This easy Dorito casserole with ground beef is one of my favorite recipes when we are craving something comforting and satisfying.
It’s a layered casserole with savory taco meat, crunchy Doritos, and lots of cheese!
It’s quick to assemble and then you pop it in the oven to bake – in less than an hour you’ll be digging in.
We love it with all the taco toppings like veggies, sour cream, and salsa. Pretty much any taco topping you like will go with it!

Ingredients for Dorito Casserole
- Ground beef – I like to use lean ground beef, but you can also use lean ground turkey for this recipe!
- Diced onion – Yellow, red, or yellow onions work great.
- Taco seasoning – Use your favorite brand or make homemade taco seasoning.
- Salsa – Pick your favorite spicy or mild salsa so your casserole has the perfect amount of spiciness.
- Rotel – This is canned tomatoes and diced green chile. You can use spicy or mild.
- Sour cream – This is mixed with the taco meat to make it nice and creamy. I also use some for garnish after the casserole is done baking.
- Shredded cheddar cheese – Or try pepper jack cheese, Monterey jack, or Mexican blend shredded cheese.
- Nacho Cheese Doritos – Crush them with your hands or in a bag with a rolling pin.

How to Make Taco Casserole with Doritos
Make the Meat Mixture: Brown the beef and then add the seasoning and Rotel. Once cooked, take the skillet off the heat and stir in the sour cream.



Assemble the Layers: Spread 1/3 of the crushed chips in the bottom of the prepared casserole dish. Top with 1/2 of the beef mixture, add 1/3 of the chips, and sprinkle 1/3 of the shredded cheese over the layer of Doritos. Repeat these layers again finishing with crushed Dorito chips on top.
Bake the Casserole: Cover the baking dish with foil and bake the casserole for 30 minutes. Uncover it, sprinkle more cheese over the top, and bake it uncovered until the cheese is melted.
Don’t Forget the Toppings!
We love lots of toppings on our Dorito casserole – here are some fixings you will want to try!
- Diced tomatoes, green onions, and cilantro. If you want more heat, add some diced jalapeno peppers!
- Add a dollop of sour cream or guacamole.
- Spoon some salsa or pico de gallo over the top.


What else can you add to taco casserole?
Instead of ground beef or turkey, you could add cooked shredded chicken! Or, try adding black beans or pinto beans to the beef mixture to make it even more filling.
Can you use tortilla chips instead of Doritos?
Yes, regular tortilla chips would work great in this recipe.
Recipe Tips
- You can assemble this casserole a day ahead and keep it in the fridge. This makes it easy to pop in the oven the next day for dinner! This makes a great meal to share with someone who needs a hot meal, too.
- Leftover Dorito casserole will keep for three to four days in the refrigerator.
- I don’t recommend freezing this casserole because the chips will get soggy once it’s thawed.

Dorito Casserole
Ingredients
- 1 pound ground beef
- ½ cup onion finely diced
- 1 packet taco seasoning
- ½ cup salsa
- 1 can mild Rotel
- 1 cup sour cream
- 1 ½ cup shredded cheddar cheese
- 9.25 oz bag Nacho Cheese Doritos crushed
- Toppings: sour cream, cilantro, chopped tomatoes etc.
Instructions
- Preheat the oven to 375 degrees F. Coat a 2-3 quart baking dish with cooking spray and set aside.
- Brown the ground beef in a skillet over medium high heat. During the last 2-3 minutes add the onion and cook until onion is translucent and ground beef is cooked through. Drain off any excess beef.
- Add the taco seasoning to ground beef in the skillet and stir to combine. Then add the salsa and Rotel. Stir to combine and simmer for 3-4 minutes.
- Remove pan from heat and stir in sour cream until combined.
- In the prepared baking dish spread ⅓ of the crushed chips over the bottom. Place ½ of the meat mixture on top with another ⅓ of the chips then ⅓ of the cheese in an even layer.
- Repeat the process with another ⅓ of the chips, rest of the meat and ⅓ of the cheese and then remaining chips.
- Cover with aluminum foil and bake in a preheated oven at 375 degrees F for 30 minutes, remove foil top with remaining ⅓ of cheese and bake 5-10 minutes or until cheese is melted.
- Sprinkle the casserole with diced tomatoes and chopped green onions, and serve immediately.
- Top with any additional taco toppings you desire.
