Believe it or not, fall is just around the corner! And with it, the need for warm and hearty meals to keep those bellies full as the weather begins to change. I love fall so much. While baked goods like pumpkin bars and pumpkin brownies are always on the docket for fall, I also love that I can start making “stick-to-your-ribs” meals like crock pot beef and noodles.
This delicious meal makes my life so much easier too. I just plop a chuck roast in the slow cooker with a few other ingredients and let it cook all day until it’s fall apart tender. Then I just throw noodles in and it’s ready for dinner with minimal effort on my part. Any other mom’s hear a choir of angels sing when dinner is this easy? Yeah, me too! Thank goodness for our crock pots and delicious meals like beef and noodles.

Ingredients for Crock Pot Beef and Noodles
- Chuck roast – I like to grab about a 2 pound chuck roast with lots of marbling so that it gets really tender and flavorful.
- Beef broth – Need to control the sodium level? Then feel free to grab some low-sodium beef broth!
- Cream of mushroom soup – To make this dish extra creamy, use a can of cream of mushroom soup. You can use cream of chicken soup too.
- Beef rub – I’m partial to our Gimme Some Grilling beef rub, but you can use anything you want. Make your own homemade beef rub or use your favorite store-bought beef rub.
- Reames noodles – These are just store-bought noodles! You don’t have to use this exact brand of egg noodles, but I do recommend this type of noodle. The texture and flavor works well in crock pot beef and noodles.
- All-purpose flour – A little dash of all purpose flour helps thicken up the sauce.
- Heavy cream – I love to add heavy cream to this to make it extra extra creamy. Half and half would also work.

How to Make Crock Pot Beef and Noodles
- Whisk together the broth and cream of mushroom soup in your slow cooker.
- Then season the roast with beef rub on all sides and place it in the slow cooker with the soup mixture.
- Place the cover on the slow cooker and cook on low for at 6-8 hours or until roast is fall apart, fork tender.
- Shred the beef with 2 forks and then stir all-purpose flour into the sauce and beef.
- Add the egg noodles and heavy cream to slow cooker and stir.
- Turn to high heat and cover and allow to cook for another 30-40 minutes, stirring a few times, until noodles are cooked and sauce is thick.
- Serve immediately with your favorite sides!
What to Serve with Crock Beef and Noodles
Allow your slow cooker beef and noodles to cool completely and then transfer to an airtight container. You can separate this dish into individual servings if you want too!
FRIDGE: Store in the refrigerator for 3-4 days.
FREEZER: This dish can be frozen for up to 3 months, just allow to thaw before reheating.
Can you cook dry noodles in a crock pot?
Yes! As long as there is enough liquid, you can add dry noodles to a crock pot and they will cook just fine. They need to be added towards the end of the cooking process though! So just follow the step by step instructions and you’ll have great results.
Why did my noodles to mush in the crockpot?
If you end up with mushy noodles, you likely over cooked them. You also need to make sure the liquid that you are adding the noodles to is hot enough before you begin cooking them.
It is also important to note that all slow cookers are a bit different. So if you find that noodles tend to cook fast for you, just be sure to check the doneness on the egg noodles in this dish a little bit earlier than the recipe calls for.
What to Serve with Crock Pot Beef and Noodles
There are so many tasty, comfort food sides that you can pair with this meal. Some roasted broccoli and air fryer garlic bread are my favorite easy side dishes. But I especially love serving crock pot beef and noodles with Texas roadhouse rolls.
You can also pair this meal with quick roasted vegetables or some delicious glazed carrots. And while there’s already a carb in here with noodles, who says you can’t serve this dish with some creamy mashed potatoes?
Pro Tips for the Best Crock Pot Beef and Noodles Recipe
- Feel free to sear the the chuck roast in a large skillet on the stove top before placing it into the crock pot. It’s not a required step, but could make you roast even more tender!
- You can change up the seasonings on your roast if you want. Onion soup mix would be tasty, simple salt and pepper, and seasoned salt would all be yummy.
- Add even more flavor to this recipe with things like onion, fresh herbs and extra seasonings.
