Why you’ll love this recipe for Hamburger Stroganoff
- Ready in 30 minutes. Just did a little dance over that one, right?
- Budget friendly, but delicious so the whole family will enjoy it and you won’t need to be a short order cook.
- Filling, delicious and easy to make with pantry staples. That recipe you can always fall back on in a pinch.
Hamburger Stroganoff Recipe Ingredients
- Onion – Dice fresh yellow onion or take the shortcut and grab frozen diced onion at the grocery store.
- Garlic – Fresh is best, but in a pinch we used minced from the refrigerator which is not as flavorful so we add a bit extra.
- Butter – We use salted butter, either will work.
- Ground Beef – You could also substitute ground turkey or chicken, but I find beef gives it best taste.
- All-purpose flour – Cornstarch would also work to thicken it.
- Salt & Pepper – Adjust to your preferences.
- Sliced mushrooms – I use canned mushrooms because I can keep them in my pantry, but you can also slice up fresh mushrooms. We recommend a white mushroom but you can use cremini or portobello also.
- Cream of Chicken Soup – Seems a little odd, but this is what Mom always used. You can substitute cream of mushroom if you’d like.
- Sour Cream – Another option to lighten it up is use Greek yogurt instead of sour cream or do a half and half mixture.
- Egg Noodles, mashed potatoes or rice – Whatever you prefer to serve your beef stroganoff over.

Flavor Enhancers for Beef Stroganoff with Hamburger
Here’s some ideas on adding a new flavor to your dish!
- A teaspoon of dijon mustard
- Worcestershire sauce
- Dash of smoked paprika
- Splash of hot sauce
- Chop up raw bacon and add it in with the ground beef
- Sprig or two of fresh thyme or 1/4 tsp dried thyme
Expert Tips for Easy Hamburger Stroganoff
- Make sure to remove the skillet from the heat before stirring in sour cream because if it gets to hot it will curdle.
- If your sauce is to thick stir in a little beef broth to thin it out.
- If you have leftovers refrigerate them in an airtight container for 3-4 days. You can also freeze the stroganoff (not the noodles). Defrost in the refrigerator overnight and warm in microwave or on stovetop in saucepan to reheat.

Too much sour cream but not too bad.

I bought Campbells Cream of Chicken soup and I was questioning why it would be Cream of Mushroom soup instead? The Cream of Chicken had pink chunks of chicken in it which totally looked gross mixed in with the beef strogenoff. I’ve never seen anything like that and it looked unappealing. I picked out the chuncks of chicken as I went along, so the remaining were too small to notice.

I make this same recipe which my mom use to make but i use cream of mushroom and i add a little heavy cream to it! I also use a shallot instead of regular onion! Its soooooo good!
Samantha says
Recipe was a little too sour creamy, so I added an additional 1/2 can of soup and a few generous dashes of worchestershire sauce.
Anna says
My mother made this back in the late 50’s but she always added a little kitchen bouquet to add a darker color and make it more appetizing. And hers did look more appetizing with the beef color.

I started making this when I was a teenager (we won’t say how many years ago that was!). I hadn’t made it in several years and found my old recipe and made it the other night. It’s such a great recipe. And I agree it’s much better than HH! 🙂

So glad you enjoyed it Caryn!

I know, I know everyone will want to shoot me for this but my very favorite way to eat this is over mashed potatoes. 😀
Kelli says
This was amazing! I did substitute the cream of chicken with cream of mushroom and added half a can of beef broth. The chicken option sounded strange to me – I don’t know. I’ve been looking for a recipe similar to the one of my youth and you definitely hit it! Thanks!!!

I sub the chicken out with mushroom sometimes too! Glad you enjoyed it!

Awesome Karen!

I started making this in 1968, and this is the first meal I made for my husband (then boyfriend) in 1978. The differences in my recipe are: no flour and add a little milk, simmer for 20 minutes instead of 10. This is one of our favorites!
Deb says
This was okay, I found it a little rich, especially the next day. Might leave out the sour cream next time.
cs martin says
I always add a little cream cheese to it too.
Julie Evink says

I added some peas to mine to add a little veggie. Yum!

This is how I grew up with it, it’s still a family favorite and standby in our house as we almost always have everything.
Julie Evink says
It’s definitely one of my “go to” recipes when I have no idea what to make!
amy says
I use 1 can of beef consomme instead of the cream of chicken! It gives it more of the sour creamy/beefy flavor that my boys love!
Julie Evink says
Great ideas Amy!
