Pesto Chicken Tortellini Soup ~ Fast and easy soup for busy families using Gold’n Plump Pesto Seasoned Whole Chicken!

Who loves a warm bowl of soup in their hands on a chilly winter day?
I know I do! Ok, so now who loves having that bowl of soup in their hands quickly? I’m raising my hand again, and I know you are too! There’s nothing better then knowing you have a plan for supper when you get home from work, especially when the nights are busy and time is precious. I need a plan, or I seriously get stressed out over supper and I get crabby. No one likes that! So here’s the deal. I have a wonderful soup for you to try out, and it’s going to become a family favorite on those busy weeknights before, during and after the holidays.
Holidays = Crazy. Anyone with me on that one? I get all excited for them and then realize I’m more stressed than anything with all the hustling and bustling from one event to another. I especially love easy recipes around this time of year.

You simply cut a few holes in the bag, stick it in the oven and let it roast. The end result is a wonderfully juicy and plump chicken roasted to perfection. For this Pesto Chicken Tortellini Soup I snagged a Pesto Seasoned Whole Chicken from the grocery store, roasted it the night before I made the soup, and I had supper on the table in twenty minutes.

Best part about it? The entire family loved it. I mean, we are talking even the super picky hubs loved it. That’s right, he loved a pesto chicken. I was doubtful as I was making it because it’s a bit out of his comfort zone, but he complimented me several times how awesome and juicy the chicken was!

Pesto Chicken Tortellini Soup
- 1 Gold'n Plump Pesto Bag in Chicken
- 4 c. water
- 4 c. chicken stock
- 3 cloves garlic, minced
- 2 Tbsp pesto
- 1 (19 oz) bag frozen tortellini
- 1/4 c. Parmesan cheese
- Bake chicken according to the instructions on the bag. Cool and shred. I did this the night before.
- In a large saucepan bring chicken, water, chicken stock and garlic to a boil. Boil for 5 minutes.
- Add tortellini and pesto and boil for 5 minutes.
- Sprinkle Parmesan cheese on top of soup and serve.
