Easy Taco Wraps ~ Stuffed with Cream Cheese, Black Olives, Green Chiles, Tomatoes, Taco Meat & Cheese!
If you ever see me going to work, leaving the house or really doing anything you’ll notice I always have a certain bag with. I’m sure people have wondered what I carry around in that bag. Is it treats? Is it games? Is it just a really large purse? Is it a diaper bag?
I’ll let you in on a little secret. It’s cookbooks. How lame is that? I seriously have a bag with a cookbook, recipe cut out etc in it and I take it pretty much everywhere. Said bag also houses my planner and notebook in case I have a sudden recipe inspiration because one never knows when that is going to happen.
I used to write on scraps of papers when I had a thought or when I was creating a recipe in my kitchen. It kicked my in the butt one to many times. I’d create this great recipe, write it all done, take pictures and then later I’d go to edit pictures and write a post only to find the recipe is gone. Poof! Disappeared. This is quite a terrible event in my life. In order to prevent that I asked my hubs for a planner and matching notebook for Christmas and he came through. It’s a marvelous thing. Next I need the matching bag to carry them around in!
This magical bag housed the inspiration for this wrap for months and it was never loved. It sat there neglected and ignored patiently waiting for me to pull it out of my bag of tricks. I’m not quite sure why I waited this long to embrace this idea. It’s pretty dang magical I’m not going to lie. I’m always looking for a new twist I can make for lunch because in my opinion lunches are the hardest meal to make. Breakfast is pretty straightforward, dinner is also pretty easy to come up with ideas, but for some reason lunch kicks my butt. I want something easy of course, something that’s not to heavy but yet something that is flavorful. Sounds easy right? I don’t know why it seems so hard for me!
I’m in love with wrap because it starts with an adapted version of the ingredients in these Tortilla Pinwheels that I’m pretty much obsessed with. Then topped with taco meat, tomatoes etc and rolled up in a cute little wrap. The hubs didn’t even realized there were green chiles and black olives snuck in there! I didn’t push it to far and left the tomatoes out of his. We had a few leftover wraps so I just rolled them up in tinfoil and left them in the fridge for the hubs to reheat for lunch the next day. I, of course, snuck them to work for lunch too! I might double the recipe next time because they make excellent lunches for bringing to work too!
Easy Taco Wraps
- 1 lb hamburger
- 1 package taco seasoning
- 8 oz cream cheese
- 1 4 oz can green chiles, drained
- 1/4 c. sour cream
- 8 tortillas
- 1/2 c. cheese
- 1 2.25 oz sliced ripe olives, drained
- 1 medium tomato diced
- Prepare taco meat according to directions on taco seasoning.
- In a medium size bowl cream together cream cheese, green chiles, black olives and sour cream.
- Place tortillas on a microwave safe plate, cover with plastic wrap and microwave 30 seconds. Remove from microwave. Spread with cream cheese mixture, evenly dividing between tortillas. Sprinkle with taco meat, cheese and tomatoes. Roll up and serve.
