Did you know there is a national Root Beer Float Day? Well now you do! Every August 6th we have the perfect excuse to indulge ourselves in Root Beer Floats and blame it all on the fact that we are celebrating a holiday. Sounds pretty perfect to me! I’m a sucker for a good float.
It’s kind of like your birthday. Did you know calories don’t count on your birthday? Yup! Keep that in mind the next time you are celebrating because you’ll want to go all out that day on indulgences and not worry about it.
So I figure on National Root Beer Float Day any calorie I consume that was in the form of something Root Beer Floatish doesn’t count either right? Good. Glad you agree. So if you make an entire pan of these bars, then go on to eat them all today we won’t judge and you won’t gain weight… or something like that.
I’ve had this recipe idea in my head for a while. Just waiting for the perfect day to come along. I actually planned this one out. Impressive aren’t I? My friends make a lot of fun of me because I’m often times way ahead of the seasons and planning my recipes to post way before I need to but that’s how I roll. Currently I’m trying to get ahead for maternity leave which might result in my family eating apple, pumpkin and mint real early in the seasons. They get goodies so they usually don’t complain!
Speaking of my family complaining sometimes I like to play tricks on them or quiz them. For example I made these bars when the hubs was gone so when he came home they were sitting there and he had to obviously test them out. Then I watched his facial expressions, which were all good. Then giggled and asked what he thought they were. At this point I was standing observing. He goes onto guess things like pumpkin, zucchini, etc. I was then about rolling on the floor laughing as he begged me to spill the beans. Finally he said well whatever they are they taste good!
I also shared these with the coworkers and I was amazed when one of the guys got it right on the first try! Kudos to him and his tastebuds!
These bars are soft, chewy and delicious. They actually are better on day 2 if I dare might say. That is if there are any left a day after you make them! Celebrate National Root Beer Float Day with a pan of these Root Beer Float Sugar Cookie Bars!
Root Beer Float Sugar Cookie Bars
- 1 1/2 C. Sugar
- 1 C Butter, softened
- 8 oz cream cheese, softened
- 1 Egg
- 1 tsp root beer extract
- 1 t. vanilla
- 1 t. baking powder
- 1/2 t. baking soda
- 2 1/2 c. Flour
- 1/4 c. butter, softened
- 2 oz. cream cheese, softened
- 2 c. powdered sugar
- 2-3 T Milk
- 1/2 t. root beer extract
- First beat the butter, cream cheese, sugar and egg until nice and frothy. This will take about 4 min.
- Add vanilla and root beer extract. Beat about 1 min.
- Add flour, baking powder, and baking soda. Beat about 2 min. It will be light and fluffy.
- Press dough into greased jelly roll pan (10 1/2-inches x 15 1/2-inches). Bake at 350 degrees for about 20-25 minutes. Cool completely.
- Frosting – Combine butter and cream cheese. Beat about 2 min. Add the powdered sugar, milk, and root beer extract. Mix 1-2 min until smooth.
