We have almost survived two weeks without the hubs, well he was home on the weekend. He comes home tomorrow and I’m SO ready. I suck at single parenting. I mean, I’m sure you adjust and all, but let’s get real I don’t want to figure it out! I like having him here, I want him here, and I’m spoiled rotten because he’s so hands on. End of story.

I remember when I was young and ambitious and I thought I was going to set this world on fire. I had grand plans. I was going to run hotels in NYC and rule at it. I started off on the right path, showing a lot of potential. Then, the hubs came into my life, the kids entered and I lost the desire to do all of that stuff! I’m good in small town America working a job that I enjoy but I’m not a big wig because things that fulfill me are now my family and friends.

I’m good with it. I’m at peace with it. Yet, I sometimes look back and think what if?

But, that’s what we all do right?

Tell me so!

So I’m going back to my family life, planning meal plans and washing clothes and ignoring the fact I should clean.

Glad we got that straight.

Today’s the day! I’m sharing my favorite recipe with you all. Are you excited? You should be! Do you go through stages where you have a favorite recipe, then you get tired of eating it because that’s all you’ve made for the last month?

That’s totally me, but I’ve yet to grow tired of this particular recipe. I created it one weekend when my girlfriend, Jessica was coming over. We love Mexican food, especially enchiladas. Since I’ve become OBSESSED (sorry to yell at you, but it’s true) with any and all types of seafood, I knew her and I would love this recipe.

Shrimp Enchiladas ~ Filled with tender, flavorful shrimp then topped with a delicious homemade creamy sauce. These enchiladas are a winner and will gone in no time!

What I didn’t realize was how much we’d love it. She loved it so much, she emailed me the following week asking me for the recipe. I told her I just scribbled scratched down the ingredients and directions, but I hadn’t gotten around to actually making it for the blog. She then tells me that I need to make it again, photograph it and put it on the blog ASAP. That’s what I’m doing today.

You guys I cannot tell you how good these shrimp enchiladas are. I think the homemade sauce put this recipe over the top. The shrimps are lightly seasoned, then cooked until almost cooked through. Then you assemble everything and bake it for roughly 20 minutes. So good!!

The ingredient list looks a little long, I know. But I promise every ingredient there is a must. I actually was putting some shredded cheese into the sauce mixture a while back, but Jessica told me that was an extra step that didn’t need to be there, so we took it out. Also I have to strongly advise you to use raw shrimp. The reason being is you don’t want your shrimp to have to much moisture. And for some reason the pre-cooked shrimp has a ton of extra moisture and it will make the enchiladas soggy. Who wants soggy enchiladas. Not me. So make sure to get the raw, deveined shrimp ok.

These enchiladas are great for company or a special occasion. Or you can be like me and just love them, so you make them at least once a week. I know, I know my poor family, but they are to good to not to make.

Shrimp Enchiladas

Prep Time: 20 minutes

Cook Time: 40 minutes

Total Time: 1 hour

Yield: 4 servings

Serving Size: 2 enchiladas

Shrimp Enchiladas

Ingredients

    Shrimp mixture:
  • 2-3 tablespoon butter
  • ½ cup red and green bell pepper, finely chopped
  • ½ cup onion finely diced
  • 2 cloves garlic, minced
  • 1-pound shrimp, peeled and deveined, chopped into pieces
  • ¼ cup cilantro, chopped
  • ½ tsp salt
  • ½ tsp cumin
  • 1 tsp chili powder
  • 8 (9 inch) flour or corn tortillas
  • Cream Sauce:
  • 2 tablespoon butter
  • 2 tablespoon flour
  • 1 1/2 cup chicken broth
  • ¾ - 1 cup sour cream
  • ½ tsp garlic powder
  • ½ cup diced canned chilies
  • salt and pepper to taste
  • ¼ cup green enchilada sauce or salsa Verde sauce
  • 2 cups Monterey Jack cheese
  • garnish: sour cream, cilantro, jalapenos, and limes

Instructions

  1. Preheat oven to 350° F. Spray a 9x13 baking dish with non-stick cooking spray; set aside.
  2. Shrimp mixture: Using a large skillet melt butter. Sauté the bell peppers and onions until lightly softened, about 3-5 minutes. Add the garlic and cook additional 30 seconds.
  3. Add shrimp and cook 2-3 minutes, or until shrimp starts to turn pink. (You don’t want to overcook the shrimp. Remember it will cook more in the oven). Remove from heat and add in cilantro, salt, cumin and chili powder. Stir and set aside.
  4. Cream Sauce: In a large skillet melt butter over medium high heat. Add flour and cook 1-2 minutes. Slowly whisk in the chicken broth (1/2 cup at a time). Continue to cook, stirring constantly, about 3-5 minutes until thickened.
  5. Lower heat, stir in the sour cream, garlic powder, chilies, and enchilada sauce. Add salt and pepper to taste. Add 1 cup of sauce to shrimp mixture, stir to combine.
  6. Assemble enchiladas: Add 1/3 cup shrimp mixture to a flour tortilla, roll tightly and place seam side down in the baking dish. Repeat with remaining tortillas.
  7. Pour the remaining sauce over the rolled tortillas. Sprinkle the cheese over enchiladas.
  8. Bake 20 -30 minutes.
  9. Serve immediately, garnish and enjoy!!

Pre-school and Sunday School seem to be Miss K’s new favorites things in life. She keeps telling me that she wants to go to school EVERYDAY Mom. She’s totally over daycare. I wish this would keep up all of her days! I know it will come to an end and I’ll be pulling her out of the house to get her to school. Don’t get me wrong, the phrase, “You’re going to miss your buss Miss K!!!!” comes out of my mouth more times than I’d like to admit. That girl is on her own time.

Getting Miss K to even go to Sunday School took some talking. She didn’t really know the other kids and it was out of her comfort zone. Once we got her there it became her new favorite thing! Her teacher looked at me yesterday and said, “I don’t know why you think she’s shy!” I can only imagine what she’s been saying!

After church when Miss K runs off to Sunday School we are left to wrestling and contain RyRy until she is done with Sunday School. During this time I had a conversation with another Mom at church who has young children. She asked me if I was totally spent after church like she was. I started laughing and quickly said that yes, most of the time I am! I said it’s really just about going into survival mode sometimes. You just try to make it through!

That brings to me to life in general with young kids. If I had a dollar every time someone told me not to wish these days away I’d be a rich woman who was able to retire young. Yet, I catch myself doing just that. Some days, some nights are just to much. You simply go into survival mode and focus on getting through it, after you get the kids to bed you start to wish those times away. I try not to do it because the good outweighs the bad by far. Like RyRy giggling so hard she snorts which is her new move. Or her newest phrase, “Thank you, Welcome!” every time someone helps her out. It’s precious.

I’m often in survival mode during dinner. Having a game plan for the week is the best thing ever. Honestly. If I know I at least have five options to pick from throughout the week it gives me focus and helps me not dread making dinner after work. I hate not having a plan!

I love this meal because it’s something a little different than pasta and yet it’s one pan so it comes together quickly. Technically you have to boil the potatoes before you put them on the pan so I probably shouldn’t have lead you astray by calling this “One Pan”. I apologize. Forgive me? Don’t write it off because of that though! It’s delicious!

One Pan Sausage & Veggies

Prep Time: 15 minutes

Cook Time: 30 minutes

Total Time: 45 minutes

Yield: 4 servings

One Pan Sausage & Veggies

Ingredients

  • 1 lb baby Yukon gold potatoes, cleaned
  • 5 cloves minced garlic
  • 2 Tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2/3 c. shredded Parmesan cheese
  • 1/2 lb asparagus
  • 1 (14 oz) package Grill Mates® Montreal Steak® Smoked Sausage

Instructions

  1. Preheat oven to 450 degrees
  2. Boil potatoes for 15 minutes. Drain. Transfer to sheet pan prepared with non-stick spray lined with baking mat. Smash with fork.
  3. In a mixing boil combine garlic, olive oil, salt, pepper, and Parmesan. Sprinkle 2/3 of mixture on top of smashed potatoes.
  4. Mix asparagus into remaining cheese mixture.
  5. Lay sausage on baking sheet. Arrange asparagus on baking sheet.
  6. Bake 15 minutes at 450 degrees.

Mmmm apples! Yay for fall and “appling all the things”! Soon will be pumpkin and I plan on “pumpkining all the things”! When I was growing up we had apple trees and apparently I brought apples to my teachers according to my Dad? I don’t recall this, but I guess I was quite the suck up it seems!

What fall activities do you love? We went to an apple orchard a few weekends ago and had a blast. They had a tons of kids activities and a bakery. Of course, you knew were to find Mom! I love baking with apples but I also love eating fresh, crisp apples straight off the tree. My coworker brought me a few the other week and they were delicious. I also made sure to pick up a bunch at the orchard. I tried a new variety, SweeTango, and they were AMAZING. Like give me them all. I may have hid them from my family because they were that awesome. Perfectly sweet, crisp and tart!

Speaking of fall activities, we picked our pumpkins today from the garden. I imagined this cute, fun, family activities where the girls were excited to pick them and we had a blast. Well, all the happened BUT we had an intruder on our fun. A snake. Seriously. If any of you know me, you also know this is my biggest fear, well one of them. Yes, I live in Minnesota and they are harmless, except to my blood pressure, but they are so creepy!

All of a sudden the hubs calmly says, “Oh there’s a snake.”

Uhhhh no. No. No. There is nothing calm about this situation! I went flying up to the house, well as fast as this pregnant lady can fly! The girls stand there calmly and watch my hubs take care of the critter. Apparently Mom is the only scared one in this family!

Then later the hubs makes the statement to my brother, “Oh, ya I saw three of them today.” WHAAAAAAAAAAAAAAAAAAAAAAT?????????? He was not going to share this with me. He knew better. If you need my I’ll be in my house the rest of fall.

Easy Apple Pie Bars ~ Quick and Easy Bars Stuffed with Apple Pie Filling in between a Soft and Delicious Cinnamon Crust then Drizzled with Cinnamon Icing! Perfect Fall Treat!

While in the house I’ll just bake treats like these fabulous Easy Apple Pie Bars! They are so delicious and easy! They start with a cinnamon spiced crust, apple filling and are topped with an cinnamon glaze.

You can keep these out on the counter but I find they keep better in the fridge due to the glaze!

Easy Apple Pie Bars

Prep Time: 20 minutes

Cook Time: 1 hour

Total Time: 1 hour, 20 minutes

Yield: 20 Bars

Serving Size: 1 Bar

Easy Apple Pie Bars

Ingredients

  • 1 c. butter, softened
  • 2 c. sugar
  • 4 eggs
  • 1 tsp vanilla extract
  • 1 Tbsp cinnamon
  • 3 c. flour
  • 1 tsp salt
  • 2 cans (21 ounce) apple pie filling
  • Glaze
  • 1 tsp cinnamon
  • 1 c. powdered sugar
  • 1/2 tsp vanilla extract
  • 1/2 tsp almond extract
  • 2 Tbsp milk

Instructions

  1. Cream butter and sugar together. Add eggs, beating after each addition. Mix in vanilla extract. Add cinnamon, flour and salt. Mix until well combined.
  2. Spread 3 cups of the batter in a greased jelly roll pan. Spread pie filling on top of dough. Drop remaining dough by tablespoonfuls on top of cherry pie topping.
  3. Baked at 350 degrees for 50-60 minutes or until toothpick comes out clean. Cool.
  4. Combine glaze ingredients and drizzle over bars. If serving the next day wait and do this before serving or the bars will be a bit soggy! I store in the refrigerated to keep them firm but you wouldn't need too.

Why Hello There! I’ve missed you! The summer got a little bit busy, well actually, I won’t lie, I was just a slacker and dropped these posts because I was soaking up the sun and enjoying my family! So much has happened. First of all, I’m half way through this pregnancy! Can I get a heck ya for that! Miss K started school, Miss K broke her write, we had a bat in our house, we went through rabies shots… I’ll let you read all about it below!

Miss K started Pre-K and it was a HUGE day in her world. We have been talking about riding the bus and going to school for what seems like years! I offered to bring her to school and drop her off on her first day. She politely refused and said she was riding the bus with her cousin. I’m already not cool enough for her! She loves school, but ti’s only been a week. I’m wondering if I can bottle this up for when she’s older? I’m highly doubting this will last very long. She also demands on bringing her lunch to school. To cool for school food I guess!

 We officially have our first broken bone in our house! Miss K wiped out while running into her room on a book that was on the floor. You know, that one that I had just told her to pick up. She did this on a Friday night and there were tears and ice. I brushed it off and said, “Suck it up Buttercup.” Honestly, I thought it was just another bump since we seem to have a lot of those! We noticed over the weekend she wouldn’t open doors or hold our hands with that arm. She also kept complaining of it hurting. We had it wrapped up, but I decided it was time to take her in on Monday morning. Low and behold the twerp had broke it! Whoops. From what I hear other Moms have done this same thing with broken bones!

Ry has been to the doctor a lot lately between rabies shots and seeing her sister with the broken arm. Oh yes, that’s right we went through rabies shots. All four of us. I woke up in the middle of the night to the “sounds” of a bat if you know what I mean. I never knew that I knew what a bat sounded like but apparently I do. I hit my husband and told him to get up and take care of it. He came back to the bedroom and declared it was a bird or a bat. Hun, I’m not stupid. It’s a bat.

After removing the bat from the house we thought we were good to go, well we bat proofed our house too. Nope. Wrong. Apparently they recommend you going through rabies shots if there is a bat in your house because you don’t know if it bit you or not. I guess they can bite and you might not know it! So that’s what we did because as my doctor explained we can prevent the rabies but if you get it you can not treat it. Pretty much, you die. Well, I didn’t want to have that chance so rabies shots it was!

Lemon Pepper Salmon & Rice Skillet

Lemon Pepper Salmon & Rice Skillet

Ingredients

  • 2 Tbsp butter
  • 2 c. asparagus, cut into bite sized pieces
  • 1 teaspoon freshly grated lemon zest
  • 1/4 tsp ground black pepper
  • 4 (4.4 oz) cups Minute® Ready to Serve White Rice, prepared to directions on box
  • 4 (2.4 oz) pouches Chicken of the Sea® Lemon Pepper Salmon Pouches

Instructions

  1. In a non-stick skillet melt butter over medium-low heat. Stir in asparagus, lemon zest and pepper. Cook 3-4 minutes. Add rice and salmon. Heat through about 5 minutes.
  2. Serve immediately.

After the kiddos get to bed I just want to fall onto the couch and go to sleep…wait… I want to do that every night! The hubs is at training for his new job and we have one more week of training after that.

I’ve been a terrible “food blogger” feeding my children fish sticks, grilled cheese etc. Sigh. It’s all about survival and hey, that’s sometimes the only thing they will eat! Are you pumpkin obsessed already?

I swear every year that I’m going to wait until October to get into pumpkin and every year by mid August, I’m ordering pumpkin spice lattes and have 57 pumpkin candles hidden in the back of my closet.

It’s a problem. I’ll try harder next year. Maybe.

I have already made these Pumpkin Cranberry Muffins several times this month. I love them, my boys love them, they are definitely going to become a regular in our breakfast rotation this fall and winter.

I just feel like muffins are the best breakfast for a school morning. I mean, you can make them the night before and the kids can grab them themselves as you’re hurrying to get lunches made and maybe get out of your pajamas before you drive them to school.

Plus, pumpkin’s healthy! Cranberries are healthy! And this recipe only calls for 2 tablespoons of oil which is pretty good for a muffin recipe.

They are also really simple to make and they turn out fluffy and delicious. And pumpkin and dried cranberries just go so well together. It’s one of my favorite combinations this time of year. I feel like most pumpkin muffins these days come with a sweet cream cheese in the center and the kind of tart cranberries are really a nice change.

Pumpkin Cranberry Muffins ~ Light, Fluffy Muffins Perfect for Snacking or Breakfast! Loaded with Pumpkin Flavor and Tart Dried Cranberries!

The recipe makes 12 muffins which is perfect for one breakfast at my house. Seriously though, how do 3 boys under the age of 10 go through a dozen muffins in one meal? How?!

Anyway, double the recipe if you need to feed a crowd. Or double the recipe and throw some in the freezer for a day when you just don’t feel like cooking. That is exactly what I’m doing next time I make them!

Pumpkin Cranberry Muffins

Prep Time: 15 minutes

Cook Time: 25 minutes

Yield: 12 muffins

Pumpkin Cranberry Muffins

Ingredients

  • 2 tablespoons vegetable oil
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 cup pumpkin puree
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla
  • 1 egg
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1 cup dried cranberries

Instructions

  1. Preheat oven to 375F. Line 12 muffin cups with paper liners.
  2. In the bowl of a stand mixer fitted with a paddle attachment, beat oil, granulated sugar, brown sugar, and pumpkin puree until combined. Beat in buttermilk, vanilla, and egg.
  3. In a separate bowl, whisk together flour, baking soda, baking powder, cinnamon, ginger, and salt. Add this mixture to the wet ingredients and beat until just combined. Use a rubber spatula to fold in the dried cranberries.
  4. Divide the batter between the 12 muffin cups. Bake for about 25 minutes or until a toothpick inserted into the center comes out clean. Cool completely on a wire rack before serving.

click-for-recipe-julie2Despite the warm weather that is scheduled to happen in the coming weeks, I have been immersing myself in all the fall things one could imagine.

Well…kind of.

Technically I haven’t done any fall-ish activities, such as going to a pumpkin patch, or going to pick apples. However, I have been drinking my fair share of pumpkin lattes, packing in as many slices of pumpkin bread and apple desserts as humanly possible, and have been burning fall candles like they’re going out of style.

And, we decorated! There are candles, pumpkins, and leaves all over the place (tastefully, of course 😉), and in my personal opinion, things have never looked better!

 

This homemade pumpkin hot chocolate recipe uses real pumpkin puree and pumpkin pie spices to add a fall spin to a classic drink!I was at a coffee shop the other day, and they had pumpkin hot chocolate on their menu, which sounded extremely intriguing. As much as I adore coffee, there is still something incredibly comforting about a warm cup of hot chocolate piled high with whipped cream.

The combination of pumpkin with the rich chocolate is pretty much liquid gold, especially for pumpkin lovers like me. If fall could taste like an actual drink, I think this would be the one. I know, I know—it seems somewhat blasphemous to even suggest that another drink could reign supreme to the pumpkin latte, but, this was good.

It was very, very good.

This homemade pumpkin hot chocolate recipe uses real pumpkin puree and pumpkin pie spices to add a fall spin to a classic drink!I was on a mission to recreate the flavors of this drink so I could enjoy it from the warmth of my own home. After a few trials, I am very pleased with my final results. This hot chocolate is packed with flavor without being too rich, and the drink is extra decadent with the addition of whipped cream.

Plus, this is extremely easy to put together! Homemade hot chocolate takes just a few minutes to make. Even with the additions of pumpkin and spices, this can be whipped up at a moment’s notice.

Pumpkin Hot Chocolate

Prep Time: 5 minutes

Cook Time: 7 minutes

Yield: 3-4 Medium Glasses

Pumpkin Hot Chocolate

This homemade pumpkin hot chocolate recipe uses real pumpkin puree and pumpkin pie spices to add a fall spin to a classic drink!

Ingredients

  • 2 1/2 cups milk
  • 5 Tbsp pumpkin puree
  • 1 Tbsp maple syrup
  • 1 Tbsp brown sugar
  • 1 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1/8 tsp all spice
  • 1 tsp vanilla extract
  • 4 oz semi-sweet chocolate, chopped

Instructions

  1. In a small saucepan, heat milk over med heat until it begins to simmer (about 2-3 minutes), stirring occasionally.
  2. Turn heat to low, and add in pumpkin puree, maple syrup, brown sugar, cinnamon, nutmeg, all spice, and vanilla extract, whisking gently until all ingredients are combined.
  3. While the stove is still on low, add in chopped chocolate, and whisk until the chocolate is melted.
  4. Divide hot chocolate between 3-4 glasses, and top with whipped cream and cinnamon.
  5. Enjoy!

One pot meals rank right up there with Crock Pot meals in my opinion. I hate dishes. Hate, hate, hate. Therefore, if I can avoid any unnecessary dishes I’m winning! You guys seem to be on the same wavelength and that’s why we are friends! Some of our favorites are One Pot Ham & Penne Skillet and One Pot Garlic Chicken Alfredo. AKA anything cheese and pasta! That’s why I came up with another one of these delicious recipes for you. Insert Cajun Chicken Pasta into this line up and you guys are going to go wild!

Dishes, dishes, dishes. I hate them. They aren’t so bad if the hubs takes care of the children after dinner and I can get them done with out said children hanging on my legs and “helping” me. “Helping” is a term that I will use very loosely in this equation if you get my drift. Picture water, half clean dishes and me trying not to lose my wits on them all while I’m repeating, “Someday I’ll miss these days, someday I’ll miss these days.”

I also have this thing about going to bed without the dishes done. It doesn’t happen. Ok, well maybe once in a blue moon, but I have serious anxiety if I don’t clean up the kitchen before bed!

Next question, does your hubs help with dishes? Mine does about 10% of the time. Obviously, that is not the majority of the time at all. Once again, I’m fine with this if he entertains the children, if he sneaks off to the shed or outside you can probably see fire coming out of my ears. Actually, there’s no probably about it. You CAN see fire coming out of my ears.

Last week we were over at at a friends house and she let it slip that her husband always does the dishes. She’s done them like twice since they got married. Enter me being jealous. This led to a discussion on how we will reload the dishwasher after our husbands load it. Apparently I have control issues and couldn’t let go of the dishes duty anyway!

So, when I make dinner I’m all about making recipes that are easy and use minimal amounts of dishes for prep. This is why I love one pot meals! One pot equals less dishes for me! SCORE!

This Cajun Chicken Pasta is pretty much out of this world. I love that it’s restaurant quality at home. Plus, it’s ready in about 30 minutes! I’m always hesitant to order Cajun Chicken Pasta in a restaurant because of the spice level. I’m a bit of a wuss and hate when my upper lips starts to bead because of the heat factor! When you make this delicious recipe at home you get to control the spice level. Win!

One Pot Cajun Chicken Pasta

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Yield: 6 servings

One Pot Cajun Chicken Pasta

Ingredients

  • 2 Tbsp extra virgin olive oil
  • 1 lb chicken, cut into chunks
  • 1 Tbsp cajun seasoning
  • 1/2 c. yellow onion, diced
  • 4 cloves garlic, minced
  • 4 c. chicken broth
  • 2 1/2 c. heavy cream
  • 1 lb penne pasta
  • 4 oz Crystal Farms Shredded Parmesan Cheese
  • 2 roma tomatos, seeded and diced
  • Fresh parsley and Cajun spice for garnish

Instructions

  1. In a large pot over medium heat season chicken with Cajun seasoning. Add onions. Cook in olive oil until cooked through. Stir in garlic and cook for one minute.
  2. Add chicken broth, heavy cream and pasta. Stir and simmer over low heat for 15 minutes or until pasta is tender.
  3. Stir in Crystal Farms Parmesan Cheese.
  4. Top pasta with tomatoes, parsley and additional Cajun seasoning to taste.
