Have you got on the whole Avocado Toast wagon? It’s kind of like a movement. It’s the “hot” thing. I’ll admit I’ve tried it but I’ve never dressed it up or got fancy with it. That is until I made this amazing Avocado Toast with Grilled Corn Salsa. It blew my mind. Blew it. Delicious toast, layered with a homemade avocado butter and homemade grilled corn salsa.
You guys, this avocado toast is perfect for lunch, dinner or a snack. I had a hard time stopping after two pieces. There’s so much flavor!

Vegan Avocado Toast
Plus, if you are vegan this is the perfect avocado toast for you! The homemade avocado butter spread is made with fresh avocados and Pure Blend’s Avocado Oil plant-based butter for a creamy spread perfect for toast!
Have you heard of Pure Blend’s Avocado Oil plant-based butter yet? It’s a plant-based butter made with avocado oil to create a smooth, creamy, buttery taste. The best part is that it has no artificial preservatives or flavors, which everyone loves, right? Plus, it’s vegan! You can find it right next to the butter/spread section at Walmart!
There is also a Pure Blend’s Coconut Oil plant-based butter if you would prefer to try that one.
Then it’s topped with homemade grilled corn salsa that’s packed with flavor. I could eat it with a spoon. I might have snuck a few bites to taste test it!

- Onion powder

- Avocado

- Roma tomatoes
- Corn on the cob
- Jalapeno
- Garlic
- Red onion
- Bread

How to Make Homemade Avocado Butter
Peel and pit avocado and place in bowl. Add Pure Blends Avocado Oil Butter, sea salt, onion powder, garlic powder and lime juice. Either mash with a fork or immersion blender until smooth and creamy. You can also do this in a food processor.
If you do not want to enjoy this all at once place avocado butter in container along with seed of avocado then place a layer of plastic wrap on top of avocado butter to keep air out. Place cover on top of container.
How to Make Grilled Corn Salsa

On a preheat grill or grill pan over medium heat on the stove char corn on the cob, rotating to char all sides. Remove and cut corn off of cob.

In a medium sized bowl combine corn kernels, diced roma tomatoes, diced jalapeno, lime juice, minced garlic, sea salt, and minced red onion. Mix well and set aside.

Avocado Butter and Grilled Corn Salsa
Ingredients
Avocado Butter
- 3 Tbsp Pure Blend’s Avocado Oil plant-based butter
- 1 avocado
- 1/4 tsp sea salt
- 1/8 tsp onion powder
- 1/8 tsp garlic powder
- 2 tsp lime juice
Grilled Corn Salsa
- 2 roma tomatoes seeded and diced
- 1 jalapeno seeded, membrane removed, diced
- 2 corn cobs
- 1/2 lime juiced
- 1 clove garlic minced
- 1/8 tsp sea salt
- 1/2 c. red onion minced
- 4 pieces bread toasted
Instructions
- On a preheat grill or grill pan over medium heat on the stove char corn on the cob, rotating to char all sides. Remove and cut corn off of cob.
- In a medium sized bowl combine corn kernels, diced roma tomatoes, diced jalapeno, lime juice, minced garlic, sea salt, and minced red onion. Mix well and set aside.

- Spread avocado butter over pieces of toast and top with grilled corn salsa. Serve immediately.
