These Lemon Blueberry Cheesecake Crescent Rolls are filled with creamy, sweet and tangy lemon filling and bursting with fresh blueberries!

Ok, I am just going to come out and admit it…..I ate 5 of these lemon blueberry cheesecake crescent rolls in one sitting!!!  I know, I know!  My excuse is that little baby in my tummy has to survive, right?!?!  I kinda wanted to just hide the rest from the family and keep them for myself, but I decided to share.  I’m so nice.  Ok, ok, I may have held a few more back for myse

These are probably one of the most addictive rolls I have ever eaten, no lie!!  They are perfectly sweet, a little tart and the burst of blueberries puts them over the top.  Also, not to mention this is all gift wrapped in nice flaky crescent dough then drizzled with a sweet glaze.  I ask you what’s not to love!

I went the easy route and used store bought crescent dough.  Hey, a girl needs a little help from the store from time to time and flaky crescent dough is one of them!  For the filling, I used cream cheese, homemade lemon curd and fresh blueberries.  You could also use store bought lemon curd but I highly recommend using homemade!  It really isn’t that hard to make and it tastes amazing!

I could eat that stuff by the spoonfuls!!  Just giving you the real me here folks.  🙂

When filling these I used a good heaping couple of tablespoons and make sure to get some blueberries in each one.  I also didn’t obsess over trying to make these perfectly neat when I rolled them up.  I kinda like the blueberries peeking out, gives them character in my opinion.  After these come out of the oven let them cool completely before drizzling them with the glaze.  I left an option to make the glaze with milk or lemon juice.  If you want an extra lemony punch, go with the lemon juice.

I think these lemon blueberry cheesecake crescent rolls would make a great addition to any brunch table.  They would also make a great dessert, snack, or if you are like me and eat 5 at one time, meal, whoops!

They will lift your spirits and give you wonderful springtime thoughts with their bright lemony punch.  They would also be a wonderful addition to your Easter table and since they are so easy to make there is no excuse not to include them!

We have had a rough week over here! It all started on Tuesday morning at about 5 am…. it was bad. Bad. Bad.

Ry had been up off and on most of the night crying and she kept waking up, which is completely unlike her. Yes, I get that some kids do this and I wouldn’t be concerned if she did this every once in a while, but she doesn’t. So finally, at 5 am I got her out of bed to try and calm her down again. I had been up since 4 am with Koert. I brought her into my room and she start throwing up.

EEEEEEEE. There’s not much I hate more than that. Nothing.

So, this continued and at 6 am, and I’m wondering what on earth I’m going to do because the hubs is at work because he’s on morning shift which starts at 3 am. I really wanted to run away and cry, but that wasn’t an option so a distressed call to my Mom went in and a text to my husband to GET HOME ASAP. He was the only one at work so he had to wait until his boss arrived.

Luckily, as I broke down in tears on the phone with Mom, she said I’ll be there as soon as I can. Less than thirty minutes later she was at my house, getting Miss K dressed, getting Koert fed, and bringing Miss K off to school.

It could have been ugly, but I was blessed to have my Mom there. It truly takes a village to raise children I’ve found out more and more!

I assure you, the hubs was home at 8 am so no hating on him!

Oh, did I mention Koert started to NOT SLEEP AT NIGHT??

Therefore we started a light Babywise sleep schedule and it’s paid off!! Oh, and I might have put him in the swing at night.

A girl needs her sleep.

No judging.

And, on Wednesday, I brought Ry to the doctor because she still had a fever and she looked terrible. She kept telling us her teeth and mouth hurt and I knew strep was going around. They did a quick strep test on her and it was negative. They asked if I wanted the 24 hour culture done and I requested to do that. SO THANKFUL! Apparently she did have strep! I knew something wasn’t right. Mom’s trust your gut instinct!

Simple Chicken and Vegetable Sheet Pan Dinner This wholesome chicken and vegetable sheet pan dinner with crispy-skinned chicken thighs, tender potatoes and asparagus is perfect for a Sunday supper, but easy enough for a busy weeknight dinner. Less than 15 minutes prep time and just 3o minutes in the oven and dinner is served!

 

Lately, I am caught in a seasonal in-between time. It’s that time between winter and spring when I feel a pull towards lighter, healthier, warm-weather dishes yet I’m not quite ready to let go of winter. Early spring vegetables are within reach, but I still crave a little cozy so that’s how this chicken and vegetable sheet pan dinner came to be. It has tender spring asparagus along with hearty potatoes and chicken making it a winter-spring hybrid dinner that celebrates the best of both seasons in one easy-to-make dish.

It’s sort of like wearing sandals with a warm, wooly sweater.

Simple Chicken and Vegetable Sheet Pan Dinner

It’s one of those almost ridiculously easy recipes that hardly needs a recipe because, when it comes down to it, all you need to do is toss some veggies and chicken on a sheet pan and call it a day. I’ve dressed this one up with a super easy lemony-olive oil with Italian seasoning because I wanted a little something extra to brighten the veggies without covering up their natural flavors coaxed out by the roasting.

And not only is it a winter/spring mash-up but it’s all sort of like a Sunday roast chicken dinner – it has all the components, crispy-skinned chicken thighs and tender veggies – except, because it’s so easy, you can make on a weeknight. It requires less than 15 minutes of prep time to get the potatoes and asparagus ready and the chicken gets just a sprinkling of salt and pepper. The only trick to this dish is in the timing – knowing how long everything needs to roast ensures that it all cooks to the right amount of doneness. In this case, the chicken and potatoes go in first and the asparagus are added in the last 15 minutes.

Quick and easy, comforting yet light, and minimal clean-up. This sheet pan dinner has a lot going for it.

It really is like spring-meets-winter on a pan. Nothing makes a kitchen cozier than roasted chicken, but what emerges is light and on the healthy side of things. Plus, it really is an easy clean-up situation making this a great weeknight dinner idea.

So, it you’re caught in-between your favorite winter sweater and springtime sandals I hope you give this one a try. It really is the best of both seasons and a delicious way to enjoy this in-between time.

You are going to think I’m a slightly odd duck when I tell you this, but breakfast…breakfast gets me excited you guys! Hello Spring! I think we’ve arrived and winter its on it’s way out the door. I’m so excited! There’s nothing I welcome more in life than the sight of green grass, the smell of freshly plowed ground on the farm and the chirping of birds. Winter gets so long here in Minnesota and when you know that spring is around the corner you pretty much want to do a happy dance. Anyone hear me?

What do you do for your Easter Meal? We usually do a dinner, but I’m thinking we should definitely reconsider that and move it to a brunch. We are done with church rather early on that day and I’m all about breakfast foods. They get my heart just a fluttering! Too bad I don’t like getting up early to make them!

Cheesy Bacon Egg Breakfast Sliders ~ Delicious Slider Sandwiches Stuffed with Bacon, Scrambled Eggs and Cheese! The Perfect Easy Breakfast or Brunch Recipe!

Another thing I adore is Sliders. Have you tried them yet? First of all, they are cute and fun to eat. Plus, they are little so you can eat more, right? At least that’s what I think so don’t tell me any different! There are so many combinations possible and I just might make it my mission to try them all.

These are officially my first “Breakfast Sliders” and they were a total hit. I won’t tell you how many I ate because that would be shameful. Plus, remember that they are little so I can eat more of them? That’s how I rationalized the number I consumed when I made these.

These Sliders are super quick and easy which is perfect for a brunch especially Easter because you are hustling out of church to make your meal! You could even prep these ahead of time and stick them in the oven when you get home. Easy, peasy which is how I roll! Just make sure to add 5-10 minutes to the bake time because you are starting with a cold sandwich if you do this.

To make the sliders you just cut the buns in half, layer on the scrambled eggs, bacon and cheese then put the tops of the buns back on. Brush the butter mixture on the top because butter equals my love language! Bake them up and serve them to your happy guests!

Well, Hello sleep deprivation. It’s so nice to meet you. I’d rather you not appear, but it seems that you have made your presence known this last week!

You guys, this kid. I might die from lack of sleep and I’m pretty sure the hubs isn’t far behind me! I remember being tired with the other ones, but somehow I think you block it out for the most part or this time it’s really bad. Or, maybe it’s just that I’m getting OLD and I can’t deal anymore? Maybe that’s it!

He’s four weeks. I keep praying, hoping, begging with God that he turns that corner and starts to get into a rhythm at night. Like up once. Just once. Oh wouldn’t that be blissful? The other two were good sleepers and slept through the night around three months. I thought that was great. I just want that again!!

We swaddle, we cluster feed at night, we use a noise machine, we try to get on a schedule etc. Any other tips? Please, help me if you have them!

It’s that time of year when there are Easter eggs all over the place and we are all left wondering what on earth we are going to do with them! I actually don’t even like hard boiled eggs. Can you believe it?

Sure, I’ll eat the egg white but the yolk of a hard boiled egg just doesn’t do it for me. In my opinion, it has no flavor and it kind of wants to make me gag. How’s that for a true confession? Now you all want to go out and eat them I bet! Whoops!

Even thought I don’t like to consume them like that I love them on a salad. Weird again, huh? I’m a bit picky like that!

My kids also love to decorate them at Easter time! My aunt actually hosts a decorating day for us on Good Friday and all the cousins and their children get together and decorate eggs then eat pizza. It’s one of my favorite traditions!

But then I’m sent home with all these dang hard boiled eggs. What to do with them?

Good thing I love a Egg Salad Sandwich! In fact every once in a while I get a craving and it’s a mean craving. There’s no stopping it!

These Deviled Egg Salad Sandwiches are the best of everything. It combines my favorite Deviled Eggs in a sandwich form so I don’t feel so bad eating six eggs at lunch time!

My husband is also a Deviled Egg addict so this recipe disappears quickly around our house!

When you are stuck staring at all the eggs in your fridge around Easter this is the answer!

Where has time gone?

I sorta slipped on this one and never shared it with you! At the end of last August we took a quick getaway with the family and I had great intentions of posting right away about it and then life happened. You know how that goes! I figured I should get it up for you because I bet you are all starting to dream about summer vacations again. I know I am!

Our quick family vacation was to Watertown, South Dakota and then onto Aberdeen, South Dakota! We took it when the hubs was in between jobs and I had a few extra vacation days. It was totally last minute but sometimes the best things are like that!

Our first stop on our trip was Watertown, South Dakota!

While we were here we visited the Bramble Park Zoo! I’m surprised they didn’t keep our two monkeys! We had so much fun while at the zoo! It was the perfect size for the girls. It took about three hours to get around the entire zoo and they had a fun Kid Zoo right inside the big zoo. RyRy really loved the little tractors they had inside the Kid Zoo along with the cow that you could milk. Don’t worry it was a fake cow! It actually had water that came out just like you were milking it. She could have sat there all day I’m pretty sure!

Miss K adored feeding all the little goats and calves. RyRy wasn’t to sure what to think of this part of the Kid Zoo, but Miss K on the other hand would have spent all our money buying them food! I have to say, I’m a sucker for those little goats at any zoo. Do you think the hubs would mind if I added one to our household?

I really loved the fact that the zoo was so clean and quiet. It wasn’t overwhelming for small children and it was laid out great!

After our stop at the zoo we headed on our way to Aberdeen, South Dakota for a few days! While in Aberdeen we stayed at the Holiday Inn Express & Suites. I love this chain of hotels because a lot of times they have water slides in their pool area and my kids love these! I think the hubs secretly does too. I just like the hot tub!

We booked a suite while staying at the hotel. I love doing this and splurging a little because I find that the trip is much more enjoyable for all of us. We are still dealing with kids that need naps while we are traveling and having a separate bedroom area makes this so much easier. We were actually lucky enough to have two different bedrooms along with a kitchen/living area in this suite. I’m so glad we paid a little extra for it!

The girls thought that they were pretty cool sleeping in their bunk beds! I loved having the kitchenette area too because we ate in the room some because the girls wanted to stay at the hotel so they could sneak in more swim time!

I mean look at that pool area! Who wouldn’t want to spend more time there? We were lucky enough that it was quiet and the girls had the pool area to themselves for the most part. So much nicer than having to battle for pool space. I will add a disclaimer that we were there through the week so I’m not sure how this would be on a weekend!

Miss K loved the big water slide and RyRy had a little one she could use so she was more than happy with that! I think we have some little fish and we spent hours and hours in the pool with them! They are begging to go to another hotel so they can swim again!

The highlight in Aberdeen was Storybook Land! This is the place that memories are made and dreams come true! Unfortunately we caught this at the end of the season and apparently South Dakota starts school before Minnesota so they close up earlier than what I’m used to. This was a last minute trip so we didn’t get to partake in all of the fun that it has to offer but it was still fun!

The girls loved all the slides and of course the petting zoo! They also have a bunch of fun rides perfect for the little ones!

While in Aberdeen we dined at Pizza Ranch, Dairy Queen, and Ruby Tuesday! You know when you are with kids they dictate what and where you eat!

Other great things to do in Aberdeen include the Aberdeen Aquatic Center, Aberdeen Aqua Addicts Water Ski Team, and Wylie Park.
