You put the beef roast in the slow cooker in the morning along with your vegetables. Then you top it with a mouthwatering Balsamic mixture and let it cook all day. The result is a melt in your mouth roast that is tender and falls apart, plus carrots and potatoes. It’s an entire meal in your Crock Pot. Slow Cooker Pot Roast is perfect for busy weeknight dinners!
Crock Pot Roast
Crock Pot? In the summer? I bet you think I’m nuts.
A lot of people associate the beloved crock pot with the winter months, but I’m here, jumping and screaming from the rooftops, to tell you not to put that baby away.
If you already did, dust it off and give it a hug!
The crock pot is perfect for hot summer days when you don’t want to heat up your entire house and you still want a fabulous home-cooked meal. Plus, summers are crazy busy. Like super crazy.
So, who doesn’t like a quick meal you can throw in the crock pot and forget about then come home too? {Picture me jumping up and down right now waiving my hand} ?
I think I could drink it with a straw.
Now if you aren’t such a fan of balsamic no worries. Neither is the hubs and he loved this roast. It’s juicy, tender and has a hint of balsamic. If you’re more of a fan of prime rib roast click this link for another great recipe!
Beef… it’s what’s for dinner ya know!!!
Crock Pot Roast Beef
Growing up in the Midwest on a family farm means that we often had meals full of meat and potatoes.
My husband also grew up this way but I love that I can serve that to my family and still mix it up a little with that balsamic.

Do you put water in a crock pot to cook a roast?
The slow cooker is made for trapping the steam which tenderizes your meal. This recipe uses both beef broth and balsamic vinegar to tenderize the meat and this also keeps it moist.
Why is my pot roast tough?
Usually, because it’s not been cooked long enough OR has been cooked too long in the slow cooker without enough moisture resulting in a dry roast.

Hello! I am trying this tonight! @Tatum, I got started late and have to cook it on high (maybe abt 4 hours). Will let everyone know how it turns out at this time/temp
Julie Evink says
How did it turn out Ally?
nicole says
This looks great! gonna try it tomorrow night..just wondering, could I throw brussel sprouts, and or green beans in there? Would they cook well at that temp/time frame?
Julie Evink says
I’m not sure but I would think if you threw them in half way through that would be good! Let me know how it goes!
Cathy says

I am making this right now. I am a little worried that there is too little liquid. I double checked the recipe and added the correct amounts. It doesn’t cover my 3lb. roast or the vegetables on top. Should I add more beef broth? Thanks!
Julie Evink says
That’s all the liquid I used. You can add more if you’d like or try basting it if you around every once in awhile!

This looks wonderful! And you are so right about using the slow cooker in the summer, because who wants to cook over a hot stove in the summer! Just throw something in the slow cooker, I definitely need to dust mine off!

Thanks Lisa!
Danielle Green says
I love balsamic!! I go crazy for a good balsamic reduction as well. My husband isn’t a fan either, but I bet even he would like this. It would be a good recipe to use up some of the beef in my freeze that he keeps bringing home. I think I will have to make this next week before I go on vacation so he has some real food in the house, besides frozen pizzas!
Julie Evink says
Woohooo something not to plain for Danielle to try 🙂
