Apple Skillet Pancake ~ Easy Pancake Made in Your Skillet and Loaded with Apples!
Why hello there September! It’s so nice to see you again. Well, it’s kind of nice to see you again. I mean I do like the warmth of those summer months and the weekends at the lake and frozen treats, but don’t worry you hold a special spot in my heart too. Those crisp fall days are upon us and it’s definitely been in the air the last week. Cool mornings and crisp nights with that “fall” smell in the air. Do you know what I’m referring too?
Soon the leaves will start turning and the pumpkins will start appearing on doorsteps. Apple recipes are on our minds (think Easy Apple Turnovers, YUM!!!)
This means we will be saying bye to the sweet summer days. I’m totally fine with this. I really am. I love fall, but sometimes the thought of WINTER looming on my doorstep distracts me and I get cranky and bitter about another Minnesota winter, which I’ve heard is supposed to contain another Polar Vortex. Which really just mean it’s going to be colder than you know what. Sigh.
At least I’ll have a sweet baby to snuggle with in front of the fireplace this winter right?
Since it’s officially September I figure it’s time we break out some apples around this place! I’ve been busy redoing a couple of old posts like these amazing Upside Down Caramel Apple Rolls and Apple Pull Apart Bread with new pictures because the old ones were horrific and honestly I doubt any of you wanted to eat either of those, so they needed some love. Speaking of old photos in the this blog. I just want to say wow I’ve come a long ways! Slowly I’m trying to go back and give some love to old posts so the food actually looks edible for you guys because we all know we visually eat on this blog right?
If you are looking for a fall breakfast treat this is perfect! I’ve never had a skillet pancake before and I’ve never used my skillet before so I figured it was time to knock of two birds with one stone! I was in love from the first bite. This yummy skillet pancakes is loaded with apples and cinnamon so it scream fall. It was literally gone within minutes leaving my family with smiles and full tummies!
Apple Skillet Pancake
- 3 Tbsp butter divided
- 2 apples peeled and sliced
- 1/3 c. brown sugar packed
- 1/2 tsp cinnamon
- 1/8 tsp nutmeg
- 1/2 c. chopped walnuts toasted
- 4 eggs beaten
- 1 c. milk
- 1 c. flour
- 1 tsp baking powder
- Preheat oven to 400 degrees.
- In a ovenproof skillet melt 2 Tbsp butter over medium heat. Add apples, brown sugar and spices; cook and stir until apples are soft, about 7 minutes. Add walnuts and cook another 2-3 minutes or until apples are caramelized. Add remaining 1 Tbsp of butter and stir until it is melted. Remove skillet from heat.
- In a large bowl whisk together remaining ingredients until just mixed. Pour batter over apple mixture in skillet.
- Bake for 15-20 minutes or until golden brown and puffy. Cut into wedges and drizzle with syrup.
