Breakfast Burritos
Get the Recipe
2 Tablespoons olive oil
1 pound ground breakfast sausage
2 cups frozen cubed Potatoes O’Brien with onions and peppers
8 eggs
salt and pepper
2 cups shredded Mexican cheese
8 10-inch flour tortillas
Get the Recipe
Cook frozen potatoes according to package, set aside.

Cook sausage until no pink remains, about 5-7 minutes. Drain off the grease.

Add the potatoes back to the skillet.

Add the eggs, cook until they are set, stirring frequently.

Add salt and pepper to taste.

Spoon the filling onto the bottom ⅓ of each tortilla. Sprinkle cheese on top of the filling.

Fold the sides and then the ends over and roll up the burrito as tightly as possible.

Place burrito, seam side down in skillet and cook until browned, flip and toast the other side.
