Sift the dry ingredients. Whisk to combine and set aside. Beat the butter and sugar separately. Add the egg, vanilla, and almond extract, then mix.
Add the dry ingredients to the butter mixture and mix. Form the dough into a bowl. Cover with plastic wrap and refrigerate.
Cut out the dough, and place the cutouts on a prepared baking sheet. Bake the cookies, turning the tray around halfway through. Let cool.
Make the royal icing and decorate the cooled cookies as desired.
