Lemon Roasted Asparagus ~ Fresh Asparagus Roasted in the Oven with a Lemon Drizzle and Parmesan!
This weekend Miss K turned the big “3”! Man, oh Man where on earth did the time go? This year was the first year she really got that she was having a birthday and she was so excited. I did an Olaf theme party because he’s cute and she loves him. Plus it was easy because there are so many things on Pinterest for it! I even went all out with themed food and you just might see that post coming to you soon if you are in need of a birthday party idea that’s super easy! Whenever anyone asked her what she wanted for her birthday she promptly replied, “Olaf!”
Saturday morning she woke up and I sang “Happy Birthday” to her and she giggled and goes, “Are my friends here for my party?” Needless to say it was a looonnnngggg day until 5 pm as she not so patiently waited for everyone to come over so she could have her party! She got spoiled and loved every moment of it. It’s so fun to see those moments through a child’s eyes even if it’s a bit of work to get the day ready! I can’t wait to see what this year bring for Miss K and her adventures. There’s never a dull moment in her life!
It’s asparagus season around here and I’m bringing you a fresh, lemony, delicious recipe today. My mom is stuffing my fridge full of asparagus and I’m loving every moment of it. It’s great because I don’t even have to go pick it. It just appears! Yes, that’s right. Around these parts we go pick wild asparagus and it’s awesome. Apparently my family knows my love of asparagus because Mom put some in my fridge and my sister-in-law stopped over with some too. Those ladies are pretty awesome and I’m just a little spoiled!
- 1 lb fresh asparagus trimmed
- 2 Tbsp olive oil
- 2 tsp grated lemon peel
- 2 garlic cloves minced
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/4 c. Parmesan cheese
- Preheat oven to 425 degrees.
- Place asparagus in 15x10 in pan lined a silplat liner or greased.
- Mix remaining ingredients except Parmesan cheese in a small mixing bowl. Drizzle over asparagus. Toss to coat.
- Roast 8-12 or until crisp tender. Remove from oven and sprinkle with Parmesan cheese.
