- Shredded chicken – I’ve got a recipe for Crock Pot shredded chicken and one for Instant Pot shredded chicken. Make some shredded chicken for meal prep and then you can use it in this recipe.
- Mexican blend cheese – Gooey cheese is key to making this casserole perfection! You can use cheddar cheese, Colby jack or even pepper jack cheese if you want.
- Cream of chicken soup – A can of cream of chicken soup makes this casserole super creamy.
- Diced onion – Dice up a yellow onion or white onion to add that classic chicken fajitas flavor to your casserole.
- Diced red bell pepper – Green bell pepper and orange bell pepper are good swaps if you don’t have a red pepper on hand.
- Chicken broth – This will cook the rice and add lots of flavor throughout the chicken casserole.

How to Make Chicken Fajita Casserole
- Preheat your oven to 350 degrees Fahrenheit and then lightly spray a 9×13 inch baking dish with nonstick cooking spray.
- In a large bowl, stir together the chicken, uncooked rice, cream of chicken, sour cream, diced onion, diced bell pepper, fajita seasoning, and half of the cheese.
- Pour the chicken fajita casserole mixture into the previously prepared dish and spread it out evenly. Wrap tightly in aluminum foil, then bake in a preheated oven at 350 degrees Fahrenheit for 35 to 40 minutes or until it is bubbling.
- Remove from the oven, top with the remaining cheese and return to the oven, uncovered, until the cheese is melted, about 5 minutes.
- Let rest for 5 minutes before serving. Enjoy!
How to Store Chicken Fajita Casserole
Allow leftovers to cool completely and then wrap the casserole dish in plastic wrap or aluminum foil. You can also transfer leftovers to an airtight container.
FRIDGE: Store your casserole leftovers in the refrigerator for 3 to 4 days.

Can I use cauliflower rice in a rice casserole?
If you’d like to make this casserole Keto friendly, then feel free to use cauliflower rice in place of regular rice. You will likely need to reduce the amount of chicken broth in the recipe and your bake time may be a bit different as well. But just play around with it a bit and I’m sure it will work!

- 1 cup sour cream
