Overnight Caramel Apple French Toast ~ Delicious, Make Ahead Breakfast! French Toast Casserole Loaded with Caramel and Apples!

Overnight French Toast Casseroles are kind of my “thing” if you haven’t noticed this before. I have the amazing Overnight Pumpkin Cheesecake French Toast Casserole perfect for this time of year. Then you have the traditional Overnight French Toast Casserole for all you purists out there.
Today I’m introducing you to the newest member of the French Toast Casserole Family. Drum roll ladies and gents…. it’s the Overnight Caramel Apple French Toast Casserole and I promise you it won’t disappoint. It’s loaded with apple pie filling and topped with a delicious caramel sauce instead of syrup. How can you really go wrong with this combo?
The holidays are perfect to try this recipe out but honestly it’s good anytime you want to spoil yourself or your family. You see I love treating my family to a delicious breakfast over the holidays or weekends, but let’s great real. I’m not all about getting up in the morning and slaving over it then waiting for it to cook. It’s just not going to happen. It’d rather be enjoying my cup of coffee. That’s why I have an adoration for Overnight breakfasts like these French Toast Casseroles. I can whip them up the night before, pop them in the fridge, do a few finishing touches while my oven preheats in the morning then throw it in the oven and let it bake while I enjoy that cup of coffee with my name on it.
Sounds lovely doesn’t it? Plus it makes you look like a rockstar and trust me I’m all about making myself or you look like a rockstar in the eyes of family and friends.

Overnight Caramel Apple French Toast Casserole
Ingredients
- 1 loaf sourdough bread tore into pieces
- 1 21 oz can Lucky Leaf apple pie filling
- 8 eggs
- 2 1/2 c. milk
- 1/2 c. heavy whipping cream
- 2 c. spice cake mix
- 1 tsp cinnamon
- 2 tsp vanilla extract
Topping
- 1/2 c. all-purpose flour
- 1/2 c. firmly packed brown sugar
- 1 tsp cinnamon
- 1 tsp salt
- 1/2 c. butter
Caramel Sauce
- 1/2 c. butter
- 1/2 c. sugar
- 1/2 c. packed brown sugar
- 1/2 c. whipping cream
- 1 1/3 c. powdered sugar
- 2 tsp vanilla extract
Instructions
- Spray a 9x13" glass baking dish with non-stick spray.
- Layer half of bread in baking dish. Spread apple pie filling over bread. Top with remaining bread.
- Whisk together eggs, milk, heaving whipping cream, cake mix, cinnamon and vanilla extract in a large bowl. Pour mixture over bread.
- Cover baking dish and store in the fridge overnight or for several hours.
- In a small bowl add flour, brown sugar, cinnamon and salt, stir until combined. Cut butter into mixture. Store in fridge overnight and several hours.
- Preheat oven to 350 degrees.
- Remove french toast casserole from fridge, uncover and drop topping by the spoonful randomly across french toast casserole.
- Bake for 1 hour until the center is set and edges are browned.
- Prepare caramel sauce half way through french toast baking. In a small saucepan combine butter, sugars and cream in saucepan. Cook over medium heat until sugar is dissolved.
- Cool for 20 minutes.
- Stir in powdered sugar and vanilla until smooth. Top casserole with caramel sauce

So I read through this and made some changes for adults….
I used peaches instead of apples ( 2 cans)
Made this ala mode
Used a mix of maple and bourbon ( in the caramel sauce to drizzle over ice cream)
Finished off w/ a sprinkle of bits of finely rendered bacon
* basically turned it from breakfast into a boozy sweet n salty dessert*

In the oven and smells WONDERFUL!! I easily halved the recipe and put it in a 7 x11 glass baking pan, because there are only 2 of us. (I am practicing for Thanksgiving breakfast with extended family.)
Also used Chasllah bread because it was what I made yesterday. Starting at 30 minutes to bake.

What kind and size sourdough bread do you use? I’m wondering if it is long french bread loaf, sliced sandwich stlye or perhaps other? This looks wonderful and my grandchildren would love this,as well as my husband and myself!

It was just a regular sized sour dough. It just needs to be a hearty bread that will hold up when soaked in the egg mixture!
