Easy one pot soup recipe loaded with carrots, shredded chicken and rice!

Cook and stir onion, carrots, and celery in a dutch oven. Add garlic, parsley, and thyme.

Add salt, pepper, broth, chicken breasts, and rice. Boil and let it simmer while stirring.

Remove chicken and shred. Add back to the pot and stir in evaporated milk.
