Want to make an egg bake for Sunday morning without the hassle or maybe a brunch? Crock Pot Tater Tot Egg Bake is the perfect option. Layers of Tater Tots, Ham, Eggs, Cheese and more make this the best breakfast casserole ever!
Let’s talk egg bakes. I’m sorta, kinda particular about them. I hate the ones with bread but an egg bake with potatoes? Um, yes, please! It’s something about the texture, the bread gets mushy but potatoes are perfect! Anyone else like this? Who’s team potato with me?
Well, team potato, I’ve got a great casserole for you – this crock pot egg bake is loaded with all the good stuff including tater tots! Because tater tots are the best, right!?
So, let’s switch out bread for tots and add lots of Canadian bacon and cheese. I mean it’s kind of a winning combination you shouldn’t mess with. Everything is way better with cheese right? Ask my hubs he’s totally in agreement with this. Plus you throw this breakfast casserole together the night before and wake up to a cozy breakfast. Add a batch of mini caramel rolls or crumb banana muffins to make it extra special.
This egg bake is great for holidays and weekends, but it’s so easy you could make it for a random weekday breakfast, too! Imagine surprising the family with this on a Monday morning – that’s my idea of a great start to the week.
Prepare all the Ingredients the Night Before
I love a make-ahead breakfast casserole and for this one it’s as easy as gathering up all the ingredients the night before. It’s made with simple ingredients and you only need 15 minutes to get it in the crock pot.
So grab the tots and eggs and let me show you how easy it is!
How to Make the Casserole
Start with a layer of tater tots, chopped onion, bacon, and both cheeses. Do two more layers of all these ingredients. You should finish with a layer of cheese on top
Crack all the eggs into a large bowl and add the milk, flour, salt and pepper. Whisk them together until the mixture is smooth.
Pour the mixture over the tater tots and other ingredients in the crock pot.
Place the lid on the slow cooker and cook the casserole on low 6 to 8 hours.
If I want to serve this breakfast casserole for a brunch that is later in the morning, I’ll just get everything in the crockpot the morning of and let it cook on high for 2 1/2 to 3 hours. So, you can choose what works best for you! Early breakfast? Let it cook overnight on low.
Recipe Variation Ideas!
We all love to put our personal spin on recipes, don’t we? So, once you try it you can experiment with different add-ins and flavors! Here are some ideas you might want to try:
- You can substitute regular bacon for Canadian bacon but you will need to cook it first! So, fry it in a skillet, chop it up and layer it with the tater tots and cheese.
- Or try adding cooked breakfast sausage – just slice the links into bite-sized pieces. You can also add diced leftover ham!
- If you want to go meat-free, leave out the bacon and add a few more veggies – chopped bell peppers, spinach, and mushrooms would work great! If you use mushrooms, I would cook them first before adding them to the casserole.
- Switch up the cheese! Lots of different ways to go with this – shredded Gruyere, mozzarella, pepper jack or provolone would work great!
Want more easy breakfast recipes? You have to try these, too:
- My kiddos LOVE French toast and my recipe is super easy. Perfect for a weekend treat!
- I love bacon but I hate cooking big batches on the stove – it’s always a splattering, greasy mess! If you want bacon for a crowd you have to try my easy oven bacon. Less mess, less fuss and you get crispy bacon!
- You only need three ingredients to make my sweet cinnamon twists – they are an easy pastry you can make with hardly any effort.

For some added flavor I used garlic powder and ground mustard in with the eggs. Perfect! I love this recipe!

Great additions Emily!

I made this and followed the directions but the casserole was already fully cooked at about 3 hours. It burned my crockpot and smelled bad. It was soggy and tasted bad. No matter how much I scrub I can’t clean the burned egg off. Maybe a crockpot liner should be recommended but it didn’t taste good either so I don’t know. I need to buy anew crockpot now.

This looks & sounds yummy–except, I don’t do tater tots. What coul I use as a substitute? I only eat red/purple potatoes & yams/sweet potatoes.
Michelle Sperr says
Hi Linda. You could substitute with homemade tots from red/purple potatoes or use cubed sweet potatoes! Let me know if you try it and how it turns out!
Linda Ferland says
This recipe looks & sounds yummy. I don’t do tater tots, though. What could I use as a substitute? I only eat red or purple potaroes & yams/sweet potatoes.

This looks & sounds yummy; but, I don’t do tater tots. What could I use as a substitute? I only eat red or purple potatoes or yams.

Anyone have luck making this the day before and starting the crockpot in the morning? And, what is the recommended temperature for ‘done’?
Julie says
You could leave step 2 for the morning and pour the egg mixture over right before turning on the crock pot. I’m not sure the exact temperature for it being done but once your eggs are fluffy it will be good to serve.
Chloe says
Would I be able to sub the ham for normal bacon? Would I have to pre-cook it on the stove?
Julie Evink says
You can substitute that, precook it before you add it to the casserole.
Sage says
Super Great recipe!! Love anything egg tho I’m lactose intolerant. They sell an over the counter remedy for that @ the drug stores. But I will make this when we can get eggs again next month. Thank You for sharing yummy recipes. 🙂
Julie says
I’m glad you enjoy it!
Gayle says
Could you assemble this the night before and cook the next morning?
Julie says
I think that would work fine.
Tesa Torres says
Do you cook bacon prior to adding ?
Julie Evink says
It calls for Canadian Bacon or Ham which is already cooked. You don’t need to cook it again.
Nicole says
Would this work work without using the flour or using gluten free flour?
Julie says
I think either option would be okay, skipping the flour or using gluten free flour.
Anthony says
Do you use frozen or defrosted tater tots?
Julie says
Frozen
Mary says
So you put frozen tater tots right in the crockpit?
Julie says
Yes!
Sal says
Can this be doubled in the crockpot? Would I just cook it longer? I need to feed 30 people Thanks!
Julie says
As long as you have a crock pot that fits it doubled, I think that would be fine. Yes, it might take longer to cook.
Samantha says
Recipe was a hit for a church potluck! Only change was I used 2 cups of Parmesan and wish I added more ham. It was delicious thank you!
Julie Evink says
So glad you enjoyed it Samantha! Thanks for commenting and rating the recipe!

Sorry, dumb question coming up. I just wanted to verify the use of flour. I see it in the picture and on the list in the recipe card but its not in the description above the recipe. And the recipe says remaining ingredients so I just wanted to make sure you really add the flour in with the eggs and milk. I don’t think I’ve seen flour in an egg bake casserole before but i know a lot of people us it in egg based things to thicken, like mac and cheese. Sorry if you’ve already answered this, I tried to check the comments and didn’t see anything.
Julie Evink says
It just got missed in that section. It’s updated. I use flour when I make it, so I’m not sure if it would work without it or not.
Lynn Stephens says
The recipe sounds great but I would like a recipe that feeds fewer people. Thank You
Julie says
You could cut this recipe in half and use a smaller crock pot. Here is a recipe for individually little egg bakes made in foil packets, maybe that would work for you?
