So most days, the thought of Spring or Summer is on my mind. I am, what you call, a sun lover. I would sit out in the beautiful sunshine all day if I could. Unfortunately I have other responsibilities to tend to so its not always an option. Booo!!!
But this weekend it was 80 degrees outside and my sweet husband let me have some “mommy time” which involved me laying out in the sun catching a few rays. Major happy dance!!!
I think part of the reason I love the sun so much is it tends to bring new life to things.
Think about it.
People are happier when the sun is out, attitudes are different. You can’t be a debbie downer when there absolutely no clouds in the sky and the sun is shining brightly, it just begs you to turn that frown upside down. It helps things grow, without the sun there would be no spring blossoms. Most plants require sun to grow, without sun there is no fruit. Without the sun there are no spring gardens with fresh vegetables, fruits, and herbs to look forward to.
And that is tragic!
I love love love fresh bruschetta so my gardens sole purpose in life is to produce enough fruit and herbs so I can have fresh bruschetta as much as I want. Some nights, once little man is down for the night, my husband and I will turn on a movie, open a bottle of wine, and munch on fresh bruschetta served on crunchy toasted bread with a drizzle of homemade balsamic reduction. Basically the stuff you salivate over at restaurants.
Even though I majorly big puffy heart bruschetta sometimes I need a little change up, and this Roasted Tomato Basil Salad was that change up. It still has all the same great “heavy hitter” flavors that bruschetta has but with a slight texture change.
It is seriously perfect! This Roasted Tomato Basil Salad only takes 20 minutes to make. It could be served over a bed of fresh pasta, grilled chicken, or pan seared tilapia. You could even serve it the same way you would bruschetta, over toasted ciabatta bread! All in all it is a multi purpose dish that is fresh, light, healthy and so stinky easy, which basically means you need it in your life and in your tummy now! So, go get it!
- 1.5 lb. box of cherry tomatoes, havled (24 ozs.)
- 1 cup of thinly sliced red onions
- 2 garlic cloves, minced
- 2 tablespoons of white balsamic
- 2 tablespoons of olive oil
- salt & pepper
- 1/3 cup of chiffon basil
- Preheat oven to 400 degrees.
- In a large bowl, add cherry tomatoes, red onion, garlic, white balsamic, olive oil, salt, and pepper. Toss to combine and coat every thing.
- Spray a baking sheet with PAM. Spread tomato onion mixture on baking sheet in a single layer.
- Bake for 20 minutes.
- Remove from oven and put in a bowl, top with basil. Lightly toss basil to combine.
