Making desserts in the simple form of a bar is always a hit at parties. These chocolate cherry bars are a must-make, and s’mores bars are a favorite of ours too. These desserts are just so easy to serve to large groups of people since I can slice them ahead of time. So, when raspberry crumb bars came to mind, I just had to make them! Once you try these, you’ll understand what all the hype is about.

- Raspberry preserves – The key to this incredibly easy recipe is a jar of raspberry preserves. It’ll be even better if you have homemade or local preserves, but store-bought works perfect too.
- Old fashioned oats – Adding oats to the oatmeal cookie mix gives these bars more umph and substance. These are often called rolled oats too.
- Oatmeal cookie mix – Grab a box of your favorite oatmeal cookie mix to make these easy raspberry crumble bars. Using this always us to skip mixing together ingredients like all purpose flour, brown sugar, baking soda or powder etc.

How to Make Raspberry Crumble Bars
Preheat your oven to 350 degrees Fahrenheit and then line a 9×9 inch square baking pan with parchment paper or spray with nonstick cooking spray.
Stir the cookie mix and ⅔ cup of oats together in a large mixing bowl. Then add the softened butter and cream together with a stand mixer or hand mixer.
Once it forms a crumbly mixture, remove 1 ½ cup of the mixture and set it aside. Then pour the remaining oat cookie mixture into the pan and press it down.
Layer the raspberry preserves over the bottom cookie layer. Then mix the remaining ⅓ cup of oats with the remaining crumble mixture that was set aside. Once combined, sprinkle it evenly over the preserves.
Bake the raspberry crumble bars for 40-45 minutes until the top is golden brown and the bars are bubbly.
Cool completely before cutting, then slice into squares and serve!
How to Store Leftover Raspberry Crumble Bars
FRIDGE: Cover the baking pan in plastic wrap, or transfer the bars to an airtight container. Then store in the fridge for up to a week.
FREEZER: Once the bars have completely cooled, transfer them to an airtight container or a freezer safe bag. Make sure they are laying flat and then place them in freezer. Freeze for up to 3 months.
Can I use real raspberries in my raspberry crumble bars recipe?
You can absolutely make a homemade filling with real raspberries. It’s also perfectly acceptable to chop up raspberries to add to the preserves or on top of the bars.
What can I add to raspberry crumble bars?
While these raspberry bars are perfect as is, you can add a few different fun things to them. Some warming spices, like cinnamon, would be delicious in the filling or the crust. You can also add some orange zest or lemon zest for a citrusy zing. For extra sweetness, you can mix chocolate chips into the dough or sprinkle them on the top. Chopped nuts like pecans or walnuts would be tasty too!
Pro Tips for the Best Raspberry Crumble Bars
- Make sure to evenly spread the raspberry preserves across the bottom cookie crust layer. This will ensure that each bar has the proper amount of filling.
- Feel free to thinly slice some fresh raspberries and bake them into the top of of the bars.
- It is really important that you line your baking pan or grease it very well. Otherwise, the raspberry jam could create a sticky “seal” of sorts and make it difficult to remove from the pan.
- Mix up the flavors by using different preserves like strawberries or blueberries.

Raspberry Crumble Bars
Ingredients
- 17.5 ounces bag oatmeal cookie mix
- 1 cup old fashioned oats divided
- ¾ cup salted butter (1½ sticks), softened
- 1 cup raspberry preserves
Instructions
- Preheat the oven to 350 degrees Fahrenheit and line a 9×9 inch baking pan with parchment paper or spray lightly with baking spray. Set aside.
- In a large mixing bowl, whisk together the cookie mix and ⅔ cup of oats until combined.
- Add in the butter and cream with a hand or stand mixer until it forms a crumbly but lumpy mixture, about 2 minutes.
- Remove 1 ½ cup of the mixture and set to the side and then press the remaining mixture into the bottom of the prepared pan.
- Layer the raspberry preserves over the bottom layer in an even layer.
- Mix the remaining ⅓ cup of oats in with the crumble mixture that you set to the side and then crumble it evenly over the top of the preserves. You should have enough to almost completely cover the raspberry layer.
- Place in preheated oven at 350 degrees Fahrenheit and bake for 40-45 minutes or until golden brown and bubbly and then remove from the oven.
- Cool completely before cutting into squares and serving.

The recipe is to add butter to a mixer and cream that, not add actual cream. Cream with a hand or stand mixer until it forms a crumbly but lumpy mixture.
