Have you started dreaming of everything Thanksgiving yet? I have! On the top of my list is Crock Pot Stuffing, Easy Homemade Gravy, Chocolate Pecan Pie…you get the idea. Pretty much all the Thanksgiving goodness!
For our family’s Thanksgiving I’m in charge of the mashed potatoes so I’ll be sure to use my Mom’s recipe for Make-Ahead Mashed Potatoes and take the stress out of things! I’m all about taking the stress out of things at holidays. Think make-ahead recipes like Corn Pudding Casserole, crock pot recipes and anything I can do to make things a bit more simple this time of year!
I love the hustle and bustle of the holidays, but yet, I get slightly stressed out and by the end of the season I’m ready for January. I’m ready to curl up on the couch, fire roaring and a White Chocolate Latte in my hand trying to recover! Our families are already texting and emailing about Christmas plans and where and when we have to be everywhere. Uffda. Eeeeek. So busy! I love my family but it’s slightly exhausting trying to get the food made, presents bought, to the right place and keeping the kids healthy and not sleep deprived! Anyone with me?
And can we talk about all the FOOD at the holidays? By January you usually have to roll me around! I don’t have a lot of self-control and tend to indulge in a few to many goodies. I remember saying last year that I was going to bring a fruit or veggie tray to every gathering so I had a somewhat healthy option to munch on!
That’s why I love this lighter twist on a traditional Sweet Potato Casserole. It has all the flavor of the traditional sweet potato casserole but it is lightened up a little so you don’t have to feel so guilty! I opted to nix the marshmallows I always see on this casserole in the Midwest and went for toasted pecans. I love the flavor of the toasted pecans! I always passed up this casserole because marshmallows on it just seemed weird to me!
There will be no passing up of this at my holiday gatherings! It’s a bit lighter and just as delicious, so if you are looking for some dishes that you don’t have to feel guilty about, but are still the traditional holiday staples this is it!
To make this Light Sweet Potato Casserole a little bit lighter I used Truvía® Brown Sugar Blend and Truvia® Nectar. Light Sweet Potato Casserole
- 3 1/2 lbs sweet potatoes washed, peeled and cut into 1'' cubes
- 2 Tbsp + 2 tsp Truvia® Nectar?
- 1 1/2 tsp vanilla
- 1/2 c. milk
- 1 egg
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/8 tsp ground ginger
- 1/4 c. Truvía® Brown Sugar Blend
- 1/2 c. toasted chopped pecans
- Preheat oven to 350 degrees. Spray a 2 quart casserole dish with non-stick cooking spray. Set aside.
- Place sweet potatoes in large pot and cover with water. Cover pot and bring to boil. Boil about 7 minutes or until tender.
- Drain sweet potatoes. Transfer to large bowl. Add Truvia® Nectar?, vanilla, milk, egg, cinnamon, nutmeg and ginger. Whip with an electric mixer until smooth. Spread sweet potato mixture in prepare casserole dish.
- Sprinkle Truvía® Brown Sugar Blend and toasted pecans on top of sweet potatoes.
- Place in preheated oven and baked for 45 minutes or until hot and beginning to brown. Serve immediately.
