Mexican Breakfast Quesadilla

Breakfast Quesadilla Recipe:
Imagine a perfectly crunchy tortilla shell stuffed with egg, ham, taco seasoning, and cheese the topped with an avocado cilantro salsa. Doesn’t it sound like the perfect recipe to start the day with?
I love to experiment with foods. This idea for this Mexican breakfast was inspired by our love for Mexican food. I absolutely love myself some guacamole, chicken quesadillas and of course a one-pan easy Mexican casserole. Plus, you guys seem to love this breakfast quesadilla recipe for Bacon Cheese & Egg Quesadillas so I thought the marriage between Mexican food and your favorite quesadilla recipe was a great idea!
Breakfast is the most important meals of the day and I totally agree. It’s the meal of the day I most enjoy preparing. The family is usually up and starving (we have five children) and all are ready for a hearty breakfast. They all can’t wait to eat! Ha, I am right there with them on that one. I like to change things up a big for breakfast, if you serve the same thing over and over, you tire of it.
For breakfast, we either enjoy oatmeal, some type of breakfast sandwich or eggs. Eggs are most used in our breakfast menu I’d say. We like to change up the way the eggs are served though. This is the perfect example, making scrambled eggs and putting a fresh spin on them.
Not only are the breakfast quesadillas wonderful themselves. I love the added avocado cilantro salsa that goes with them. The taco seasonings give it a Mexican twist and when you top the quesadillas with the salsa it’s a beautiful combination and so good for breakfast or lunch (would even work for a lazy dinner.)
Ingredients for Breakfast Quesadillas:
- Tortillas
- Eggs
- Taco seasoning
- Choice of meat
- Cheese
- Tomatoes
- Avocado
- Cilantro
- Sour cream, for serving
Only a few ingredients and you are on your way to enjoying these delicious breakfast quesadillas!
How to Make a Breakfast Quesadilla
Can I substitute the ingredients for these Breakfast Quesadillas?
Substituting vegetables:
You can add different kinds of vegetables to the scrambled eggs. I just had the tomatoes in the recipe. However, cubed pepper may be added, corn may be added. If you want to add some greens to the quesadillas, chopped fresh spinach would also work great. It really doesn’t matter what you use for the vegetable. Anything that reminds you of Mexican food. You don’t want to over stuff the vegetable since you are serving this with an avocado salsa.
Substituting meat:
The cubed ham may be substituted for a different meat if desired. Bacon or sausage may be used instead. You can also skip the meal altogether if you would like the quesadillas to be meatless.
How to freeze breakfast quesadillas:
These easy ham and cheese quesadillas are great to freeze for busy days.
We really enjoy cooking together as a family. The kids love to get into the kitchen with me and make food. This is the perfect recipe to make together with your children, triple the recipe and freeze the quesadillas. Then, on busy mornings or if you just don’t feel like
To freeze the quesadillas, prepare everything as instructed, just don’t cook the quesadillas once there are filled.

Mexican Breakfast Quesadilla
Ingredients
- 4 eggs
- 1 Tbsp half & half
- 1 small tomato cubed
- 2 slices ham cubed
- ¼ tsp taco seasoning
- ½ cup shredded cheese
- Salt & pepper to taste
Avocado salsa-
- 2 medium tomatoes cubed
- ½ ripe avocado
- Salt & pepper to taste
- 1 tsp lemon juice
- 1 tsp cilantro optional
- 3 tortillas
- 1 ½ tsp oil cooking
- Sour cream optional
Instructions
- Whisk together the eggs and half & half.
- In a skillet, on med/high heat, heat 1 teaspoon oil. Add the cubed tomatoes and ham. Once the tomatoes and ham are hot, pour in the egg mixture. Cook until eggs are cooked, mixing as needed to scramble. Remove from heat to lightly cool.
- Add the scrambled egg mixture onto one side of a tortilla, topping it with cheese and close. Repeat with remaining ingredients.
- Add ½ teaspoon oil to skillet, add two quesadillas into skillet. Flip once tortilla is crispy.
- Meanwhile, prepare salsa. Cube the avocado. Dice the tomato. Add all the ingredients for the salsa into a bowl and mix.
- Cut the quesadillas into triangles. Serve quesadillas with sour cream or salsa.
