This easy roasted broccoli recipe is a fun and healthy side dish for any quick meal. If you’re not a fan of how broccoli tastes, then you’ve gotta try this recipe. It really makes this essentially tasteless veggie have so much flavor. I mean, who wouldn’t love garlic parmesan bites of broccoli?! Yum!
I love to make this simple side dish with our favorite pasta dinners, like baked tortellini and baked rigatoni. But the best thing about this recipe is that it really goes with anything. So whip up a big batch of delicious little broccoli florets whenever you need something really easy yet packed with maximum flavor.

Ingredient for Roasted Broccoli
- Garlic cloves – Freshly minced garlic is quite possibly one of my favorite things to add to roasted vegetables. It just adds so much flavor because veggies easily take on the flavor the garlic.
- Sea salt – Season you roasted garlic to perfection with a little bit of salt and black pepper.
- Black pepper – Add some depth of flavor to this super easy recipe with a bit of black pepper.
- Olive oil – If you don’t have any extra virgin olive oil, you can use some avocado oil or another neutral oil.
- Parmesan cheese – You can leave this ingredient out if you prefer, but roasted parmesan broccoli is SO yummy!
- Broccoli florets – I like to use fresh broccoli florets, but you can use frozen broccoli if you want.

How to Make Roasted Broccoli
- Preheat your oven to 425 degrees Fahrenheit and then your baking sheet with parchment paper. If you don’t have parchment paper, then grease the baking sheet with a little bit of oil.
- Toss the broccoli florets on the baking sheet in oil, garlic salt and black pepper. Then evenly spread the florets out into a single layer.
- Place the sheet pan into the oven and roast for 14-16 minutes until the edges are golden brown and the stems are tender.
- Sprinkle with freshly grated parmesan cheese and then serve immediately!
How to Store Leftover Roasted Broccoli
Allow the oven-roasted broccoli to cool completely and then transfer to an airtight container. Store in the refrigerator for 3-5 days in a container or plastic bag. You can freeze leftovers if you want but the leftovers will likely be mushy when reheated from frozen.
How to Reheat Roasted Broccoli
For best results, reheat leftover in the oven or in a toaster oven. You can reheat in the microwave but the broccoli will likely be a little mushy.
How do you stop broccoli from burning when roasting?
It is important to make sure that all of the broccoli florets are coated evenly in olive oil to prevent burning. Don’t roast at too high of a temperature either or it could cause the florets to burn.
Should broccoli be steamed before roasting?
You do not have to steam broccoli before roasting. It is perfectly fine to just toss fresh broccoli in olive oil and seasonings and then pop it into the oven.
What to Serve with Roasted Broccoli
This side dish will go with pretty much anything! We love to serve roasted broccoli alongside heart protein like meatloaf, parmesan crusted pork chops, and cheesy ham casserole.
You can also pair it with things like chicken ala king or even mix it in to your rice and teriyaki chicken.
Pro Tips for the Best Roasted Broccoli
- Try to chop up any larger florets into smaller bite-sized pieces so that they bake evenly and the stems cook to a tender texture.
- Don’t overload the baking sheet with too much broccoli or it won’t cook evenly.
- If you have a hard time tossing the veggies on the pan, then add everything to a bowl first, mix and then pour it onto the baking sheet.

Ingredients
- 12 ounces broccoli florets (1 bag)
- 3 Tablespoons olive oil
- 3 garlic cloves minced
- ½ teaspoon sea salt
- ¼ teaspoon pepper
- 2 Tablespoons freshly grated parmesan to serve, optional
Instructions
- Preheat the oven to 425 degrees Fahrenheit and line a baking sheet with parchment paper.
- On the prepared baking sheet, toss the broccoli florets with the oil, garlic, salt, and pepper.
- Spread the broccoli in a single layer and roast in the preheated oven at 425 degrees Fahrenheit until the edges are golden and lightly browned and the stems are crisp-tender, about 14-16 minutes.
- Sprinkle with freshly grated parmesan if using and serve right away.
