Strawberry Upside Down Cake

Need a quick and easy dessert that’s bursting with flavor? This easy Strawberry Upside Down Cake only requires a boxed strawberry cake mix plus a few more ingredients. The result is a light, fluffy cake that’s bursting with strawberry flavor that’s impressive, yet easy. Top it with a dollop of whipped cream!
I just totally fell in love with this Strawberry Upside Down Cake again! I forgot how easy it is, how delicious it is and how impressive it is when served to your family and friends!
It comes together so quickly and looks so impressive. You start with a strawberry cake mix and add in a few secret ingredients like marshmallows, strawberry jell-o and fresh strawberries and it turns into this fabulous upside down strawberry cake perfect to impress someone with!
Ingredients Needed to Make Strawberry Upside Down Cake!
- Fresh strawberries
- Strawberry Jell-O
- Miniature marshmallows
- Strawberry cake mix + ingredients to prepare cake mix
- Cool Whip
Steps to Make!
- Prepare Cake Pan – Grease 9” x 13” cake pan. Crush strawberries and spread over the bottom of pan. Sprinkle Jell-O mixture over strawberries. Then evenly spread out marshmallows on top.
- Make Cake – Prepare the strawberry cake mix according to package directions. Pour mixture over the marshmallows.
- Bake – In a preheated oven at 350 degrees bake the cake for 40-50 minutes or until it tests down. Let sit for 15 minutes, then run a knife around the outside of the cake. Flip it onto a serving tray.
- Serve – If not serving immediately make sure to refrigerate until serving. Top with Cool Whip or whipped cream before you serve!

Expert Tips!
- DO NOT prepare the Jell-O, just sprinkle the powder.
- The cake tests done with it’s starting to pull away from the edges of the pan. You can also insert a toothpick in the middle of the cake and if it comes out clean it’s done. Another quick test is to gently press your finger against the cake in the middle and if it pops back up after pressing into it lightly it’s done.
- If you let it cool to much or refrigerate it before flipping it just warm the bottom of the pan over the stove and it will release.
- Don’t want to flip it? Just serve it as is! It’s still delicious!
- Can’t find strawberry cake mix? Just use white or yellow and it’s still delicious!

Upside Down Strawberry Cake
Ingredients
- 2 c. fresh strawberries
- 2 boxes strawberry Jell-O 3 oz each
- 3 c. miniature marshmallows
- 15.25 oz. strawberry cake mix + ingredients to prepare cake mix
- Cool Whip or Homemade Whipped Cream
Instructions
- Take your two cups of strawberries and crush them with a fork. Pour into a greased 9×13 in cake pan. Sprinkle strawberry Jell-O over the top of the strawberries. Then sprinkle the marshmallows over the Jell-O.
- Prepare cake mix according to package directions. Pour over the marshmallows.
- Bake at 350 degrees for 40-50 minutes or until cake tests done. Let sit for about 15 minutes and then run a knife around the outside of the cake. Flip onto a serving tray. Refrigerate.
- Serve with Cool Whip. Store leftovers in refrigerator.
Tips
- Some cake mixes are 15.25 oz. If that’s all you can find it will work fine, just prepare it according to the directions on the package!

If after the cake cools or was refrigerated, and the strawberries and jello don’t release, warm the bottom of the baking pan over the stove and it will release. Be patient, it’s worth it.

The video cannot possibly go with this recipe. The video shows a layer cake with frosting and the recipe calls for cool whip on a upside down cake. I had to improvise half way through when I realized it did not match. Plus, video shows jello being poured into cake mix not into a pan. Needs to be corrected.

Is there something less sugary that can substitute for marshmallows or can they be omitted? It looks like they make a barrier so the strawberries will not make the cake mushy when inverted.

I haven’t tested this with anything other than the marshmallows, but yes you’ll want something layered there. If you try something different, let me know how it goes!

The grocery store should carry strawberry cake mix – otherwise you could use a white or yellow cake mix, it just won’t have as much strawberry flavor.

I followed the recipe completely but it did not come out anything like pictured. When I flipped it all the strawberries and jello were on the top and only about 3/4 inch cake on the bottom. It was for my granddaughter to bring back to campus with her today but all I can do is throw it out. I’m so disappointed!

First I want to say you are so patient and sweet after getting asked the same question 10 or 15 times I would probably be a bit snappy and tell them to look at the comments / questions and you will easily find the answer. Now the cake I followed the recipe and it came out great and it looks very lovely also. It has a little bit of a tart taste which makes it even better. My husband really liked it and he is very picky. Thank you for sharing the recipe and for being so kind and patient.

Has anyone just not flipped it and left it in the pan and just top with cool whip and strawberries? I’m reading comments that some have the problem of it not flipping out. Any thoughts? Also I wanted to just cut up strawberries and sprinkle with sugar and let them sit over night then crush them the next day. Would that be ok?

I make a similar cake but use 4 c. sliced rhubarb and ic. sugar instead of strawberries. The rest is made the same. If you like rhubarb this is delicious also.

I made these for a group to taste test and now I need to make 12 of these for an event on a Friday evening. I plan on making them Thursday evening. Should I flip them Thursday and store them or could I flip them Friday? Also could I use parchment paper to help get them out if not flipping until Friday? Had some issues with jello run off when I flipped them for group taste test. Worried about that issue again.

I made this and the top stuck to my pan and I had to scoop it off and smear it on top on the cake. Still tasted great/ however I did grease the pan as it says to in the instructions. However in some of the comments it states that you do not grease the pan. So which is correct? Do I pour it into a greased pan or not? Thank you
