Tater Tot Breakfast Casserole
It’s been cold here already. Blustery, windy and everything is telling me winter is right around the corner. This of the year is incredibly beautiful here with the seasons changing, but seriously… winter is almost here! It has me craving all types of comfort food and this Tater Tot Breakfast Casserole is one of those things. I love my Crock Pot Tater Tot Egg Bake and I decided I need to make it into a breakfast casserole!
Ahhh!!! I don’t know if I’m ready for this yet (like it matters, right?) but like it or not – it’s time to pull out the boots and put away all things summery {sigh}.
Well instead of complaining I decided I would embrace winter and I’m starting by making casseroles. I’m talking breakfast, lunch and dinner – I have something for everyone here on the blog.
So for breakfast I’m starting off with a casserole. Stick to your ribs, hearty, delicious and of course easy!
What are the ingredients for Breakfast Casserole with Tater Tots?
- Tater tots
- Bacon
- Sausage
- Yellow onion
- Shredded cheddar cheese
- Whole milk
- Eggs
- Salt, pepper & garlic powder
Tater Tot Breakfast Casserole Recipe
You can totally prep this the night before and stick it in the oven the next morning and sleep in! Who doesn’t like grabbing a little more shut eye?
Are hash browns and tater tots the same?
Nope! Though both are made of potatoes, there’s something just a little more special about round little tater tots! Crispy and delicious, they are perfect in this casserole!

What I love about all of these menu suggestions is that they are easy, made-in-advance and would be perfect for a buffet! If you’re hosting a crowd soon, maybe breakfast with your best gal-pals or the family over the holidays plan ahead and you’ll be set! No stress, delicious and easy!
How to make Tater Tot Breakfast Casserole Recipe
- Preheat oven to 350 degrees.
- Grease a 9” x 13” baking dish with non-stick spray.
- Cook the bacon until crispy, drain.
- Drain the bacon grease from pan. Add sausage and onions sauté, when brown drain the grease from sausage.
- Next add the sausage and onions to the baking dish. Crumble the bacon and put on top of sausage.
- Cover with 2 cups of shredded cheese.
- Now whisk the milk, eggs, pepper, salt and garlic powder until combined. Pour over the mixture in pan, top with tater tots!
- Bake for 50-60 minutes or until casserole is set.
- Remove from oven. Top with remaining 1/2 c. of cheese. Chop remaining bacon and sprinkle over the top of the casserole. Place in oven an additional 5 minutes or until cheese is melted.

Tater Tot Breakfast Casserole Recipe
Ingredients
- 8 slices bacon
- 1 lb sausage thawed
- 1 yellow onion minced
- 2 1/2 c. cheddar cheese shredded
- 1 c. whole milk
- 12 eggs large
- 1/2 tsp pepper
- 1/2 tsp salt
- 1/2 tsp garlic powder
- 32 oz frozen tater tots
Instructions
- Preheat oven to 350 degrees F. Grease a 9'' x 13'' baking dish with non-stick spray. Set aside.
- Cook bacon in skillet according to package directions, remove from pan and drain on paper towels. Let cool.
- Remove bacon grease from pan. Add sausage and onions to skillet. Cook and until sausage is browned. Remove grease from sausage.
- Place sausage and onions on bottom of baking dish. Chop 4 pieces of bacon up and put on top of sausage. Cover with 2 c. of shredded cheese.
- In a bowl whisk together milk, eggs, pepper, salt and garlic powder until combined. Pour over mixture in pan. Place Tater Tots on top of mixture.
- Bake for 50-60 minutes or until casserole is set in the middle and knife inserted in middle comes out clean. Remove from oven. Top with remaining 1/2 c. of cheese. Chop remaining bacon and sprinkle over the top of the casserole. Place in oven an additional 5 minutes or until cheese is melted.

Do you have to bake longer if you refrigerate overnight ?
Also do you put frozen or thawed tater tots on in the morning?

If you refrigerate overnight, it’ll just probably take closer to 60 minutes to bake. Use frozen tater tots, hope you enjoy!

This looks delicious and I plan on making this over the weekend and having it throughout the week. What kind of sausage did you use? Was it ground sausage or breakfast links or something else?

I used ground sausage but you could try it with other types, whatever you have on hand!

In your conversation before the recipe, you say I can prepare this at night and sleep in. However, in answer to Gail above, you suggest leaving Tots off ‘til just before baking in the morning. Is there a specific reason for this? I’d really like to have everything ready to pop in the oven.

I haven’t tried this but it would work! I would leave the tater tots off until right before cooking. Then just follow Step 6 to finish it up!

I’ve made this twice now, first time I used left over ham from Christmas and I sautéed diced green, red pepper, and onion then added ham to pan near end of sautée. The second time I did it with browning a roll of breakfast sauce with the peppers and onions. I didn’t have time to fuss with cutting up peppers and onions so I bought prefixed and it made the prep go so quick!
