This easy recipe make a fabulous dinner and a super tasty lunch. We love burritos around here since they’re easy to eat on the go! Ingredients for a California Burrito
- Flour tortillas – You can use large burrito sized tortillas if you want to make an extra large burrito.
- Olive oil – Make a delicious marinade for the steak. It’s the best way to infuse flavor into the meat. You’ll need olive oil, or another neutral oil, as the base for the marinade.
- Guacamole – I prefer making a batch of homemade guacamole to use on these burritos, but you can use store bought if you prefer.
- Salsa – Add loads of flavor with some tasty fresh salsa.
- Minced garlic – Freshly minced garlic is my favorite way to add fresh flavor to a homemade marinade.
- Cilantro – Dice up some fresh cilantro to make the most of your marinade for the steak.
- Soy sauce – Feel free to use a low-sodium soy sauce or coconut aminos to reduce the amount of sodium in this marinade.
- Salt and black pepper – Just a bit of salt and pepper is all you need to bring out the flavors in this easy marinade.
- Taco seasoning – Use homemade taco seaosoning or a store-bought packet to season the french fries.
- Sour cream – Omit this ingredient if you’re not a fan of sour cream.
- French fries – Grab your favorite frozen french from the freezer section of the grocery store.
- Sharp cheddar cheese – You can use different kinds of cheese if you want! This California burrito recipe is great with Colby Jack or Mexican blend.
- Steak – Flank steak, skirt steak and bottom round are all great cuts of beef to use in this recipe. You’ll need about a pound of meat for this recipe.
What other fillings can I use in a California burrito?
These carne asada burritos are most commonly filled with the ingredients I have listed. But there’s tons of fun fillings you can use! Here’s a few tasty options:
- sliced avocados
- pico de gallo
- black beans
- corn
- Mexican street corn dip
- diced red onion
- Mexican rice

How to Make a California Burrito
Add the soy sauce, olive oil, cilantro, garlic, salt, and pepper to a shallow dish. Then add the steak to the marinade and coat it well. Cover and refrigerate for 1-2 hours and up to 12 hours.
When you’re ready to make the burritos, cook the fries according to package directions and season with taco seasoning. I love to make air fryer french fries so that they’re super crispy.
Once the meat has marinated, heat a large cast iron skillet or heavy bottomed skillet over medium-high heat.
Transfer the marinated steak to the skillet and sear the meat for 3 minutes on each side or until internal temp of 140 degrees Fahrenheit or your desired doneness. Let rest for 5 minutes, then thinly slice against the grain.
Assemble each burrito by grabbing a flour tortilla and adding ¼ of the steak, ¼ of the shredded cheese, ¼ of the fries, a couple tablespoons of sour cream, guacamole and salsa.
Roll into a burrito. Repeat with remaining ingredients until all 4 burritos are rolled. Slice in half and enjoy!

How to Store Leftover California Burritos
For the best results, I recommend storing the filling separately instead of storing built burritos. However, if you have leftover burritos you can still store them! Just wrap tightly in aluminum foil or plastic wrap and place into a plastic bag.
Store in the fridge for up to 3 days! You can freeze if you’d like, but the tortilla may be soggy once thawed.
What to serve with California burritos
This amazing burrito pairs wonderfully with a strawberry lemonade margarita or sparkling strawberry lemonade for a non-boozy option. It’s also one of my favorite meals to pair with chips and queso.
Don’t forget a dessert of tres leche cake or some candy filled M&M cookies.

- 4 cloves garlic finely minced
- ½ teaspoon black pepper
- ½ teaspoon Kosher salt
- 2 cups French fries
- 1 teaspoon taco seasoning
- 1 cups shredded sharp cheddar cheese
- ½ cup sour cream
- ½ cup guacamole
- ½ cup salsa
- 4 burrito size flour tortillas
Instructions
