Lighter One Pot Lemon Shrimp Alfredo ~ Delicious and Easy Lemon Shrimp Alfredo that has been Lightened Up and Made in One Pot! Perfect for the Weeknight!
One would think adding a back splash in your kitchen would be a fairly straight forward project especially when you are hiring it done right? Not in my life. Nothing is ever that easy it seems. First I had to pick out the back splash and that was overwhelming in itself. I never knew there were so many possibilities! I need an interior designer when it comes to this stuff. So I finally made my decision after buying four different ones and bringing them home, which I recommend to anyone. Seriously they look so different when you actually get them in your kitchen! I picked out the one I wanted and then we went back to return the others and purchase all the back splash and grout and all that fun jazz. Of course they didn’t have enough of the back splash in stock that I wanted so we got what we could. I ended up going to a different town to get the rest which was fine.
Fast forward three weeks to the night before the tiler was supposed to come, which is on a Saturday. Dear hubs next time try to schedule this during the week when I’m gone and not on the weekend when I actually need to use my kitchen for let’s say blogging?! Not thinking very far there were we? Anyways he rips open the box I went and picked up on my own to make sure we had enough. That’s right. Wrong back splash. It’s just a tiny bit different and about two letters off in the SKU number. Impressive Julie, impressive. My loving husband actually laughed at me and said oh well it’s happens and that he would just get up at the crack of dawn and go get the right stuff which included driving a hour to the store. I love that man. Maybe I’ll forgive him for scheduling the tile guy on a Saturday. Maybe. Let’s hope it’s all worth it in the end and I love that back splash right?
I used Lemon, Shrimp and Nutmeg to develop this amazing, easy and delicious recipe, Lighter One Pot Lemon Shrimp Alfredo. And man is it awesome! It literally uses one pot and it’s the easiest week night meal ever. Plus, it’s lighter! The cream sauce is made with skim milk and chicken broth so you don’t have to feel guilty about eating it, yet it’s packed with delicious flavors!
Lighter One Pot Lemon Shrimp Alfredo
- 8 oz fettucine
- 1 Tbsp olive oil
- 4 cloves garlic minced
- 3 Tbsp all-purpose flour
- 2 1/2 c. low sodium chicken broth
- 1 1/2 c. low fat milk
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/8 tsp ground nutmeg
- 1/2 lemon juiced
- 12 oz peeled & deveined cooked shrimp tail-off
- 1/2 c. freshly grated Parmesan cheese
- Parsley for garnish
- In a large skillet over medium heat warm olive oil. Saute garlic for 1-2 minutes stirring, until fragrant. Stir in flour. Slowly whisk in chicken broth until smooth and then milk. Stir in salt, pepper, nutmeg and lemon.
- Bring mixture to a boil and add fettucine to skillet. Simmer for 15 minutes stirring throughout. Add shrimp and continue to simmer 5 minutes or until pasta is cooked through and shrimp is warm.
- Stir in Parmesan and garnish with parsley.
