Summer is finally upon us! The kids are out of school, the grass is green and the days are long and hot. Long days full of wonderful memories as we soak up the amazing weather and store it for those long winter months!

How do you #CoastIntoSummer?
For me it’s pretty simple, yet pretty full of things. There’s always the summer breezes off the lake shore that make me sigh and relax a little more. Then there’s the sounds of Miss K giggling as I push her in the swing. That’s followed by, “More Mommy More! Faster Mommy Faster!” One of my favorite things is Bon Fires and of course and epic S’more. I’m so glad that Miss K has shown a love of S’mores this year. I got to have a partner in crime!
Speaking of S’mores. Summer food is just so much fun too. I love getting that grill out for the first time in the spring and having a new cuisine on the menu again instead of comfort meals that the winter is always full of. The summer is always full of fresh fruit and veggies straight out of the garden. It’s always a treat when these come into season!

I created this amazing Popcorn Shrimp Tacos with Corn Salsa and Cilantro Lime Sauce using SeaPak’s Frozen Popcorn Shrimp. I know you are thinking that it sounds so complicated with that long of a title and that many flavors right? Well, actually, you are totally wrong! You know how I love to focus on easy meals for you and your family and this one is no different.
You can make it even faster by prepping the salsa and cilantro lime sauce the night before. When you get home from work the next, literally all you have to do is prepare the shrimp and the dinner table! I’m talking 15 minutes people so you can get outside and enjoy that summer weather with your family! These tacos are piled with crunchy popcorn shrimp, then you have the burst of corn and tomato salsa, topping it off is the creamy, dreamy cilantro sauce.

Popcorn Shrimp Taco with Corn Salsa and Cilantro Lime Sauce
- 1 (18 oz) box SeaPak Popcorn Shrimp
- 8 taco shells, soft
- 1 (15.25) oz can corn
- 1 large tomato, diced
- 1 Tbsp green onion, minced
- 2 Tbsp cilantro. chopped
- 1/2 Tbsp extra virgin olive oil
- 2 Tbsp lime juice
- 1/4 tsp cumin
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/2 tsp ground Ancho Chile Pepper
Cilantro Lime Sauce
- 3/4 c. light sour cream
- 1 Tbsp cilantro, chopped
- 1 Tbsp lime juice
- 1/4 tsp ground black pepper
- 1/2 tsp ground cumin
- 1/2 tsp chili powder
- Prepare SeaPak Popcorn shrimp according to package directions.
- Combine all ingredients for salsa in a small bowl and refrigerate.
- Combine all ingredients for cilantro lime sauce in small bowl and refrigerate.
- Divide shrimp among taco shells. Top each with salsa and cilantro lime sauce.
