You would think since my husband is a little picky that he’d hate artichokes. I’m mean in his mind I envision them as being “weird”. So I never really thought he’d eat them or try them. Then we were out to eat one time at my favorite restaurant and I love their spinach dip. I made him try it. The rest is history. Every single time we go out to eat he’s begging me for spinach and artichoke dip or any type if it’s on the menu. Who would have thought that would ever happen? Not me. I’m all for this because I love, adore and sorta want to marry artichokes especially if they are smothered in some yummy cheese.

So I was making my favorite Ultimate Grilled Cheese the other weekend and I happened to spy a can of artichokes and then a light bulb went off. Why not add those to my cheese mixture and make the most awesomest grilled cheese ever? Yup I did it. Yup they will never be made another way. We were oohhing, and ahhhing and Miss K was asking for seconds. We were pretty much the most happy family ever during lunch that day. Not that we aren’t every day right because we are totally and my house is clean, my kids are perfectly well behaved. Annndddd my two year old doesn’t have a snow hat, winter jacket, dress shoes and no pants on right now because she thinks she needs to go bye-bye. I digress.

If you love they ooeey gooey yumminess of artichoke dip and you love a toasty, crisp grilled cheese then these sandwiches are calling your name. Yes they are totally worth the few extra minutes to mix up the cheese mixture over slapping a slice of cheese on some sandwich bread. Once you try these you’ll never, ever go back to regular grilled cheese. Trust me.

Artichoke Grilled Cheese

Preparation 10 minutes Cook Time 10 minutes

Ingredients

  • 4 oz cream cheese, softened
  • 3/4 c. mayonnaise
  • 1 c. shredded cheddar cheese
  • 1 c. shredded Mozzarella cheese
  • 1/2 tsp garlic powder
  • 1/8 tsp seasoned salt
  • 1 (14 oz) can quartered Artichoke Hearts, chopped
  • 1 loaf French Bread, cut 1/2'' thick

Instructions

  1. In a bowl, beat cream cheese and mayonnaise until smooth. Stir in garlic powder, seasoned salt, cheeses and artichokes. Butter one side of bread slice. Spread unbuttered side of bread with cheese mixture. Top with another slice of bread, buttered side facing out.
  2. Cook in skillet over medium heat until outside of bread is golden brown and cheese is melted.

    Would marinated Artichokes do as well as other Artichokes. I have a hard time finding plain canned Artichokes. All are in some kind of brine.
