Want to make an egg bake for Sunday morning without the hassle or maybe a brunch? Crock Pot Tater Tot Egg Bake is the perfect option. Layers of Tater Tots, Ham, Eggs, Cheese and more make this the best breakfast casserole ever!
Let’s talk egg bakes. I’m sorta, kinda particular about them. I hate the ones with bread but an egg bake with potatoes? Um, yes, please! It’s something about the texture, the bread gets mushy but potatoes are perfect! Anyone else like this? Who’s team potato with me?
Well, team potato, I’ve got a great casserole for you – this crock pot egg bake is loaded with all the good stuff including tater tots! Because tater tots are the best, right!?
So, let’s switch out bread for tots and add lots of Canadian bacon and cheese. I mean it’s kind of a winning combination you shouldn’t mess with. Everything is way better with cheese right? Ask my hubs he’s totally in agreement with this. Plus you throw this breakfast casserole together the night before and wake up to a cozy breakfast. Add a batch of mini caramel rolls or crumb banana muffins to make it extra special.
This egg bake is great for holidays and weekends, but it’s so easy you could make it for a random weekday breakfast, too! Imagine surprising the family with this on a Monday morning – that’s my idea of a great start to the week.
Prepare all the Ingredients the Night Before
I love a make-ahead breakfast casserole and for this one it’s as easy as gathering up all the ingredients the night before. It’s made with simple ingredients and you only need 15 minutes to get it in the crock pot.
So grab the tots and eggs and let me show you how easy it is!
How to Make the Casserole
Start with a layer of tater tots, chopped onion, bacon, and both cheeses. Do two more layers of all these ingredients. You should finish with a layer of cheese on top
Crack all the eggs into a large bowl and add the milk, flour, salt and pepper. Whisk them together until the mixture is smooth.
Pour the mixture over the tater tots and other ingredients in the crock pot.
Place the lid on the slow cooker and cook the casserole on low 6 to 8 hours.
If I want to serve this breakfast casserole for a brunch that is later in the morning, I’ll just get everything in the crockpot the morning of and let it cook on high for 2 1/2 to 3 hours. So, you can choose what works best for you! Early breakfast? Let it cook overnight on low.
Recipe Variation Ideas!
We all love to put our personal spin on recipes, don’t we? So, once you try it you can experiment with different add-ins and flavors! Here are some ideas you might want to try:
- You can substitute regular bacon for Canadian bacon but you will need to cook it first! So, fry it in a skillet, chop it up and layer it with the tater tots and cheese.
- Or try adding cooked breakfast sausage – just slice the links into bite-sized pieces. You can also add diced leftover ham!
- If you want to go meat-free, leave out the bacon and add a few more veggies – chopped bell peppers, spinach, and mushrooms would work great! If you use mushrooms, I would cook them first before adding them to the casserole.
- Switch up the cheese! Lots of different ways to go with this – shredded Gruyere, mozzarella, pepper jack or provolone would work great!
Want more easy breakfast recipes? You have to try these, too:
- My kiddos LOVE French toast and my recipe is super easy. Perfect for a weekend treat!
- I love bacon but I hate cooking big batches on the stove – it’s always a splattering, greasy mess! If you want bacon for a crowd you have to try my easy oven bacon. Less mess, less fuss and you get crispy bacon!
- You only need three ingredients to make my sweet cinnamon twists – they are an easy pastry you can make with hardly any effort.

If I use sausage instead of canadian bacon — should I cook the sausage first?
Julie Evink says
Yes!
Andrea Fernández Sánchez says
Can someone tell what are tot tarts?
steph says
Tater tots are shredded potatoes formed into a small ball shape and deep fried. They are found in the frozen food section near the french fries. Pretty much any shredded potatoes should work. Although there will be a difference in texture.

Thanks for the recipe! I would love to add mushrooms, but worry that the liquid from them would make it runny. Any thoughts/suggestions?
Anyone try it with mushrooms?
Thanks!!
Julie Evink says
I’ve never tried it with mushrooms. Are you thinking fresh or canned. Just make sure to drain the canned mushrooms if you use them!
Vicki v says
Made this with smoked sausage and added bell peppers and garlic. Did 5 hours on low and 3 on warm because I had to hold it. Delish!
Julie Evink says
Great changes! I bet it was delicious!
Julie Evink says
So glad you enjoyed it Vicki!
Rachel says
Did you pre cook the smoked sausage first??
Julie Evink says
Rachel – I’m not sure what you are referring too? The diced Canadian Bacon comes in a package that is precooked.
Vicki v says
Smoked sausage is precooked so j just sliced it and threw it in.
Danielle Richter says
Vicki, Did you cook the sausage before adding it to the crock pot?
Roxanne says
I made this today, minus the onion, we have not tasted it yet but the whole outside and bottom are burnt. I put it in the crockpot this morning and had it on 10 hour low setting for 8 hours. When I came home it was burnt and the whole house smells.
Julie Evink says
I’m sorry you had this experience Roxanne. I cooked mine on low for 8 hours and I didn’t have any trouble. Crock Pots tend to heat differently also. From your comment I can’t tell if you left it in for 10 hours?
Heidi Underhill says
Have you ever tried this with diced potatoes? My kids are on an all natural diet, so we can’t use the tater tots.
Julie Evink says
I haven’t but I would think it would work! If you do let me know!
danielle says
Sounds good will try to make them helthey think i will ad spinach cheese
Pat Cody says
Does anybody actually comment AFTER they make these recipes? Not one person has said how it actually tasted, just how great it sounds. Why doesn’t someone make the recipe first and then comment?
Julie Evink says
I would love it if you would make a recipe and come back an comment on the post, but unfortunately I can’t make people give feedback once they try it. A lot of times people forget to come back and leave comments!

I was thinking the same thing. Well, it’s in my crockpot right this very minute for a work breakfast tomorrow. I will do my best to get back and let you know how it turns out.

MADE IT…last weekend with a few minor adjustments. Since my kiddos hate onions and we do not eat pork, I left those out. I did however put in diced kosher bologna. This recipe lends itself to being made according to one’s taste.
The kids and my hubby LOVED it! It was enough for my picky family of 6 and it was very convenient, especially for a weekend breakfast, ESPECIALLY when you have a new baby!
The kids even ate it without ketchup…that says a lot.
An easy no mess-no fuss delicious recipe that I’m actually making a second time tonight (with kosher hotdog wieners).
Julie I thank you from the bottom of my sleep deprived heart!
Julie Evink says
Oh I’m so incredibly happy that you enjoyed it! From one mother to another… I know how trying those sleepless nights can be!
Sweetseeker says
Julie, I’ve made this a couple times more and it always turns out great. Since my husband and I are the only ones that love omelette with veggies I decided to try putting in diced onions, bell pepper and tomatoes only on one side of the slow cooker and hope for the best. I couldn’t possibly make two of these in one night with only one slow-cooker, right? Right!
And guess what! It worked.
The kids didn’t even know they were cooked together as the flavors of the veggies didn’t infuse throughout.
(FYI: used a 7qt oblong slow-cooker
Thanks a million…again 😉

I feel the exact same way!! If I see a recipe that looks awesome then I read it has bread chunks in it I won’t make it. Yours……I will definitely make. Thank you for sharing the recipe!
Julie Evink says
Haha you will love this then! I’m glad I’m not the only one!

I want to make this Christmas morning, but it will only be my husband and I. If I half the recipe would I still cook it as long?
Julie Evink says
No I would only cook it 4-6 hours.
Peter Eng says
I make the half recipe, and let it go for eight hours. I don’t know if it would be better with the shorter cooking cycle, but it’s delicious, and not dried out.
Julie Evink says
Glad you enjoyed it!
Bethany says
It’s just my husband and me too, but I think I’m going to try to make the whole recipe and then just freeze leftovers in individual portions for future breakfasts during the week. Can’t wait to try this!
Julie Evink says
Let me know how it turns out Bethany!
Nikki says
Hi Julie,
Do you think this could be made with regular bacon? I guess it would have to be precooked? Think it might dry out if it’s cooked twice?
Julie Evink says
Yes I think it would work fine and I’d cook it before you add it to the mixture!
LadySilverfox says
I did it with regular thick sliced bacon that I pre cooked. It was great!
Wendy says
It says 2 onions – what kind? 2 onions seems like a lot if it’s a larger onion, like a white onion. But 2 green onions doesn’t sound like enough. LOL Thanks for the guidance. Can’t wait to make this Thanksgiving week!
Julie Evink says
White onion, but this is totally adjustable so go with what you want. If you don’t even want onion leave it out totally. It will be great still!
Sandy says
Could this be put in 9×13 pan and baked in oven. Any ideas on temp and time ?
Julie Evink says
I’ve never done this but I would start out at 350 degrees and bake for 45-60 minutes. This is just a guess!
Kim says
If cooked longer than 8 hours, do you suppose it would dry out too much? Making this tomorrow, thanks for the great recipe!
