ingredients for raspberry pretzel pie
Pretzel Crust
- Crushed pretzels – You can use any type of pretzel.
- Sugar – The pie crust is perfectly salty and sweet.
- Butter – Because of the salty pretzels, you may want to use unsalted butter.
Cream Cheese Layer
- Cream cheese – Softened cream cheese is much easier to work with and will incorporate into Cool Whip much smoother.
- Cool Whip – You bet we are using Cool Whip to make this deliciously creamy layer of this pie.
- Sugar – Add some sweetness to this layer.
Raspberry Layer
- Raspberries – Fresh raspberries are such a treat to taste in this pie!
- Water – Cool or room temperature water to bring to a boil.
- Sugar – Add a little extra sweetness to this raspberry layer.
- Cornstarch – Helps the layer to thicken and set.
- Raspberry Jell-o – This is what will really boost that raspberry flavor for this top layer of the pie.
Can i use whipped cream instead of Cool Whip?
Cool Whip and whipped cream are usually pretty interchangeable but for this, I recommend sticking to Cool Whip because of it’s firmer texture.
how to soften cream cheese
The most common way to soften cream cheese to room temperature is to simply leave it on the counter for about 45 minutes. You can also submerge your cream cheese, in the foil packaging, in warm water for about 10-15 minutes. Lastly, it is possible to soften cream cheese in the microwave. Remove all packaging and warm the cream cheese in ten second increments until you reach your desired softness.
can i use frozen raspberries?
I have not tested this recipe using frozen raspberries but I don’t think I would recommend it. Frozen raspberries, once thawed, will be a lot softer and mushier than a fresh raspberry. If you do try out frozen raspberries, I would love to know how they turn out!
how to make raspberry pretzel pie
Add pretzels to a food processor and blend until they are finely crushed.
In a mixing bowl, add crushed pretzels, melted butter and sugar and mix until well combined. Press mixed crust ingredients into a 9-inch pie dish.
Bake the crust in a preheated oven for 10 minutes.
Remove and set aside to cool completely.
In a mixing bowl, with an electric mixer beat cream cheese and sugar until smooth. Fold in Cool Whip and spread mixture over cooled crust. Chill for 30 minutes.
Meanwhile, in a saucepan combine water, sugar and cornstarch. Bring to a boil and cook for 2 minutes.
Add raspberry Jell-O and stir to dissolve. Remove from heat and cool for 15 minutes.
Place raspberries on top of the cream cheese layer. Very carefully, pour Jell-O mixture over raspberries in an even layer.
Refrigerate about 4 hours until set.
pro tips
- When you are adding the cream cheese mixture on to the crust, make sure the mixture covers the whole crust and reaches the sides of the pan.
- Use a disposable pie pan if you plan to bring this to someone else’s house so you don’t have to worry about getting your plate back plus it’s easy clean up!
- You can also crush pretzels by adding them to a zip top bag and rolling them with a rolling pin.
how to serve raspberry pretzel pie
This dessert really doesn’t need much to accompany it, but a refreshing beverage can really amp it up. If you are looking for a new way to enjoy iced tea, I recommend giving a Iced Peach Green Tea a try. It is naturally sweetened which is always a bonus. If you can’t possibly have pie without ice cream, a classic Ice Cream in a Bag is super fun to make!
why does my pretzel crust fall apart?
There are a few reasons your pretzel crust might not stay together very well. First, make sure to process the pretzels into a fine crumb. Larger pieces will not stick together as well.
Make sure you really pack down the crust firmly into the pie plate before baking to create a solid crust.
when are raspberries in season?
Raspberries are typically ready to harvest in July and August. If you are lucky, you will still have raspberries to pick going into September, too. Luckily, this recipe doesn’t take a ton of fresh raspberries, so there will still be lots to snack on!
how to store leftover raspberry pretzel pie
If you have any leftovers of this pie, store them in the fridge. You can cover the pie with plastic wrap.
Fresh berries really add so much flavor to any dish and this Raspberry Pretzel Pie is no exception. I know you will add this to your regular summer dessert rotation.
