They’re not your average cereal bar! I took my amazing classic rice krispie treat recipe and gave it a caramel upgrade. These are a must-make and the best recipe to share or keep all to yourself!

Ingredients
- Rice Krispie cereal – any brand of puff rice cereal will work.
- Butter – if you use unsalted butter you may want to add a few pinches of salt when you melt the butter.
- Mini marshmallows – you can use regular marshmallows, too! You will need 10 ounces.
- Caramels – look for wrapped caramels and, of course, unwrap them for this recipe.
- Sweetened condensed milk – there isn’t a sub for this!

How to Make Them
Bottom layer: Melt butter and marshmallows in the microwave until smooth. This should only take a minute or so. Mix in some rice krispies cereal and then press the marshmallow mixture into the bottom of the prepared baking dish.





Caramel filling: Melt the caramels with butter and the sweetened condensed milk in a saucepan over medium heat. Stir until smooth and pour the caramel sauce over the top of the bottom layer in the pan.





Top layer: Melt the rest of the butter and marshmallows in the microwave until smooth. Add the rest of the cereal, stir, and then gently press the mixture on top of the caramel filling in an even layer.
Chill: Cover the pan and chill the bars for at least two hours before slicing and serving.
Tips for the Best Treats
- Be sure to use fresh marshmallows! If your marshmallows are stale, your rice krispie treats won’t be as soft.
- Don’t overcook the marshmallows. When you melt them with the butter, start with one minute in the microwave and then stir. If needed, warm them for 30 seconds more so the mixture is smooth.
- Once you add the cereal to the melted marshmallow mixture, work quickly to press it into the pan before it sets.
- To keep the marshmallow cereal mixture from sticking to your hands, lightly coat your hands with cooking spray before pressing the mixture into the pan.
- Don’t skip the chilling step – if you don’t let the bars set up they will be too soft and fall apart when you slice them.
- Be sure to store the treats in an airtight container either at room temperature or in the fridge. If they are exposed to air they will dry out and harden.
Can you freeze caramel rice krispie treats?
Yes, they freeze great! Once you’ve chilled them, slice them into squares. Wrap each square in plastic wrap (or stack them in a container with wax paper separating the layers) and then store them in a freezer bag or container. They will keep well in the freezer for two months.

Caramel Rice Krispie Treats
Ingredients
- 8 cups Rice Krispies
- ¾ cup butter divided
- 2 packages 10 ounces each miniature marshmallows
- 11 ounce package caramels unwrapped
- 14 ounce can sweetened condensed milk
Instructions
- Spray a 10’’ x 15’’ inch pan with non-stick spray and set aside.
1st Layer
- In a large microwave safe bowl combine ¼ cup butter and 1 package marshmallows. Microwave for 1 minute and stir until butter and marshmallows are melted, if not completely melted microwave for 30 seconds and stir again.
- Add 4 cups of Rice Krispies to the bowl and stir to combine.
- Gently press into the bottom of the prepared pan.
Caramel Layer
- In a saucepan melt together unwrapped caramel, ¼ cup butter and sweetened condensed milk over medium heat, stirring frequently.
- Pour over the first layer of Rice Krispie Treats in the pan.
2nd Layer
- In a large microwave safe bowl combine ¼ cup butter and 1 package marshmallows. Microwave for 1 minute and stir until butter and marshmallows are melted, if not completely melted microwave for 30 seconds and stir again.
- Add 4 cups of Rice Krispies to the bowl and stir to combine.
- Gently press on top of the caramel layer.
- Refrigerate a minimum of two hours before serving.
