- Ground beef – I recommend using lean ground beef so that your casserole doesn’t turn out super greasy.
- Potatoes – Slice up some russet potatoes or yellow potatoes to use in this yummy casserole recipe.
- Beef broth – Chicken broth and vegetable broth will also work.
- Cream of mushroom soup – You can use cream of chicken soup if you prefer!
- Onion – Dice up a yellow onion or white onion to use in this recipe.
- Minced garlic – Freshly minced garlic is a must-have ingredient to add so much flavor to this ground beef casserole.
- Flour – Use a little bit of flour to thicken up the meat sauce mixture that you’ll pour into this casserole.
- Butter – Salted and unsalted butter will both work.
- Shredded cheese – Monterey jack cheese and colby jack would be yummy in this dish. You can also use shredded cheddar, mozzarella or any other cheese you want.
- Milk – For best results, use whole milk. But 2% milk works as well!

How to Make Ground Beef and Potato Casserole
Preheat your oven to 375 degrees Fahrenheit and then grease a 9×13 inch baking dish with non-stick spray and set aside.
Peel and slice the potatoes thinly, about ¼ inch thick.
In a large skillet, melt the butter over medium heat and then add the diced onion and garlic and sauté until the onion is translucent and garlic fragrant.
Add the ground beef to the skillet and cook until browned and cooked through. Season with salt, pepper, oregano, and paprika and stir until well combined.
Drain excess fat from the skillet, then sprinkle the flour over the beef mixture. Stir well to combine, and cook for another minute to brown the flour.
Gradually add the beef broth, milk and cream of mushroom soup to the skillet, stirring constantly. Continue cooking until the mixture thickens slightly, forming a gravy-like consistency.
Place the sliced potatoes in the bottom of the prepared baking dish, in an even layer, then sprinkle 1 cup of cheese over the top. Then spread the hamburger mixture on top.
Cover with foil and bake in preheated oven at 375 degrees Fahrenheit for about 45 minutes or until the potatoes are tender.
Uncover the dish, sprinkle the remaining shredded cheese evenly over the top, and bake for another 8-10 minutes or until the cheese melts and bubbles.
Remove from the oven and allow to cool for a few minutes. Garnish with fresh parsley and serve.
How to Store Leftover Ground Beef Casserole
Transfer leftovers to an airtight container or tightly wrap the casserole dish in plastic wrap or aluminum foil.
FRIDGE: Store leftovers in the refrigerator for 3-4 days.
FREEZER: Cooked potatoes may not freeze, thaw and reheat well but you can store cooked leftovers if needed! Leftovers will keep for 2-3 months in the freezer.
Can I make ground beef and potato casserole ahead of time?
This is a wonderful make ahead dish! For best results, I recommend freezing an unbaked casserole for best results. Just cover tightly in plastic wrap or aluminum foil and store in the freezer for 2-3 months. You can thaw overnight in the fridge or heat from frozen.
Just pop into the oven and baked until heated through. If you cook from frozen, keep in mind that you’ll likely need to add on some extra cook time.
Can I use something other than ground beef in this recipe?
Ground turkey and ground chicken are both fantastic lean options to use in place of ground beef. If you do use ground beef, I highly recommend using lean beef so that the casserole isn’t greasy.
Do I need to cook meat before putting it in a casserole?
Not all casseroles require you to cook the meat before adding it to casserole. However, for this casserole you need to cook the ground beef before turning it into the creamy filling. Brown the beef on the stove-top, drain well and then use in the filling!
