I’m all about the overnight breakfast recipes! If it provides me a little more shut-eye I embrace it. If you are like me, this Overnight Pecan Banana French Toast recipe is just what you are looking for! I love the french toast, crunch from the pecans and corn flakes and then topping it off with bananas and syrup!
I’m a big fan of breakfast casseroles like this Hashbrown Breakfast Casserole, Mixed Berry Vanilla Baked Oatmeal and this Crunchy Pecan Banana French Toast. I love this one so much when I made it that I wanted to make it into an overnight breakfast casserole and I’m so happy I was able too!
You see, the regular recipe is delicious, but I was looking for something I could prep the night before if I wanted too because I love to sleep. Love, love, love. I’m guessing some of you are just like me and love it too.
The thing is, I also like spoiling my family with breakfast in the morning, so I’m torn between making them breakfast and getting more sleep. Mom guilt. It’s real. So real.
Overnight breakfast recipes fix that problem! I can do both and not feel guilty. Mom win!
Plus, this can easily be made when you want breakfast for dinner. I always feel slightly rebellious when I make breakfast recipes for dinner, but my family loves it! In fact, I’m thinking about implementing a Wednesday breakfast dinner ritual so we do it more often.
Pecan French Toast

Can you believe that school is starting back up? I can’t. I’m in total denial. Luckily, I have a few weeks left since Minnesota schools don’t start until after Labor Day!
My oldest daughter LOVED this pecan french toast recipe so I’m planning on making it for her on the first day of school. She’ll think she’s the queen!
The main ingredient in this Overnight Pecan Banana French Toast is Sara Lee® Butter Bread. It’s my favorite bread and I always have a stash of it in my bread drawer for packing school lunches for the kids, which means I always have it on hand for this recipe! It adds the classic flavor combination of bread and butter to your family’s favorite sandwiches and this pecan french toast casserole. I love a good buttery bread!
Plus, it has no high fructose corn syrup, artificial colors or flavors. It’s also low fat and cholesterol free so I can feel good about feeding it to my entire family!
How long do you bake Overnight French Toast?
You will baked this overnight french toast recipe for 30 minutes or until it is baked through and slightly golden brown.
Ingredients Need to Make Banana French Toast
- Butter melted
- Brown sugar
- Sara Lee® Butter Bread
- Eggs
- Milk
- Vanilla
- Pecans
- Corn flakes
- Ground cinnamon
- Bananas
- Syrup
How to Make Banana French Toast

In a small bowl, combine brown sugar and melted butter and pour on the bottom of a 9×13-inch baking dish. Arrange slices of bread in the baking dish, overlapping if necessary.

Combine milk, eggs, vanilla, salt, and cinnamon in a bowl and pour evenly over bread slices.

Wrap tightly with plastic wrap and place in the refrigerator for 4-12 hours.

In the morning, take the casserole out of the fridge for at least 10 minutes while you are preheat your oven to 350°F. Sprinkle cornflakes and pecans on top of bread.

Bake casserole for 30-35 minutes. If top starts browning too quickly, loosely cover with foil for the last 10 minutes or so to keep the casserole from drying out.

Remove casserole from oven and let it cool slightly before serving. Slice bananas and place on top of french toast. Serve with maple syrup.

- 1 c. corn flakes crushed
- 2 tsp ground cinnamon
- 2 bananas
- Syrup
