An easy hot dip with all the flavors of your favorite classic sandwich! This Reuben Dip can be made in your Crock Pot or baked in your oven. A creamy mixture of sauerkraut, corned beef, cream cheese, sour cream, Thousand Island Dressing and Swiss Cheese make a great party appetizer with only 5 minutes of prep.
Love the flavors in a classic Reuben Sandwich? The layers of Corned Beef, Sauerkraut, Thousand Island Dressing and melted cheese are so good together! Now you can make that into a delicious hot dip called Reuben Dip!
The best part about it is that you can make it in your oven or in your Crock Pot. I love that slightly crusty top on the baked version, but the Crock Pot version is perfect for serving at parties and transporting.
6 Ingredients for Reuben Dip!
There’s only six ingredients needed.
- A quick tip is that if your’d rather use mayonnaise instead of sour cream if your prefer.
- Make sure you use room temperature cream cheese when you mix the ingredients. If you don’t, the corned beef with break up when you mix it together.
- Drain your sauerkraut and squeeze any excess liquid off of it to make sure your dip doesn’t get runny.
- Freshly grated cheese is always best because pre-shredded cheese are coated with stabilizing agents and won’t melt as well.
- We use deli style sliced corned beef, but you can also use cubed leftover corned beef if you have that.
How to Prepare
The best thing about this is there is two methods to bake this dip making it perfect for any party!
Crock Pot
- The perfect size is a 2 Quart Crock Pot for your hot dip.
- Cream together room temperature cubed cream cheese, Thousand Island Dressing and sour cream. Add corned beef and mix until combined. Stir in sauerkraut and Swiss Cheese.
- Place in a greased crock pot and warm on low for 2-3 hours or until melted and warmed through. Drizzle with dressing. Serve with desired dippers.
Baked
- Preheat oven to 375 degrees F. Coat a oven-safe skillet or pie plate with non-stick spray and set aside.
- Cream together room temperature cubed cream cheese, Thousand Island Dressing and sour cream. Add corned beef and mix until combined. Stir in sauerkraut and Swiss Cheese.
- Place in preheated oven for 20-25 minutes or until hot and bubbly.
- Serve immediately with desired dippers.
Make Ahead
You can mix this dip up one day ahead of time, store it in the fridge and then baked or place in Crock Pot when ready to warm it. It’s perfect to take stress-out of party prep!

Reuben Dip
Ingredients
- 14.5 oz can sauerkraut drained
- 2 packages Buddig corned beef slices 2 oz each, chopped
- 4 oz cream cheese softened and cubed
- 8 oz sour cream
- 8 oz shredded Swiss cheese
- 1/4 c. Thousand Island dressing
Instructions
Crock Pot Directions
- In a small mixing bowl beat together cream cheese, Thousand Island Dressing and sour cream. Add corned beef and mix until combined. Stir in sauerkraut and Swiss cheese.
- Place in crock pot on low 2-3 hours or until melted. Drizzle with dressing. Serve immediately.
Oven Directions
- Preheat oven to 375 degrees F. Coat a oven-safe skillet or pie plate with non-stick spray and set aside.
- In a large mixing bowl combine all ingredients and mix until well combined. Spread into prepared dish.
- Place in the preheated oven for 20-25 minutes or until hot and bubbly.

Yes I would think it would be fine in the oven at 350 degrees for maybe 20 minutes or around there?!
