Cinnamon Bun Popcorn ~ Easy, Caramel Corn Spiced with Cinnamon! Perfect Sweet Treat!
How do you feel about Christmas decor before Thanksgiving? I’ve always been one to fight that urge tooth and nail. Never daring to put up Christmas decor before Thanksgiving was over. We would always bust out the Christmas tree the weekend of Thanksgiving and decorate the house up. This year things changed. I caved and did it peeps. The Christmas tree is up and maybe a decoration or two. I’ve got a foot of snow outside my house and the temps are bitterly cold. Plus Thanksgiving is really late this year right? To top it off I have this baby thing going on and I figured I wouldn’t have to much energy to put up the tree and decorate after baby was born, so I went ahead and did it. Gasp. I know.

As I sat on the couch and told the hubs that we were going to put up the Christmas tree I pondered where we were actually going to put the Christmas tree. Kids toys and baby paraphernalia are overtaking our entire living room. Any one with me on that? I casually mentioned moving the TV to above the fireplace which literally can’t happen due to a vent, but this got my husband thinking and I swear that man started nesting! Pretty soon couches and entertainment centers along with wiring were flying around and my living room was being turned upside down. He almost drilled a hole in my wood floor for a cable outlet. I luckily talked him into running it through a vent instead. Needless to say that I survived the rearranging of furniture and it turned out lovely. Room for the toys, Christmas tree and the baby swing! The man had a plan I’ll give him that!
This Cinnamon Bun Popcorn needs to be on your plan! I took my amazing Caramel Popcorn recipe threw in some cinnamon for a hint of cinnamon that wasn’t overpowering then took it up a notch with the vanilla drizzle spiced with cinnamon. It’s purely sinful you guys. I am in love. I adore snack mixes and I always think it’s the perfect thing to bring to the holidays. They don’t take a ton of time and sometimes you just can’t eat another cookie.
Who am I kidding? I rarely have that problem with cookies, but I’m still a sucker for a good snack mix!

Cinnamon Bun Popcorn
Ingredients
- 16 c. popped popcorn
- 2 c. brown sugar packed
- 1 c. butter
- 1/2 c. light corn syrup
- 1 tsp salt
- 1 tsp baking soda
- 1 Tbsp vanilla
- 1 tsp cinnamon
Topping
- 1/2 tsp cinnamon
- 2 squares white Almond Bark
Instructions
- Preheat oven to 250 degrees.
- In a saucepan bring butter, light corn syrup, sugar and salt to a boil. Boil for 5 minute stirring occasionally.
- Remove from heat and stir in soda, vanilla and cinnamon. Mix thoroughly.
- Place popcorn in a large bowl and pour caramel topping over the popcorn. Mix until combined. Spread out on two large jelly roll pans.
- Bake at 250 degrees for 1 hour, stirring every 15 minutes. Spread out on wax paper after baking. Let cool.
- Melt almond bark according to package directions. Stir in cinnamon. Drizzle over popcorn.
- Store in air tight container.

This popcorn looks incredible!! I put up my tree this past weekend too. With thanksgiving late and lots of parties at the beginning of december I knew it was the only time I had to do it where we could take our time and enjoy decorating 🙂

my caramel corn always comes out somewhat crystalized when I do this flavor. my other flavors don’t do this. Any suggestions? Thanks!
I’m not sure this will help but I’ve heard if you get any of the caramel mixture gets stuck to the edges of the pan when making it and you scrape it off and stir it back in that it will crystalize. Just what I heard!

What is almond bark? Where do you get it? Thanks!
You get it in the baking aisle. You could also use vanilla chips but white almond bark is easier to work with and won’t seize as easily.
