Cheesy Zucchini Rice
Easy Side Dish for the Week Night Loaded with Rice, Zucchini & Cheese!

Ingredients
- 1 c. Minute White Rice
- 1 c. chicken broth
- 1/2 c. water
- 2 c. shredded zucchini
- 1 c. shredded sharp cheddar
- 1/2 tsp garlic powder
- 1/2 tsp salt
Instructions
- In a medium size saucepan bring chicken broth, water and rice to a rapid boil. Cover and remove from heat. Let sit for 5-10 minutes or until rice is cooked threw.
- Stir zucchini, cheese, garlic powder and salt into rice. Cover and let set until cheese is melted and ingredients are warmed through, about 5 minutes. Fluff with a fork.
- Serve immediately.

That is funny that you enjoy the fair because of your 4-H memories, because I never want to go to the county or state fair because of 4-H! Spending the whole fair working the canteen and doing exhibits just burnt me out FOREVER! lol I enjoyed it as a kid, except for those pesky records, but now, the only draw the fair has, are the cheese curds! 🙂

I made this last night for the family. It was very good. My only complaint is that even tho I drained my veggie in a strainer for several hours the rice came out Very watery. Next time I will decrease the liquid to 1 and 1/2 cups instead of the 1 and 3/4. This should make it less soupy. Great flavors tho and a nice way to use the squash. I used all chicken broth in place of the water. Did not want to waste the can.
Good tips! I usually get the carton of chicken broth so I can seal it back up again for cases like this!

I like to saute my zucchini with some diced onions and minced garlic for a couple minutes before adding the rice and cheese…yum!

Can this be done with regular long grain rice? If so, how long should I leave it cooking?

I made this for dinner last night! Everyone loved it! As I did not use it as a side dish, rather as the meal itself, I just doubled up on the ingredients! It was very very good, whole family loved it!
