Hey Hey Hey! I just saw the BOXES of peaches out at the grocery store and that can only mean one thing! PEACH SEASON! It’s kind of like a holiday during the summer right? Everyone is running to get them as fast as they can. Or at least that’s the way it is around here. I love me some peaches, but I’ll be honest, sometimes I cheat like with this Easy Peach Cobbler or these Peaches ‘n’ Cream Bars and use canned peaches.

Other times fresh peaches are totally the way to go like with this delicious Easy Cinnamon Roll Peach Cobbler and Naturally Sweetened Iced Peach Green Tea. It’s like peach heaven around here isn’t it?

You know what else peach season means to me? The summer is nearing it’s end. Sigh. When we get to sweet corn season I know we are hunkering down for the last weeks of summer. As much as I love that sweet corn it’s bitter sweet at the same time!

Back to school has been on my mind lately. Trying to get haircuts scheduled, shopping done etc. Miss K is going to be a big Kindergartner this year! How is that possible?

Last year I took her for a special day and we picked up school supplies, bought clothes and had lunch together. Last night I brought it up to her and asked if she wanted me to go get her school supplies or if she wanted a day with Mommy again. She lit up and exclaimed a day with Mommy! I can’t really say no to her when she was so excited!

This morning she woke up and promptly asked me when we were going shopping. Maybe I should have waited a week or two before asking her if she wanted to do this? I’m going to be hearing about it every day!

Same goes with vacation. I made the mistake of telling the girls we were going to take a quick vacation up north at the end of August with my parents. Miss K has been asking how long it is away for weeks now! It’s hard to explain to a five year old how long away something is that’s for sure. At least I know she’s excited about stuff that’s for sure!

You know what gets this girl excited? THIS DESSERT! You guys seriously sooooo good. I’m drooling just thinking about it. I’ll be honest. I’m a bit lazy and I have never actually baked with fresh peaches. Sigh. The peeling thing just annoys me! I’m so glad I took the time to do it with this dessert and it wasn’t even that hard. Sooooo worth the reward.

There’s only a few simple ingredients to this dessert. I love the fact that it’s heavy on the crumb topping because I’m a bit obsessed with crumb topping!

Peach Cobbler Ingredients

  • large peaches, peeled and sliced (about 6 c.)
  • Tbsp light brown sugar
  • Tbsp lemon juice
  • Tbsp vanilla extract
  • c. all-purpose flour
  • 3/4 c. light brown sugar, packed
  • 1 1/2 tsp baking powder
  • tsp ground cinnamon
  • tsp baking soda
  • c. old-fashioned oats
  • tsp butter, melted

Ohhhh and don’t forget the vanilla ice cream to top it with. It takes it from a 10 to a 10+! Now I’m off to go to the grocery store and get more peaches!

Crock Pot Peach Cobbler

Preparation 00:20 Cook Time 3:00 Serves 8     adjust servings

 

Ingredients

  • 6 large peaches, peeled and sliced (about 6 c.)
  • 2 Tbsp light brown sugar
  • 1 Tbsp lemon juice
  • 1 Tbsp vanilla extract

Topping

  • 1 c. all-purpose flour
  • 3/4 c. light brown sugar, packed
  • 1 1/2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 tsp baking soda
  • 1 c. old-fashioned oats
  • 6 tsp butter, melted

Instructions

  1. In a medium sized bowl, toss peaches with brown sugar, lemon juice and vanilla. Spread evenly over bottom of crock pot. 
  2. Whisk together first 5 topping ingredients. Stir in oats. Mix in butter. Sprinkle over peaches. 
  3. Cook, covered, on low 3-4 hours or until peaches are tender.

Miss K went to pre-school last fall and promptly decided she would not eat the school lunch and I must pack her lunch every single day. I rolled with it. I know they will love it!

We are in the midst of the summer and it’s been a jammed packed one around this household! This is the first year I’ve had to deal with “activities” for Miss K. I love a good old grilled chicken breast, but sometimes I want something with a little more flavor. That’s where this BBQ Chicken Marinade enters the pictures. You guys! It totally takes your grilled chicken up a notch, or maybe even six. You end up with this perfectly sweet, slightly tangy, moist chicken breast. INGREDIENT LIST FOR BBQ CHICKEN MARINADE

  • 1 tsp smoked paprika

BBQ Chicken Marinade

Preparation 00:10 Inactive Time 00:30 Cook Time 00:20 Serves 4     adjust servings


Ingredients

  • 1 lb skinless, boneless chicken breasts
  • 1 Tbsp dried onion flakes
  • 1 tsp smoked paprika
  • 4 tablespoons honey
  • 4 tablespoons French’s Tomato Ketchup
  • 4 tablespoons brown sugar
  • 1 tablespoon soy sauce
  • salt and pepper to taste

Instructions

  1. Rinse chicken and pat dry. In a shallow glass bowl combine all ingredients except chicken. Mix all together. Add chicken, stir to coat. Cover and marinate in refrigerator for 30 minutes up to overnight.
  2. Lightly oil grill and preheat to high.
  3. Remove chicken from marinade and grill over high heat for 15 minutes each side or until juices run clear.

You guys. We had an unfortunate event this past weekend. It involved a bat in our living room. I have never, ever had a bat in the house anywhere that I’ve lived and I’ve decided it is the worst, absolute worst, thing that could ever happen. Well, maybe not that bad, but it is something I pray that it will never happen again.

It all started out at 5 am on Saturday morning when I heard “that sound”. You know the sound a bat makes? I didn’t think I did, but apparently I did because as soon as I woke to it I was hitting my hubs to wake up. After I got him awake and he went to investigate I started freaking even more. He came back to the bedroom and informed me it was either a bird or a bat. Ok, hun I’m not that dumb. It’s a bat, but nice try. Needless to say as soon as he flipped the light on it disappeared.

After locating the bat in the curtains and removing it we went back to our regular routine. We didn’t think much of it other than the fact we needed someone to get our house “bat proofed”. I wasn’t sure who to call so I made an innocent post on Facebook asking my friends recommendations. I quickly received many recommendations.

I also had a few people comment asking if I got the bat tested for rabies. Uh, no can’t say I did. I guess it never dawned on me. Apparently it’s highly recommended that you do this to rule out rabies. Did you know that you can get bit by a bat and not feel it? Neither did I. Tip to you, if this happens to you get the bat tested!

This is when I get a call from my doctor asking me about the situation since she’s my Facebook friend. After A LOT of hee-hawing around on my part and trying to get out of rabies shots we decided our entire family would go in for the series of shots at the recommendation of about every doctor at our local clinic.

Luckily for us the series of shots isn’t as bad as it used to be and we will survive and this will be just a blip on the radar of life. Better than dying from rabies right? Yup, that’s what I thought!

If you are like me you are getting your hands on all the fresh sweet corn you can get right now. It is a main ingredient in almost every meal I have right now. It’s one of my favorite summer treats! I decided it was time I made a delicious, healthy snack out of it too. That’s when this Grilled Corn Salsa was born!

Seriously. I think I’m going to make another batch just to drown my sorrows about our shots in. You can eat this with chips, top your meat or just eat it with a spoon its so flavorful!

  • 2 c. corn, charred or grilled
  • 1/2 c. diced purple onion
  • 1 1/2 Tbsp fresh lime juice
  • 2 vine ripened tomatoes, seeded & diced
  • 1/4 c. chopped cilantro
  • 1 clove garlic, minced
  • 1/2 tsp kosher salt
  • 1/4 tsp ground black pepper

Instructions

Mix all ingredients in bowl. Chill or serve immediately.

Banana Nut Stuffed French Toast - Sweet and sticky bananas stuffed into french toast and covered in chopped nuts. A fun, yet easy breakfast that the whole family will love!

French toast is a meal that’s near and dear to my heart. It was one of the first meals I learned to make for myself (thanks, Dad!) and it made up the majority of my weekend breakfasts growing up.

As I’ve aged and my palate has matured, I have eaten less and less french toast – mostly because I’ve lost the thrill for it. Oh you want me to fry toast soaked in an egg mixture and eat it with maple syrup? Meh. Not worth the effort. Gimme some cereal instead!

I know that sounds preposterous because everyone loves stuff covered in syrup. But it simply wasn’t worth the effort for me to make anymore.

Until now!

I was inspired by a recipe in, of all places, Cooking Light Magazine. There was some version of a banana peanut butter french toast in the magazine and it sounded pure genius.

For this version, however, I decided to make bananas the focus because peanut butter can be a little rich in the morning. As a peanut butter fanatic, that’s saying a lot. Then I thought back to the bananas foster french toast casserole that I made last year and decided to incorporate some of those flavors into the stuffed french toast.

And man was this stuffed french perfect! It was so creamy from the warm bananas, but crunchy from the outer nut crust. Yummm! And did I mention how perfectly sweet it was?! I didn’t even need syrup to eat it!

To make this french toast, there’s not a whole lot to it. You’re still dunking the bread into an egg mixture and frying it on the stove. But there are a couple differences:

  1. Before dunking into the egg, you will make sandwiches with the banana mixture stuffed in the middle.
  2. After soaking in the egg mixture, you’ll completely cover the sandwich in chopped nuts to give a perfectly crunch crust on the outside.

When you’re picking what nuts you want for the crust, it’s really your choice, but I think walnuts or pecans work best. I tried both for this french toast and couldn’t decide which I liked more!

If you haven’t made french toast before, I’d say the most important tip I could give is to make sure to use dry bread. I hate soggy french toast so I even toast my bread a little before using it. This makes it the perfect texture to soak up the egg mixture because it won’t fall apart.

Alrighty, that’s all there is too it, people! Such a super simple, yet impressive breakfast to make for the fam on the weekend. You’re gonna love it!

Banana Nut Stuffed French Toast

Preparation 00:10 Cook Time 00:10 Serves 4     adjust servings

 

Ingredients

  • 1 tablespoons vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon salt
  • 3/4 cup half and half
  • 4 large eggs
  • 4 medium ripe bananas
  • 2/3 cup dark brown sugar
  • 8 slices of brioche bread or another dry bread
  • 3 tablespoons of butter
  • 2 1/2 cups chopped nuts (pecans or walnuts)

Instructions

  1. Add vanilla, cinnamon, nutmeg, and salt to a medium bowl and whisk together until it makes a paste. Add eggs and whisk with paste. Add half and half and whisk together. Set aside.
  2. Slice bananas and add to a separate medium bowl. Add brown sugar and stir together until the brown sugar turns into a paste. Set aside. Place chopped nuts into a shallow bowl or dish and set aside. 
  3. Place 4 slices of bread in a rectangular baking dish in one even layer. Scoop bananas onto slices of bread , about 1/3 cup per slice. Place remaining slice on top of each sandwich. 
  4. Pour custard mixture over the sandwiches. Let them soak for 1 minute and then flip. Let them soak for 1 more minute. 
  5. Remove from custard and place into chopped nuts. Press nuts into the french toast until completely covered. Set aside on baking sheet or large plate. 
  6. Heat 1 1/2 tablespoons of butter in a large saute pan over medium heat. Once butter has melted and begins to bubble, place two sandwiches in pan and cook for 3 minutes. Flip and cook for another 3 minutes on the other side. Repeat with remaining 1 1/2 tablespoons butter and last two sandwiches. 
  7. Slice into triangles and serve immediately. I don't think you need syrup but feel free to serve with the french toast if you just gotta have it. Enjoy!

It was my childhood best friend’s birthday, and after not slumbering, her mother made all 12 of us a glorious breakfast of cinnamon rolls and bacon (seriously, can I have that every morning??).

I can still remember coming down the stairs and seeing this giant pan of cinnamon rolls slathered in icing sitting in the middle of the table. You’d think it was Christmas morning given how excited I was over this sight (food is my life, clearly).

While I am most definitely a self-proclaimed chocolate chip cookie snob, chocolate cupcake snob, and even a scone snob, ever since I first laid eyes on the cinnamon roll, I will take a cinnamon roll in any shape or form. It doesn’t matter if it’s made from scratch, popped from a can, or made in a grocery store bakery—I can’t resist a cinnamon roll.

Given my cinnamon roll weakness, this Easy Cinnamon Roll Peach Cobbler was a real home run.

Whenever I’m at the grocery store and see a batch of perfect-looking peaches, I tend to go a little overboard and buy enough to last me all winter (which is super practical, I know—rolling eye emoji, get at me).

It’s like a compulsion, and while logically I know there’s no way I can eat all of them before they go bad, I can’t seem to help myself.

So, in addition to slicing them and eating them, they get put in everything—smoothies, cereal, fruit salad, and cobbler. Really, really, ridiculously good cobbler.

This Easy Cinnamon Roll Peach Cobbler is made with fresh peaches, sweet spices, and pre-made cinnamon roll dough. The final component of this cinnamon roll peach cobbler recipe is a sweet vanilla glaze, making this a quick and easy summer dessert! Guys, can we just talk about the convenience of this homemade cobbler recipe for a second?

In essence, you make a peach pie filling, throw it in a baking dish, and top it with pre-made (but super cinnamon-y and gooey) canned cinnamon roll dough.

Fifteen minutes prep work max. Then you put it in the oven, let it get all hot and bubbly, and dig in.

Preferably with ice cream.

Easy Cinnamon Roll Peach Cobbler

Preparation 15 Cook Time 45 Serves 8     adjust servings

 

Ingredients

  • 5 large peaches, pitted and sliced
  • 3 Tbsp granulated sugar
  • 2 Tbsp all purpose flour
  • 1 Tbsp water
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 can of pre-made cinnamon roll dough
  • 1/2 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 1-2 Tbsp heavy cream

Instructions

Preheat oven to 350 degrees and grease a 2 1/2 quart baking dish. Set aside.

In a medium sized saucepan, heat peaches, sugar, flour, water, cinnamon, and nutmeg over med-low heat, for about 5-6 minutes, stirring occasionally. Allow mixture to cool, about 5 minutes.

Pour peaches into the baking dish. 

Cut each cinnamon roll into fourths, and sprinkle the dough evenly over the top of the peaches. 

Tent a piece of foil over the baking dish, and bake for 20 minutes.

Remove the foil, and bake the cobbler for an additional 20-25 minutes, or until peaches are bubbling and cinnamon rolls are golden brown. 

Whisk powdered sugar, vanilla extract, and 1 Tbsp heavy cream together. If the glaze is too thick, add the additional Tbsp of heavy cream. 

Once the glaze is at your desired consistency, drizzle it over the top of the cinnamon roll peach cobbler. 

Store leftovers in the fridge.

Strawberry Limeade Sangria

As I sit here writing this post while staring out at the glassy surface of the lake I’m overwhelmed by the idea of making this delicious Sangria again. I mean what better drink to enjoy while at the lake? I’m not really pick when it comes to Sangria. Really, almost any will do. I love Rainbow SangriaPeach Rosé Sangria, or Red Apple Sangria!

With three small children at the lake there isn’t a lot of time for relaxing to say the least. You are either, feeding them, bathing them, swimming with them, fishing with them (i.e. baiting the hook every five seconds) or watching them like a hawk, because, well because there is WATER.

Thank goodness we started the “You wear your life jacket anywhere near the water” rule as soon as they could walk. The two oldest know this and adhere to it pretty strictly. The third one will quickly learn this when he becomes mobile!

Strawberry Limeade Sangria

My brother and his wife were camping at the campground across the lake this weekend so we decided it would be fun to have a few of us go out on the pontoon and cruise around the lake looking at houses. You see, this is one of my favorite past times and I’m pretty sure I’d be content to take someone out every weekend to do this! So, if you are in the area let me know!

Unfortunately it gets a little bit tricky when there are small children involved. The two oldest get BORED quickly, the youngest HATES his life jacket. Tons of fun to be had. Or not.

When my Mom volunteered to come up and stay with the kids while we had a little adult time I wanted to scream HOORAY!!! I totally took her up on the offer. This Mommy has been feeling a little burned out and it was great to be minus the children for two hours. Love them dearly, but it’s healthy to get away I’ve figured out too.

Strawberry Limeade Sangria

I’m pretty sure the only thing missing on that pontoon was a big pitcher of Sangria! How amazing does that sound? Cruising, laughing, chatting while enjoying a glass of your favorite Sangria? Sign me up! I’m totally there.

Whatever parties you have this summer Sangria is a must have as it seems everyone always enjoys it. My husband is a beer man and refuses anything “girly” but he even enjoys a glass of Sangria when I make it!

Strawberry Limeade Sangria

  • 750 ml pinot grigio
  • 1 cup strawberry vodka
  • 12 oz frozen limeade concentrate
  • 14 oz frozen strawberries
  • 4 limes sliced thin

Well the little brother’s wedding weekend is over and done with and we survived! My hubs was a groomsman and I forgot how exhausting two children can be when you are doing it solo! It’s horrible! It also makes me appreciate him that much more. Not that he didn’t help out with them because he did as much as he could and we had tons of family there who were more than awesome about lending a hand. I succeeded for the most part. Miss RyRy may have sputtered sweet potatoes all over her dress during the reception but by that time I had thrown in the towel of trying and gave way to the madness. The pictures and ceremony were done with and it was kind of a free for all after that!

Everything, for the most part, went off with out a hitch. In fact nothing major happened. Except about 50 extra people showed up at the wedding reception we think and people ended up sitting outside on picnic tables on the deck, but it was at a lake so it wasn’t that rough! The mother of the bride may have had to run to a store and get more forks and spoons because they ran out. You know every wedding has to have a few of those “moments” or there wouldn’t be anything to remember! The main thing is that they are married and get to start their lives together! Onto the rest of their lives and happily ever after. I loved that our Pastor told them to take off their rose colored glasses if they didn’t think marriage was hard because it is. So true and honest about it. It’s work but it’s worth it in my opinion. Especially after realizing I could never be  single mom after this weekend… haha! Love ya hubs!

Can you believe it’s August? I can’t and you know what that means? The kiddos are going to be heading back to school soon. It’s time to start picking out their school clothes, school supplies and get back into the schedule of school. Where or where did summer go? I can’t believe I’ll be picking out preschool supplies for Miss K next year at this time. Don’t mind me while I wipe away a tear. Eeekkkkkk. Part of school is trying to figure out brown bagged lunches, after school snacks and dinner once again. Trying to get it all jammed into a few hours in the evening. Today I’m sharing these amazing No Bake Chocolate Chip Energy Bites which are awesome for schools lunches and after school snacks! I’m a total snack lover and these satisfy my sweet tooth while being back with oatmeal, coconut, flax seed and chia seed to be not only tasty but a healthier treat too! If you don’t like coconut don’t get scared away from these. The hubs doesn’t and he munched on these constantly!

No Bake Chocolate Chip Energy Bites

Preparation 20 minutes Serves 30 Balls     adjust servings

Ingredients

  • 2 c. quick oats
  • 1/2 c. mini chocolate chips
  • 2/3 c. unsweetened coconut flakes
  • 1/2 c. peanut butter
  • 1/2 c. honey
  • 1 tsp vanilla
  • 1 Tbsp ground flaxseed
  • 1 Tbsp chia seeds
  • 1/4 tsp salt

Instructions

  1. Mix all ingredients together in a mixing bowl. Refrigerate 1 hour.
  2. Roll into 30 balls.
  3. Refrigerate for up to one week or freeze.

As a mom of five children, I love simple and quick recipes. I especially love recipes that are simple but work and taste wonderful (because who doesn’t love these kinds of recipes). I am a huge fan of Pillsbury’s crescent rolls in a tube. Regardless what the crescents are used for, the recipe comes out phenomenal. The crescents are so buttery, flakey and just melt in your mouth. Though the crescents are amazing on their own, I especially enjoy filling the crescents with different fillings. They crescents can be filled with broccoli, chicken, and cheese. Or those of us that have a love for spinach and artichoke dip is going to love crescent with the inspired dip filling. Crescent puffs filled with chicken, spinach, and artichoke as mini appetizers with the inspired dip in every bite. Or there are even buffalo chicken puffs that are inspired by chicken buffalo dip. Every bite is a flakey dough with the dip filling. So so good.

Today I am sharing a really special recipe because it’s so easy but has such a wow factor to it. Crescent rolls rolled out as a ring and filled with fresh spinach your favorite herbs, green onions and of course cheese. Once baked, all of the ingredients come together and the ring makes for a treat.

My hubby and I host our youth’s Bible study at our home once a week. We love having company at our home. By love having company, I mean we have guests like twice a week, lol. If there is a gift of hospitality and hosting, I think God blessed me with it. I love to create new recipes and serve friends, family and whomever we are having over. My husband, Tim, is heavily involved in ministry and serving others. He travels on a mission’s trip at least once a year. The more he travels, the more people we meet that then come and visit us when they are in the area. Speaking of mission’s trips, remember in 2009 when there was that huge earthquake in Haiti? Well, my better half was in the midst of it on one of his trips. He witnessed firsthand as five and four-story buildings crumbled to rubble. He heard the screams and heartache of loved ones lost and crushed the building that feel. What an experience!

Having such a large family, hosting can sometimes be a challenge. I don’t always have too much time on my hands to make an impressive meal that I can set on the table. That’s why I love recipes like this ring I am sharing with you. Not only is the ring very attractive when served, it truly is satisfying and very filling. All you need is a side salad or soup with a no-bake dessert and friends and family will be wowed by your amazingness. Ha!

Of course, you don’t only need to be prepare this recipe when you have guests. It’s a wonderful recipe to enjoy for dinner or brunch with your hubby and kiddos. This ring reheats well if you want to enjoy it the following day. A great treat to reheat for breakfast the following day!

Spinach and Cheese Crescent Ring

Preparation 12 Cook Time 22 Inactive Time: Total Time: 00:30 Serves 8 servings     adjust servings
Spinach and Cheese Crescent Ring

 

Ingredients

  • 2 tubes crescent rolls

Filling

  • 2 cups lightly packed spinach
  • 1/3 favorite herbs (cilantro or parsley)
  • 1/3 cup green onion, chopped
  • 2 cups shredded cheese
  • 2 Tbsp butter, melted

Topping

  • 1 tsp bread crumbs
  • 1 Tbsp butter, melted

Instructions

  1. Chop spinach, green onion and herbs. Add Mozzarella and butter. Mix well.
  2. Layout crescent around pan overlapping triangles.
  3. Add filling to dough where the triangles overlap.
  4. Bring over the corners of triangles and tick under the center of ring, lightly press down. Continue all the way around the ring.
  5. Brush tops of crescent with butter and sprinkle bread crumbs.
  6. Bake 18-22 minutes until crescents are golden in color. Serve and enjoy!

Can we talk about how difficult it is to make beige food look pretty? I apologize in advance that this recipe is far from beautiful, but what it lacks in beauty it makes up for in flavor. Give me PB and banana everything!

My brain is already slowly transitioning from summer to back to school mode. Here in Arizona school starts at the end of July (crazy, right?!). When you start to see make-ahead breakfasts and lunch box ideas on my blog you know I’m thinking about back to school. This year our youngest starts preschool, which means a couple mornings each week both of my kids will be at school. I’m not really sure how I feel about that. Happy? Relieved? Sad? Nostalgic? Yes, yes, yes and yes. I can’t believe we’re here already. It is so incredibly true that the days are long and the years are short.

Anyway, enough blubbering from this emotional mama, let’s talk overnight oats! Our family loves oats and I make some type of “oatmeal” every week: Baked Oatmeal, Oatmeal Cups or Overnight Oats. The thing that’s great about this recipe is that there is no cooking involved. You just mix up the ingredients, let them sit in the fridge overnight, and breakfast is served. You can choose to heat your oats in the microwave right before serving (my preference), or you can eat them cold.

I absolutely love that these oats feature the combo of peanut butter and bananas; the flavors are so comforting and hearty. I usually add extra peanut butter to the oats right before serving because I love to see those thick swirls of peanut butter. It’s like they’re calling to me, “Grab a spoon, let’s get this day started.”

Ingredients

  • 2 cups milk (I use unsweetened almond milk)
  • 2 teaspoons chia seeds
  • 2 - 3 tablespoons pure maple syrup or honey
  • 2 tablespoons peanut butter (plus more for serving)
  • 2 cups old fashioned rolled oats
  • 2 bananas, sliced

Instructions

In a large bowl combine milk, chia seeds, syrup and 2 tablespoons peanut butter. Stir in oats. Cover and refrigerate (or transfer to individual bowls/glasses/jars). Refrigerate overnight, until the oats are tender and the mixture is creamy.

For serving: Swirl in a little extra peanut butter (optional), then top the oats with sliced bananas. You can also add an extra drizzle of syrup or honey.
