Hey Hey Hey! I’m back with another Crock Pot side dish just for you! I’m here with this delicious twist on creamed corn because you ADORED my first. This Crock Pot Cheddar Creamed Corn has been super popular over the past few years. You apparently really enjoy Crock Pot side dishes and since you loved it so much I decided to put a new delicious twist on it! Some of your other favorites are Crock Pot Comforting Cheesy Potatoes and Crock Pot Bacon Green Beans!
You guys. We just had a rough night at our house. Uffda. Man oh man. Those girls can cause some fits! RyRy, our youngest, has learned the art of throwing herself down on the floor and screaming. Not like screaming. I’m talking blood curdling, top of the lungs, make me put ear plugs in my ears screaming. The most awesome thing is most of the time I have no idea what’s wrong. None. So I can’t even remedy the situation. I feel like I’ve hit the terrible twos about nine months early. Help me, send wine, send prayers, send chocolate. Or all of the things. All. Tonight we finally just walked away from her and left her cry because she was inconsolable. Don’t worry it lasted like two minutes and she came to the other room. I’m not that terrible of a Mom!

Then enter the fly fiasco into our bedtime routine. The weather has been awesome, oh so awesome here in Minnesota. This causes those flies to start waking up and coming out. Unfortunately somewhere between October and March Miss K developed a terrible phobia of flies. Like you would have thought that earth was coming down around her and she was being tortured. Screaming, yelling, kicking because she saw a fly. Yes. A fly.
Send chocolate, send wine, send prayers. This could be a long summer. A very long summer. I mean there are no bugs or flies at the cabin or anything. Sigh.

Back to this corn. Its perfect for Easter, which is right around the corner. Can you believe it? Not me! Of course this awesome weather has me dreaming of spring being here to stay. Do you think we could be that lucky? It is Minnesota so I’m guessing we will be blessed with at least one more snowfall!
This Cheesy Bacon Ranch Crock Pot Creamed Corn recipe has all the elements to make it awesome. First of all it’s made in a Crock Pot. Win #1! Totally easy to make for holidays and it’s transportable too! Secondly it has Bacon. Enough said. That explains itself. Add some ranch and cheese to the combo and I think I just described heaven didn’t I?

Cheesy Bacon Ranch Crock Pot Creamed Corn Recipe
Ingredients
- 3 16 oz packages frozen corn, thawed
- 1 8 oz package cream cheese, softened
- 3/4 c. shredded cheddar cheese
- 1/4 c. butter melted
- 1/2 c. heavy whipping cream
- 2 1 oz packets Ranch Seasoning
- 1 lb bacon cooked & crumbled
Instructions
- In a 5 qt slow cooker combine all ingredients, except bacon. Stir to combine.
- Cook, covered, on low 3-4 hours or until warmed through and cheese is melted.
- Stir after done cooking. Top with crumbled bacon. Serve.

Just to “report” the outcome — I used the corn “frozen” without thawing and followed the recipe except I laid chunks of the cream cheese on top rather than mixing them in right away. Cooked on low at home 3 hours, then traveled 2 hours, stirred the cream cheese in, and plugged it in on low for another 2 hours at her house. It was absolutely perfect, no mushiness from cooking all that time. Thanks for the delicious recipe!

I’m undecided between this receipe with the ranch dressing and the other one (crockpot cheddar creamed corn). This recipe seems less saucy than the cheddar creamed corn. When the ingredients are compared, the sauce amount is the same in both recipes but the cheddar creamed corn calls for 2 bags of corn, where the ranch bacon recipe calls for 3 bags. I prefer more sauce, so would it hurt if I cut the amount of corn in the ranch recipe to 2 bags? Also want to confirm that it actually calls for 2 packets of the seasoning mix.

Hi Diane!
Yes, the regular creamed corn recipe has more sauce to it. You can definitely only use 2 (16 oz) bags of corn in the ranch version. It does call for 2 packets of seasoning mix. If you are cutting back on the corn I might only use 1 or 1/2 packets depending on how much ranch flavor you want! Enjoy!

Hi — another question –Will this dish suffer from cooking too long? I was going to make it in the morning (3 hrs in crockpot), then transport it to my sister’s (a 2 hour drive), then plug in in on low for 2 hours before dinner. If this is not good, my options may be: cook partially at home ( 1 and 1/2 hours on low), then at her house for 2 hours on low, or not cook at home and cook for 2 hours on “high” at her house. Any suggestion would be greatly appreciated!

I would cook it through and make sure everything is melted before leaving then just turn it on low and reheat it when you get there!
