Biscuits and Gravy Overnight Breakfast Casserole ~ Comforting, Hearty Breakfast Casserole That is Prepared the Night Before and Baked in the Morning! Biscuits Loaded with Gravy, Sausage, Eggs and Cheese!
Hey Everyone! It’s Rachel over here at Some Oven Lovin’. Today I’m sharing a family favorite recipe in our house and it will be a winner in your house too! We couldn’t get enough of this delicious egg bake! Some other favorites are Ham & Cheese Overnight Breakfast Lasagna, Sausage & Cheese Hash Brown Breakfast Casserole, Hash Brown Breakfast Casserole and Crock Pot Tater Tot Egg Bake.
Let me tell you.. I love my egg bakes. Always have, always will. But… this one?! This one tops the charts. It combines all things delicious about an egg bake but then add the gravy in and voila! It’s happiness all around.
And.. quite possibly the best part is that you can make this up the day before. You know that feeling when you wake up in the morning and you remember that you made egg casserole the day before and it’s just waiting to be put in the oven. Those are the best days. And, your best day awaits, my friend!

Ingredients Needed for Biscuits and Gravy Overnight Breakfast Casserole
- Grand’s biscuits
- Eggs
- Sausage
- Shredded cheddar cheese
- Butter
- Flour
- Milk (divided)
- Pepper (divided)
- Salt (divided)
- Cayenne pepper

Biscuits and Gravy Overnight Breakfast Casserole
Ingredients
- 16 oz. can of Grand's biscuits
- 8 eggs
- 1 pound of sausage
- 1 c. shredded cheddar cheese
- 5 T. butter
- 5 T. flour
- 2 1/4 c. milk divided
- 1 t. pepper divided
- 1 t. salt divided
- 1 dash of cayenne pepper
Instructions
- Grease 9x13 pan
- Brown the sausage in a skillet and drain
- Cut biscuits into 1" pieces and line bottom of the greased pan
- Layer sausage over biscuit pieces
- Layer shredded cheddar cheese over sausage
- Whisk together eggs, 3/4 c. milk, 1/2 t. salt, 1/2 t. pepper and dash of cayenne pepper.
- Pour egg mixture over the biscuits. Cover with tin foil and place in your refrigerator until morning.
- Next, mix up the gravy.
- Melt 5 T. of butter in saucepan. Once melted, whisk in 5 T. flour until paste-like. Add in 1/2 t. salt and 1/2 t. pepper
- With heat on low, gradually whisk in 1 1/2 c. of milk and stir constantly until mixture becomes thick and gravy-like. Once your gravy is done, set aside to cool. Place gravy in the refrigerator until morning.
- Morning - preheat oven to 350
- Pour gravy mixture over egg casserole and place in oven covered for 35 minutes.
- Uncover and bake for 10-15 more minutes until eggs are thoroughly baked and cheese starts to turn golden brown.
- Serve warm.
- Enjoy! Left-overs are just as amazing!

I haven’t tried it, I think it would work best overnight, but it would still be good if you did it in the morning!

Hi Dana! I have often played around with this recipe for larger/smaller crowds! You can certainly double the recipe and I think the 19×11 size would be great! Hope it turns out amazing!

This is yummy but I do put the quartered biscuits on top of casserole as they come out much flakier and browned. Thanks for sharing!

If you place the biscuit pieces on top, do you add them in the morning or the night before? Will they brown more quickly shortening the bake time? I definitely like the idea of biscuits on top!

I would just cover with foil if you notice they start to brown to much. I think they might sink if you put them on the night before!

Does it make enough gravy? Or how would I increase the amount of gravy?

You could double the gravy portion of the recipe but I haven’t tested this so I don’t know if that will cause it to bubble over when baking!

Can you add a layer of shredded has browns and do you cook the sausage before you add it.

Yes, cook the sausage before you add it to the casserole. You could add hash browns, I would recommend refrigerated/thawed hash browns. It may add to the cooking time.

This is one of my favorite recipes! I make it every year for Christmas. My son is now allergic to ingredients in many of the store bought biscuit dough. Do you think it would work with homemade biscuit dough?

I haven’t tried this one with anything but homemade biscuit dough but it would definitely be worth a try! If you give it a shot, let me know how it goes!

Question… can I make this up and freeze it before cooking? I want to be able to make this a freezer meal to thaw in the fridge overnight and cook in the morning.
FYI, I have been using precooked turkey sausage and premade gravy, so this is almost 100% a dump and stir. I also use reduced fat cheese and fairlife milk to make this as healthy as I can.. I have been searching for this recipe for decades. Thanks so much for sharing, it is now our ONLY go to breakfast casserole. We have made it almost every week for months. There are only 2 of us, so this casserole feeds us for the whole week, if I can restrain my portions.
And my tip, I always add onion, bell pepper, and mushrooms to my eggs, but NOT this one. Made the casserole wet and take forever to cook.

I’m glad you love it! I haven’t tried freezing this one, I’m not sure how the biscuits will hold up after being frozen but you could certainly give it a shot. Let me know how it goes if you do!
