Do you ever have those times where you just HAVE to get something done and get so distracted you can’t do it?

Usually don’t have a problem with this kind of stuff. I am very task oriented and get giddy when I get to make little checkmarks next to my task list.


But today is a whole another story. I have traveled two of the past three weeks and have just been feeling so exhausted lately.  I find myself just staring at the computer screen wondering what in the world am I gonna write today! Some days, it just comes to me as easy as eating pumpkin pie but others its like pulling teeth. So.. since today is one of those “pulling teeth” kinda days.. just bear with me, I promise there are good things to come.

Roasted Red Pepper & Kale Stuffed Chicken Breast

In our family, the protein of choice {at least for me… not so much my husband} is chicken. Which means I am always looking for ways to it change up. Normally I grill or saute my chicken but I was feeling ambitious and had some time to spare so I ended up baking it.

First step for this Stuffed Chicken Breast was to flatten out the chicken so that I could easily stuff it. Next step was to  add in “the filling”, in this case the roasted red peppers, kale, and fresh mozzarella.

The melted cheese combined with the hearty kale and sweet red peppers makes this Stuffed Chicken Breast rock! Its super easy to put together, throw it into the oven, and 40 minutes later is a healthy delicious dinner!

Roasted Red Pepper & Kale Stuffed Chicken Breast with Mozzarella-2

Roasted Red Pepper & Kale Stuffed Chicken Breasts

Prep Time 10 minutes Cook Time 50 minutes Serves 4 chicken breasts     adjust servings


  • 4 chicken breasts, flattened out
  • 4 oz. of fresh mozzarella, thinly sliced
  • 2 whole roasted red peppers, julienned
  • 1 cup of fresh baby kale
  • salt & pepper
  • toothpicks


  1. Preheat oven to 350.
  2. Place chicken breasts between to sheets of plastic wrap.
  3. Using a meat mallet {or I used a rolling pin}, pound the chicken breast starting in the center and working your way out until chicken is even in thickness.
  4. Next, stuff each chicken breast with 2 slices of mozzarella, 1/4 cup of roasted red pepper, and a small handful of baby kale.
  5. Working from one end to the other, tightly roll the chicken breast and use a couple toothpicks to hold it together. Season with salt & pepper.
  6. Place the chicken breast in a large baking dish, seam side down.
  7. Bake for 40-50 minutes, or until juices run clear and internal temperature has reached 165 degrees.
  8. Slice up and serve!
