Sprouts. Of course, you can use any kind of pita you like.

Don’t open the pita. Just use it like a mini pizza crust. Then spread about 1-2 Tbsp. of your favorite sauce on top. For this pizza, I used pesto, because it’s what I had on hand. And I also thought it would make the whole thing more sophisticated. Pesto elevates everything.

Then you just cut up the sun-dried tomatoes (as many as you like) and sprinkle them over the sauce. Chop up some artichoke hearts and drop them on top as well. To finish the whole thing off, add a generous amount of shredded mozzarella cheese.

Now it’s time to bake. If you have a toaster oven, you are golden. It heats up so quickly and does a perfect job of cooking the pizza. If you don’t have a toaster oven, don’t despair! You can still use a regular oven. It will just take longer to heat up. But, if you have some friends over who aren’t afraid of fancy food, then a regular oven is perfect because you can cook a bunch of pizzas all at once!

You know, this is such a great idea for a party. You could have a pizza bar with lots of toppings, and everyone can make their own pizza! I know this is not a new idea, but using pita bread for the crust makes everything so easy. I bet teenagers would even like to do this! Or, it could be a fun way to get your kids involved in making dinner. They would be happy to choose their own toppings, even if it’s just cheese.

Once you pop these mini pizzas in the oven at 400 degrees, you just have to wait about 10 minutes, or until the cheese is nice and bubbly. Then you’ve got a perfect lunch, appetizer, or dinner, and everyone is happy!

Sun-dried Tomato and Artichoke Pita Pizza

Ingredients

  • 1 pita bread, any size
  • 1-2 Tbsp. pasta sauce, Alfredo sauce, pesto, or cream cheese
  • 1-2 Tbsp. chopped sun-dried tomatoes
  • 1 artichoke heart, chopped
  • 1/4 cup shredded mozzarella cheese

Instructions

  1. Preheat your oven or toaster oven to 400 degrees.
  2. Spread the sauce of your choice on top of the pita bread.
  3. Sprinkle with the sun-dried tomatoes and artichoke.
  4. Top with mozzarella cheese.
  5. Bake on a cookie sheet or directly on the rack for 8-10 minutes, until cheese is bubbly.

There is nothing better on a cold, blustery MN day then coming home to a warm bowl of soup in my mind. We may have lucked out so far this winter and had very few of these days, but I assure you they will make their appearance like they do every year. Miss K is so excited about snow this year. She keeps asking if she can build a snowman, if it’s time to go skating with her cousins or if she can wear her boots. I wish I shared at least some of that enthusiasm.

I don’t. Not a single bit. The only enthusiasm I share with her is that I’ll be warming up in front of the fire place with a big bowl of this delicious Chili Mac! Comfort food is where it’s in the winter. And hot cider, fires and comfy clothes.

The hubby and I both loved this Chili. I liked the addition of pasta to it because you can never have to much pasta in my life! It’s thick and yummy. If you like a little more bite to your chili feel free to add more chili powder. Also it’s a very think, hearty chili with the addition of the pasta. If you prefer it a little thinner then add a little more tomato juice to the mixture!

Crock Pot Hearty Chili Mac

Cook Time: 6 hours

Total Time: 6 hours, 15 minutes

Yield: 8 servings

Crock Pot Hearty Chili Mac

Ingredients

  • 2 lbs ground beef
  • 1 medium onion, chopped
  • 1 can (46 oz) tomato juice
  • 1 can (28 oz) diced tomatoes, undrained
  • 3 celery ribs, chopped
  • 3 Tbsp brown sugar
  • 2 Tbsp chili powder
  • 1 tsp salt
  • 1 tsp prepared mustard
  • 1/4 tsp pepper
  • 1 can (16 oz) kidney beans, rinsed and drained
  • 1 c. uncooked elbow macaroni

Instructions

  1. Cook beef and onion over medium heat until meat is no longer pink; drain. Place in slow cooker. Stir in the tomato juice, tomatoes, celery, brown sugar, chili powder, salt, mustard, pepper and kidney beans. Cook on low 6-8 hours.
  2. One hour before the dish is done add pasta and let cook for the last hour.
