Cheesy Zucchini Casserole ~ Delicious, Comforting Cheesy Zucchini Casserole Recipe Stuffed with Summer Squash, Zucchini & Colby Jack Cheese!
It’s ZUCCHINI time! Anyone else enjoy this time as much as me? I have to always make sure to whip up a batch of this fabulous Zucchini Bread. It’s my favorite. Sometimes I stick raisins in there and that makes it extra delicious. This year I don’t have a garden so it’s hard to find homegrown zucchini to use up. Luckily my neighbors invited me to steal a few from their garden. Aren’t they the best? When I got that invite I rushed right over there and got a couple. One of the dishes I made was this amazing Cheesy Zucchini Casserole.
My brother got married yesterday so this week I treated myself to a nail appointment with my sister-in-law, niece and Mom. I love to get a manicure and pedicure but let’s face it. I rarely do it. Same thing goes for massages. In fact I have two gift certificates to use up and I just never make an appointment. Half the reason is that I need to take time off work to get a massage and that just feels a little high maintenance! Plus, I’m still trying to save up some PTO time because I drained it when I had a baby. It’s kind of depressing knowing you have to hoard that time for when you have a baby and can’t enjoy any time for yourself! Back to the nail appointment. I love getting my nails done and pretty sure I like it so much I would love to do it once a month if the pocket book would allow it. Anyone else feel like that?
I hope I’m not the only one! Wouldn’t be nice to have a dedicated afternoon to go treat yourself to nails and a massage? Oh man, now I’m dreaming! Maybe I could sneak in a nap after that if I’m really going to dream. Might as well right!
Then after my nap I would wake up well rested, happy and relaxed. Dinner would obviously be prepared for me that night and if I had a request I would make sure this Cheesy Zucchini Casserole was on the menu frequently! This comforting casserole is loaded with fresh zucchini, summer squash and cheesy. I adore the crunchy topping that’s it’s smothered in!
- 4 Tbsp butter divided
- 4 c. summer squash diced
- 3 c. zucchini diced
- 1 large onion chopped
- 4 cloves minced garlic
- 1 1/2 c. crushed Rice Chex
- 1 1/2 c. shredded Colby Jack cheese
- 2 eggs slightly beaten
- 1/2 tsp salt
- 1/4 tsp pepper
Preheat oven to 350 degrees. In a large skillet, heat 2 Tbsp butter over medium heat. Add zucchini, summer squash, onion and garlic. Cook for 10-12 minutes or until crisp-tender, stirring frequently. Transfer to bowl to cool slightly.
In a microwave, melt remaining butter. Drizzle over cereal and toss to coat.
Stir cheese, eggs, salt, and pepper into zucchini mixture. Transfer to greased 2-quart casserole dish. Sprinkle with cereal mixture.
Bake for 25-30 minutes or until heated through. Let stand 10 minutes before serving.
