Pesto Pasta with Sausage & Ricotta ~ A simple pasta loaded with pesto, chicken sausage and ricotta cheese! Only 4 Ingredients to deliciousness!
Every time I travel on my or or with the family, I want nothing more than to dive into a giant bowl of pasta when I return home. Travelling usually means we eat meals in restaraunts and consume foods not normally in our diets. While this is a wonderful change, it makes me crave my pasta even more. Clearly pasta is comfort food!
My favorite way to eat pasta is simply with olive oil, fresh tomatoes and feta cheese. I think my favorite has been replaced. After our recent family vacation, I came home craving pasta as usual. This time, instead of tomatoes, I added pesto to my pasta. I few chunks of chicken sausage and a dollop of ricotta made it a memorable meal.
You could use homemade pesto if you like, I used store bought because that is what I had in the fridge. This recipe is quite versatile, you could use Italian sausage instead of the chicken. Sundried tomato pesto would be a fabulous substitution as well. Be sure to add the ricotta just before serving. It will add a little creaminess to the pesto pasta without making it a cream based pasta.
This simple pasta dish is so quick and easy. The hardest part will be waiting for the water to boil!
Pesto Pasta with Sausage and Ricotta
- 1 lb pasta
- 1 12 oz package chicken sausage sliced
- 1 cup prepared pesto
- 1/2 cup ricotta cheese
- In a large skillet, cook sliced sausage until browned. Remove and set aside.
- Prepare pasta according to package directions, reserving 1/2 cup pasta water. Return pasta to saucepan, immediately mix in pesto and reserved water. Stir until pesto has been incorporated. Finally, add cooked sausage.
- Serve pasta with a dollop of ricotta. Stir.
