Who else is totally in love with this weather lately? It’s almost October. Yes, October and it doesn’t feel like it at all! The leaves are starting to turn and it’s so beautiful out yet I can enjoy it because it’s been in the 70s or 80s all week here in Minnesota. It’s been a blast. Usually I feel like we kind of get short changed out of fall. It’s summer then we get like a week of fall and it’s winter. I can say fall is my favorite season of the year but I never enjoy it because I know what’s coming next. Blasted Old Man Winter. Boooo to that!
I’m totally holding out that this perfect weather will continue right through next weekend because we have family pictures with Danielle and it would be so much more enjoyable if it was half way decent out! It’s hard enough fighting kids to smile at the same time and look in the same direction without being miserable because you are shaking in your undies it’s so cold out! Say a little prayer for me!
It’s was homecoming week last week in our town and it’s always so much fun to see the high school kids celebrate. It brings back a lot of memories since it’s my hometown. I got to take in the homecoming parade and dress Miss K in orange and black just like I always did! We also got to see my nephew play football on Friday night and they did awesome! Plus, I enjoyed it because it was warm and that’s saying a lot. Usually the homecoming football game is miserable and it’s snowing or something. Considering we have a nine month old I’m totally thankful it was nice out! They pulled out the win and my nephew had some nice blocks so Auntie Julie was proud! P.S. I’m not old enough to say he’s a senior!! After the game the players always come and stand in front of the stands and sing the school song which is pretty amazing. Tiger Proud! When this was going to occur I told Miss K that Cole was going to sing to us. She looks at me with big eyes and replies, “Twinkle, Twinkle Mommy?” I started giggling as I thought of my nephew serenading Miss K with Twinkle, Twinkle after the football game! I would pay money to see that!
As you probably figured out I love watching football game! It’s usually a Sunday affair and Monday night celebration. I’m not sure if I enjoy the eating of the “game food” or actually watching it more. Actually it’s totally the food of course! Duh! That’s why I love these Southwestern Nachos with Chipotle Sauce. They are loaded with Corn, Black Beans, Red Pepper, Tomatoes, Black Olives, Cilantro and Green Olives. Then for the finishing touch grab you blender and dump the Silk Almond Milk, Chipotle in Adobo Sauce, Mayonnaise and Garlic in the blender and you have a delicious, spicy, chipotle sauce to finish them off! Southwestern Nachos with Chipotle Sauce
- 1 18 oz Bag Tortilla Chips
- 1/2 c. corn
- 1 15 oz can black beans, rinsed
- 1 to mato diced
- 1/2 c. diced red pepper
- 1/4 c. diced green onion
- 2 Tbsp chopped cilantro
- 1 Chipotle in Adobo Sauce
- 1/4 c. unsweetened Silk Cashew Milk
- 2/3 c. mayonnaise
- 2 cloves garlic minced
- Spread tortillas out on baking sheet or large platter. Top with the rest of ingredients.
- To make the Chipotle sauce mix all ingredients in blender container. Puree until smooth. Drizzle over nachos.
